I've been posting up recipes in my journal, but I thought that I would share them here as well, and I would love to get new recipes from all of you fine ladies. What are your quick and/or easy and/or great tasting recipes.

Hamburger Gravy
1 lb ground beef
1 packet brown gravy mix
1 cup water
Chopped Onion
Salt & pepper
Brown ground beef in pan with chopped onion, salt and pepper.
After browned, pour in brown gravy mix & 1 cup water.
Let simmer for about 15 minutes or until gravy thickens.
Serve over mashed potatoes.

Chicken Skewwers with Peanut Sauce
1 lb boneless skinless chicken
1/4 Kraft Catalina dressing
3 Tbsp peanut butter
1 Tbsp soy sauce
Grilling Skewwers
Minute Rice
Mix dressing, peanut butter and soy sauce together until smooth.
Put chopped chicken (in strips or cubes) in sauce and marinate in refridgerator for 10 minutes.
Put chicken on skewwers.
Grill until blackened.
Serve over Minute Rice.

Chicken and Saltine crackers-
Not very healthy but makes the chicken SOO tender.
Take Chicken Tenders, Slather with mayonnaise and then roll in Salteine crackers. Bake until crackers are golden brown. Serve with Salad or Mashed Potatoes.
Chicken Stewp
Chicken Tenders
Half a stick of Kielbasa
Garlic,
A jar of crushed Tomatoes
2 boxes of chicken stalk
Three potatoes
A pepper
Tomato Paste (One tablespoon)
Hot sauce.
Put everything together in a large pot and simmer until chicken and potatoes are tender. SOO good! DH and I eat ita ll the time. Makes an awesome THICK soup.

Sweet Citrus Chicken
1 2/3 cups hot water
6 oz Stuffing Mix for Chicken
Boneless Skinless Chicken Breasts
2/3 cup orange juice
1/3 cup brown sugar
3 Tbsp. butter, melted
Preheat oven to 400 degrees.
Place chicken in 9x13 pan. Mix juice, sugar and butter and pour over chicken.
Add hot water to stuffing mix, stir until moistened.
Top chicken with stuffing.
Bake for 30 minutes or until chicken is cooked.

This is really super easy and I usually make it in the Fall. I made it one year for a pitch in at work and the vice president of our organization personally came to my desk to tell me it was the most awesome thing he has every eaten. I've made it every year since...
3 eggs
2/3 cup canned pumpkin
1 cup white sugar
1/2 teaspoon ground cinnamon
1 teaspoon baking soda
3/4 cup all-purpose flour
1/2 cup chopped walnuts
confectioners' sugar for dusting
2 tablespoons butter, softened
8 ounces cream cheese
3/4 teaspoon vanilla extract
1 cup confectioners' sugarDIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Grease a 15x10x1 inch baking pan and line with parchment paper. Grease and flour the paper.
In a large bowl, beat eggs on high for five minutes. Gradually add white sugar and pumpkin. Add flour, cinnamon, salt and baking soda. Spread batter evenly in pan. Sprinkle walnuts evenly on top.
Bake at 375 degrees F (190 degrees C) for 15 minutes or until cake springs back when lightly touched. Immediately turn out onto a linen towel dusted with confectioners sugar. Peel off paper and roll cake up in the towel, starting with the short end. Cool.
To Make Filling: Mix confectioners sugar, vanilla, butter or margarine, and cream cheese together till smooth.
Carefully unroll the cake. Spread filling over cake to within 1 inch of edges. Roll up again. Cover and chill until serving. Dust with additional confectioners' sugar, if desired.

This is a great cake for summer!
INGREDIENTS
4 eggs
1 (3 ounce) package instant lemon pudding mix
1/3 cup vegetable oil
1 (18.25 ounce) package lemon cake mix
3/4 cup water
1/2 cup lemon juice
3 cups sifted confectioners' sugar
1/4 cup confectioners' sugar for dustingDIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a bundt or tube pan.
Beat eggs until thick. Add pudding mix, cake mix, water, and oil; beat with an electric mixer on medium speed for 5 minutes. Pour batter into prepared pan.
Bake for 50 minutes.
In the last 5 minutes of baking, prepare the glaze. Mix lemon juice and 3 cups confectioner's sugar in a saucepan. Heat to boiling. Pour hot glaze over hot cake, and let cool for approximately 1 hour. Carefully invert cake onto serving platter. Finish with a light dusting of confectioners sugar.

Darlene: The second one sounds awesome. The first one sounds like the pumpkin roll we bought from the Amish people at farmers market for one of our wedding desserts. Mmm.
Oh, I'll have to look up my recipe for my cheesecake tart. Alex and I made it and kind of made it up as we went and ended up being a huge hit at my family's Christmas.
