My mother in law use to make these on special occasions and now I have the recipe so I thought I'd share :)

Tea Cakes (kind of like sugar cookies but a little bit 'cakier' and not quite as sweet)

You will need:

- 5 Tablespoons butter or margarine (melted)
- 1 1/4 cup sugar
- 1 egg white
- 1/3 cup evaporated milk
- 1 Teaspoon Vanilla extract
- 3 cups self rising flour
--------------------------------------------------------------------------------

Prepare:

- Melt butter and mix with sugar in a large bowl
- Add egg white and vanilla
- Add milk and flour (one cup at a time)
*Refrigerate overnight*

Bake:

- Preheat oven to 350
- Using wax paper dusted in flour, roll out dough (approx 1/2 in thick) and cut into desired shapes
- bake 8 - 10 mins
* Makes 2-3 dozen

-- Allow to cool and enjoy

*Also great frosted or dusted with powdered sugar or cinnamon sugar (optional)

YAY! Recipes! I LOVE TO COOK!

This year I'm going to make brownie-cheesecake bars and rice crispy treats. We don't have a lot of money, but I already have most of the stuff for both. I made white chocolate peppermint bark last year that was REALLY GOOD too! :)

mmmm, brownie-cheesecake bars ;)

I don't like to cook much, but for some reason I get into baking during the holidays.

I am making Key Lime pie for the family dinner. Then the tea cake cookies, some store bought brownies and chocolate chip cookies for tins to give to people.
