Ok, we have a bunch of recipe threads, can we start one for recipes for just one person? I thought of this because Chris will be gone for 3 days before I can leave to go back home too. I wanted to cook something since I'll have time now.

Well, my first piece of advice if you're going to be cooking for one, is when you bring meat home, make sure you divide it into small enough portions for one person. Then, you can make the same things you usually do, just in much smaller portions!

I'll see if I can find specific, easy to make recipes as well!! :)

When FH Is gone, I make homemade soups and eat them for about a week. Other times I make chicken ceaser salads, or I make pasta with pesto. Make something you can control the quanity. Like salad, soup, pasta, etc.

I guess I could make something and then freeze it.

I eat alone almost everynight FH works nights. I bought a big bag of frozen tilapia and just use one at a time with some Cajun rub and a litle olive oil and butter and a side of rice and some vegetable and I am good to go.
