View Full Version : Anyone cook with deer meat?

I know there are a lot of ladies on here that like to cook and a bunch who hunt or their DH/FH hunt. So I figured you would be the perfect people to ask.
We have a bunch of deer meat downstairs in the freezer and I have never cooked with it before. I was wondering if anyone had any good reciepes for the meat. I'd like to find a good stake and a good stew reciepe at least. Thanks for your help!

I cook up a lot of venison meat loaf, steaks, and even meatballs!! Here are a few of my recipes...

Meat loaf

Ingredients:
Eggs
bread crumbs
ketchup
mustard
onions
green peppers

the amount of ground venision determines the amount you use for ingredients..I usually just judge myself..I'm not one to measure but generally I go by 1 egg per pound of meat. Also, the bread crumbs I kneed in until the meat basically "sticks" together. The remainder of the ingredients I put in is per taste.

Steaks or roasts:

Line roasting pan will foil that overflows edges by at least three inches. Lay steaks in water or favorite Marinade (such as bar-b-que) add potatoes, onions, carrots, and celery on top of steaks. Seal foil over top. Bake at 375 unitl meat is done a desired taste. Serve vegetable separate from steaks. For best results after venison is thawed let marinade over night in refigerator in favorite sauce.

make it with things you would put beef in, like stew, or ground it for meat pies. can put peices into a casorol, or put them on kabob sticks and put pinaple inbetween each piece and Bar B Q it. fry in tariaki sauce. the list goes on, use your imagination. :D good luck with making an awesome dinner :D

I agree, you can cook it like you would beef.

Deer is quite lean so you need to cook it in a way that will bread down the connective fibers because it doesn't have much fat marbling. So unless you're used to cooking with lean cuts of beef, just be careful that you don't end up with a chewy mess. That's happened to me enough!

I usually stick to stewing the meat or pounding the heck out of it and making chicken fried steak. I don't cook with game that often so that's what works for me. Good luck!

Thanks for the ideas ladies. I am not the best cook in the world, that's for sure. I can bake, but not cook. This ideas seem easy enough for me to handle. If not, darn, DH will have to make dinner.....:puppy:

I ground mine up and use in place of hamburger, also you can ground it up and put in some spices and wallah you have sausage. Also I use it in place of whatever beef is in a recipe. Or just fry it up and have it like a piece of steak minus the bone. I don't really have a certain recipe that I use. But it is great in stews, casseroles ect.

using the back strap i make french dip sandwiches w/ au jus.

first i sear it on the grill and then i finish it in a pan w/whatever seasonings and the aujus then slice it sooo thin on fresh french bread yummy

When we get venison I cook it about the same as beef. We usually get it ground like ground beef.

I like venison chili, venison spaghetti, etc ... I like to mix venison and ground beef for burgers, tacos and such.

For venison steaks, I like to marinate them it coke (soda) and some garlic/herb seasoning then grill them.

That is about all I have :frogg:

It started cause I didn't have anything else to use. I thought it would leave a slight sweet taste. it did any was yummy :)

I have used liquor before ;) But usually with Chicken.

When you cook it with chicken, don't you put a beer can in the chicken? lol
Well, if you get a chance you gotta do a venison roast marinated in beer...mmmmmh is it good!

We usually don't do roast whether it is beef or venison. :frogg: But I think Nikki wanted a roast recipe, so maybe she will want to try this :hare:

Up her in Pennsylvania we have a "recipe" for roasting chicken in a big kettle over a fire, of course outside..Anyhow, You open the beer can and stick in up inside a whole chicken. I forget the name of it it's something weird..

Anyways, it's a redneck recipe..

LOL Some a little further north, do this on the Bar-b-que. You drink about 1/3 of the beer, stand the chicken over the can, and then cook the chicken on the bar-b upright. My boss swears by cooking a chicken this way, but I haven't tried it yet.

We cook chicken like that sometimes, it's really good.

We do deer meat in hamburger. We also fry it: just soak it in milk, cover it with flour, and stick in the skillet.

One of my favorite meals is dear meat with mashed potatoes and gravy. The gravy is made in the same skillet you fried the deer in and tastes GREAT. (that was my birthday meal last year):)

Yeah I just pretty much do it the same as beef. When I do it chicken fried I just make sure I hit it with a meat tenderizer.
