View Full Version : Keely's Journal
I haven't been eating as well as I'd like lately (not enough veggies and way too much sugar for example!) so I'm doing what some others have done and decided to put my food diary on here. I had to do this for a class a while back and we posted for the whole class to read. It really helped me behave! I just decided to do this a few minutes ago; I figured it would be a good way to begin my week. We'll see how long it lasts!
Breakfast
Kashi cereal w/ soy milk
Snack
½ grilled cheese on whole wheat
Lunch
Soy Italian sausage w/ corn & tomatoes
Dinner
veggie burger w/ cheese, caramelized onions, catsup, & light mayo on whole wheat toasted bread
Snack

I did a little bit of strength training today too. About 20 minutes for arms & core. I desperately want to get rid of all of my jiggly wiggly-ness! I'll be able to begin cardio again soon. (Yay!)
I guess that I should post my stats & goals too.
Age: 23
Height: 5'2"
Weight: 103
Body Fat: ~20 %
I would like to increase my lean body mass, for the most part. My arms & abs need to be ready for those Mexico beaches in about 9 1/2 months! I'd also like for my arms to look nice in a sleeveless wedding dress. As far as weight goes, I'm really just trying not to gain weight rather than losing. I have a bad yo-yo habit. I've been as high as 150 and as low as 90 so hopefully this will help me stay on track.

5'2'', 103, (yeah, in my bra) you don't have much to lose!!! I'm 5'2''-5'3'' and people think I'm small-I weigh a good amount more than you and I am pretty solid but I would say to keep track of you body fat % and you inches. I don't even have a scale.
But-good luck. Eventually I will do one of these to tone up and keep myself in check also.(although I'm not too bad to begin with)
Oh, and I don't know if you drink soda, but I know that can be a big deal breaker for some people.

I'm very compulsive about checking my weight...I really should just throw the darn thing out! I've lost about 6% body fat over the last several months so i'm pretty happy about that. Oh yeah when I weighed a lot more a few years ago, the first thing that I did was to stop drinking soda. It's crazy how quickly it can melt off with just one minor change!

I'm going to an anniversary party tomorrow. That probably won't turn out too well! I don't know if they'll have any vegetarian offerings that I can eat though so it may turn out to be okay! I just know that the cake my cousin bought is already calling my name. I'm a sucker for white cake w/ buttercream icing!

YAY!! You'll be running again soon! Let us know how getting started on the running goes.
You have been doing really good. I hate it when we go over to Clayton's mom & dad's. The food is good, but I always eat WAY too much of it!:D
Keep it up!!!:pompom:
I'm going to get new running shoes this weekend! The doctor told me that I have to go to a special athletic shoe store and run on a treadmill and stuff so that they can make sure that I get the best shoes possible for my situation. We'll see how much this costs! :bbeek: Yeah family gatherings are just trouble! I'm lactore intolerant and yet I still ate the sour cream & mayo spinach dip and the ice cream! I forgot how bad it makes me feel! :bbcry:
As soon as I step on the treadmill I'm sure to shout it from the rooftops!!

I just had to post this recipe because I think that it's helpful in weight loss. I always add a little more red pepper flakes than the recipe calls for because I like that extra kick. This is full of so much flavor without a lot of calories. I sprinkle it over steamed veggies all of the time!
3 tablespoons sesame seeds
3/4 teaspoon kosher salt
3/4 teaspoon dried crushed red pepper
Toast sesame seeds in heavy small skillet over medium heat until golden, about 5 minutes. Place sesame seeds in spice grinder. Add salt and crushed red pepper; grind coarsely. Store in the refrigerator.
I finally lost the 4 or so pounds that I had gained after a couple of weeks of bad eating and a little more drinking than usual with friends. The last week I've been weighing myself and it's been pretty consistent between 103 and 104. Chad and I pulled out and dusted off our TotalGym machine so I'm hoping to fix the jiggly arm problem more pro-actively now. I've just been lifting small weights and I get bored and stop before I should, but I like using the machine. We'll see how it goes now. I'm just not sure just how much adipose is surrounding my muscles though so I'm hoping that I'll actually be able to see the improvements.

This may be a silly question but I'm not vegetarian so I don't know....do you eat "real" eggs or it there a vege egg substitute???
This may be a silly question but I'm not vegetarian so I don't know....do you eat "real" eggs or it there a vege egg substitute???
No, that's not a silly question at all. There are different kinds of vegetarians. I'm an ovo-lacto vegetarian which means that I consume eggs and dairy. I feel comfortable eating eggs and dairy because no animal is hurt in the process. Eggs are just gonna lay around and rot if they aren't either fertilized or eaten. I do make sure that all eggs and dairy products that we buy are organic and free range because I'm really sensitive to the hormones and meds that are given to livestock and poultry and I also want to know that they animals were allowed to freely roam around the farm instead of being stuck in a cage. So yeah I do eat real eggs...lots of good B vitamins in there! :D

It looks like my recovery was short lived. After just 2 weeks of getting off of my medicine, the knee pain is back just as bad as before. To make matters worse, my insurance company is trying to deny coverage so a $2000 bill is up in the air right now. I can't go back to the doctor until this situation is fixed.
Just the other day I remembered that I totalled my car years ago and my knee was slammed into the cup holder. Ever since then I would have knee pain or my knee would lock just for a bit every once in a while. I didn't start experiencing many problems with it until I actually become active and started exercising regularly a couple of years ago. Training for the marathon made me the most active ever and that's when my knee really started bothering me. I thought that it was the running this whole time, but I think that it was the car accident all those years ago that started this.
I feel really frustrated about everything. I just want to get this all fixed, but it's not as easy as I wish it were. I don't know what's next for me, but keep your fingers crossed. It's not all just not being able to run or participate in the marathon with Chad. I'm also feeling really sluggish and lazy because I can't move around much. I've lost almost all muscle tone because even toning or stretching irritates my knee. I'm trying really hard not to gain weight because of all of this. I want to feel "good" again. Running helps clear my thoughts and it's like my own little therapy. It's when I'm happiest.
Ugh, I'm stop this little pity party now. I don't want to get caught up in self-loathing. I'm thankful that this is my biggest problem, but right now it all just feels much larger than it probably actually is.

I'm glad I wasn't keeping track this weekend. Pizza was involved with mine too. Plus a LOT of cupcakes. (I made mint oreo cupcakes...and mojito cupcakes! And they both ROCKED!)
I can only imagine how many cupcakes you've been eating. When I was catering, I never really ate meals. I would just taste food a lot. However, when we were making desserts I would ALWAYS taste the desserts and then really want some real food! That sure did add up.
I am a mojito freaaaak. Have you posted the mojito cupcake recipe on your blog? I am so gonna be all over that. :eat:

Me tooooo! I love mojitos! (We're even having a mojito bar at the wedding! LOL!)
The recipe for the cupcakes in on my foodie blog. Along with pictures of them in their Superman cupcake liners! heheh!
Oh yum yum. I'm totally going to have to try my hand at this soon.
Have you ever had the Asian Pear Mojitos a PF Chang's? They are pretty weak IMO, but our bartender friend makes mine "special" with a little 151. Ooooh so good!

:whoa: WoW! A mojito with 151 would knock me off my stool! Hehehe! I just use Bicardi Limon in mine (2 oz rum, 6 oz club soda, 3 tbsp sugar, 1/4 lime, 6-7 muddled mint leaves).
I haven't tried the PF Chang ones...but I've heard a lot of people say I need to try it!
And I just saw your comment....if you're going to blame me for all the calories in the cuppies, I'm blaming YOU for all the calories in the asian pear mojitos!!

You're good. I had some popcorn. With real butter. Eep! But I did good all day...and only had 1/2 a soda! The rest of the day I had water. Tons of it. Woot!
(Like how I keep interrupting your journal?)
I don't mind...I think my journal was getting rather tired of just little ol' me posting away! I know that I grow rather tired of myself sometimes and I'm stuck with me. Oh, the humanity.
BTW: popcorn with real butter is the ONLY way to go...do it right or don't do it at all baby! :geek:

So, what's a Z-bar? A forrero rocher?
lol Yeah, everybody is always like WHAT are you eating? I guess when you get a future dietitian (me) and chef (Chad) together, food gets a little crazy. :geek:
A Z-bar is a type of Clif bar. They're pretty much a healthier, lower calorie energy bar. A little too much sugar, but great when I get hungry in the middle of a lecture!
Ferrero Rocher is only the...trying not to tear up...best chocolate candy on the face of the planet. Haha... Cheesecake is my absolute FAVORITE thing in the world. I love making it...I love eating it.
I can't even bake anymore of it because it'll go from the oven to my mouth! :bblol:
When I first met FH, I had just started learning to make it. So I practiced all the time - just like I do with cupcakes now. We both gained about 15 pounds. He actually BANNED me from making cheesecakes! Heheheh!!
So yeah. You probably don't WANT to know how many calories and fat grams are in those cheesecake bites. It's scary.
You're doing great though! :whoohoo:
The thing is that I'm lactose intolerant and not even supposed to eat the stuff. lol. Oops. Atleast that keeps me in control and I only take a few bites when I do have some. I only eat it when we go to the Cheesecake Factory though. It's so good there, I just have to! Yeah, I think that I broke the calories to their huge pieces of cheesecake down to a bite per bite calculation once. Too bad I forgot what it was. I'd rather just be in ignorant bliss anyways.

They JUST finally got a Cheesecake Factory built here in town. It's always still uber crowded, so we haven't been yet...but still. OH. MY. GOSH! :whoohoo:
I don't know about you, but only "cheesecake-y" cheesecake satsifies me. Some of their cheesecakes are so heavily flavored that it just doesn't do it for me if I'm really looking forward to some cheesecake. My favorites are the banana cream, white chocolate raspberry truffle, dulce de leche, and tres leches. Of coarse I haven't tried them all, but I'm working on it. :hi: lol
It's a nice little treat to share w/ a few people every now and then! Or just the FH if he eats most of it for you like mine does! The actual food is super good too.

You eat, like, NO calories a day. Gosh! Are you losing weight now??
Man, my days have been craaazy lately. I just don't have time to eat as much as I should be eating. I actually haven't weighed myself in a while, but my clothes are still fitting the same so I seriously doubt that I've lost any weight. I am so short...it's so easy to gain a few pounds and so difficult to lose any!

Oh FH would freak. I don't think I even realized they had carrot cake cheesecake. Next time we are totally going to get that kind. Carrot cake is FH's secret lover. lol. He loves the stuff.

Argh...I felt like I ate more than that today. I'm not trying to eat this few calories. It seems like when I started trying to increase the fruits & veggies that I'm eating, my calories dropped a little too much. Maybe I've been replacing some of the higher calorie foods with the fruit/veg. I'll work on it!
add some veggies into your egg, like an omelet
watch out for all the fruit, it's loaded with sugar
What I really need to watch out for is the sugar in the chocolate that is covering the apples I've been eating! :rain: LOL I actually did think about adding some veggie to the egg BUT I got lazy. I know...horrible! I'm a work in progress. :frogg:

thankfully, I"m not really a chocolate lover
but give me cake, ice cream, cookies and doughnuts and LOOK out
what about chopping a bunch of veggies for the week, then just grab a handful each time you make the omelet???
I try not to cut up too much stuff ahead of time because I don't want the veggies to lose their nutrients any faster. It takes more time, but I also try to buy produce a couple of times a week so that I have fresh produce on hand. I do need to buy some frozen veggies to toss into stuff though. Thanks, you made me remember that!
I weighed myself this morning
101
:whoohoo:
I know that's only 2 pounds less than what I was when I started this thing back in April, but I gained several pounds along the way. Over the summer I think that I got up to like 107 or 108. Oops!

Hey there lady - you are so good at this!!! I remember you saying you're a dietician...so miss dietician, for someone that is in grad school and is forced to pack food - lunch and snacks for a full day (class from 8am-6pm) got any recommendations on how to get some of these extra lbs. that I've acquired off? When I had time (i.e. when I had a job and wasn't studying all the timie) I was an exercising maniac, but some weeks I'm lucky if I get three days of running in......any tips to keep me 1) sane and not freaking out about EVERYTHING i put in my mouth and 2) skinny enough to fit into my dress would be spectacular!!!
Thanks!!!

Well Im actually a future dietitian, but I can try to be of some help! :frogg: Have you ever tracked your calories before so that you know how many calories you're consuming? It's a pain, but if gives you a great idea of how much your actually intaking. What does a typical day's worth of food look like for you? You're a runner, correct? Even though you're only running a few days a week, are you still consuming a runner's amount of calories? I have a leg injury and I haven't been able to run in almost a year. I had a reality check when I stopped running and gained weight. I'm a small girl and I have had to slash my calories to the bare minimum - 1200. I know that you're super busy, but make sure that you're getting enough sleep. A lack of sleep interferes with the metabolic process and also gives you excess cravings.

Yes, I actually used to track everything i ate, but to be honest, it turned me into a crazy person. After a while I was so unhappy because if I ever ate something that wasn't super healthy, I started to feel awful about myself. It was really terrible. Thats why I've sort of shy'd away from doing that....maybe a poor excuse, but it is what it is. Any suggestions on how to not make yourself entirely nuts???
Oh and I'm a nut about getting enough sleep. I love my bed!

I was just looking at your journal, and everything you eat is so healthy! Do you work out at all or just try to eat good?? Sorry if that sounded nosey, I just wish I could eat like that and wonder how you do it!!:nosey: I cant stay away from pizza and brownies and of course hot chocolate!
I did use to work out a lot. I ran several miles a day. I was a long distance runner and I was in the middle of training for a marathon when I hurt my knee. I have been trying to get it taken care of for almost a year, but evil insurance keeps on denying a $2,000 MRI claim. I'm still fighting them! So short answer is that "no" I'm not working out at the moment and I haven't for a while. I miss it so much and will return to it just as soon as I can. It was a huge part of my life. I can feel it both physically & mentally.
The thing that *usually* keeps me on the right track is that over 60% of all cancer is caused by lifestyle factors. What you put in your body has a huge impact on your health so I look at my diet as a way to protect myself and enjoy life healthfully. Besides, I've been incredibly unhealthy before...50 pounds ago...and I will never go back to feeling as cruddy as I did back then. However, I try to keep up with this journal because sometimes I find myself slipping back into my old lifestyle and I have to guard myself against that. Also there are still so many ways that I need to better myself so I'm constantly trying to eat better and better.
Sorry that's so long, but this is just something that I'm so passionate about.

Dinner (1 plate leftovers)

steamed green beans

This Thanksgiving holiday wasn't too bad. Atleast I didn't bring home any leftovers to be tempted by. I'm trying not to eat anything else today. I've already had enough calories!!
I didn't think I was going to stay up so late, but I ate at 2 pm so I got hungry darnit! I snacked on a little bit of that evil holiday tin popcorn this evening. I don't really even like that stuff anymore. It's kind of sad. I used to love it, but now I can really taste all of the preservatives and stuff. That happens to me all of the time. I can't even eat Baskin Robbins anymore. Probably a good thing!
I wanted to go ahead and post my food for the day right now so I didn't have to try to remember what I ate all day. We're planning on going out to eat for dinner. I always get in trouble eating out, but I'll try to behave.
Lunch @ home

I just discovered Red Quinoa. Yummm. It's so healthy too. One of just a few plant sources of complete protein. Great for a veggie like me! I've been trying to eat healthier lately...making sure I get my veggies, etc. I feel so much better both mentally and physically. Being stressed in school really did a number on my diet!

One thing I love that you might like too is hemp hearts...have you tried them? They have kind of a nutty flavor...pretty darn good. I put mine in my oatmeal, yogurt, salads, etc.
It's got TONS of fiber and protein. So good for ya!
Here's (http://www.healing-source.com/about_HempFoods.htm) the company we get ours from. Just thought I'd share. :hi:
Hemp...so underappreciated and versatile in so many areas...agriculture, food, etc. I'll totally check these out!
I just started adding nutritional yeast to my diet.
I'm all over new foods lately. :frogg:

Your doing great! Did you have any problems sticking to it during the holidays?
I actually did pretty good over the holidays. I did go to a few holiday parties and just kind of ate what I wanted because there weren't any healthy choices anyway. That didn't derail me too badly though.
I should have a wedding every January! That would keep me in check every holiday season. Haha!

3 Tbsp crumbled blue cheese
2 Tbsp chopped fresh basil
1 Tbsp nutritional yeast
1 Tbsp aged balsamic vinegar
1 small clove garlic
8 slices whole wheat bread, toasted
1 large roasted red bell pepper, jarred or freshly roasted
1 cup baby arugala
1 large heirloom tomato, thinly sliced
1/2 avocado, sliced
salt & pepper, to taste
1. In a blender or food processor, combine tofu, cheese, basil, nutritional yeast, vinegar, and garlic; puree until smooth. (I had to add a little water to get the right consistency.)
2. Lay out all 8 pieces toasted bread. Spread 1 T "mayo" on each slice. Layer 4 bread slices with bell pepper, arugala, tomato, and avocado. Sprinkle with salt and pepper.
3. Top sandwiches with the remaining toasted bread, mayo side down. Slice each in half diagonally with a bread knife.
