Anybody got any recipes they would like to share for eating and fixing the left over turkey? My DH bought an 18 lb turkey and no way we will finish that off on Thanksgiving day. So share your recipes with me.

When we are sick of the turkey leftover's. We take everything and put it in a big pot and simmer away it make's a great turkey stew. Just add some more broth and or make some more gravy and walla a turkey soup/stew. There is no end to what you can put it into.

Also I have heard of people making layers of there leftovers and making like a casserole out of it and then serving with the leftover gravy.

I make turkey enchiladas

shred the turkey, mix with some cream of chicken or mushroom soup, layer with tortilla chips, top with cheese and bake for about 15-20 min. You can always season it to your taste, it is so good!!

I am going to try something like this tonight, but also add crescent roll dough on the bottom and top. I hope it comes out!

Please post any other recipes you have! I need all the help I can get as we have at least 5 lbs. of meat left (that is after the bones have been thrown away)!

This is my favourite!
It's great comfort food! You can do it with out the peas as well.

TURKEY TETRAZZINI
10 oz. mushrooms, sliced thin about 4 cups
5 tbsp. unsalted butter
1/4 c. all-purpose flour
1 3/4 c. milk
2 c. chicken broth
1/4 c. dry white wine
10 oz. spaghetti
3 c. coarsely chopped cooked turkey
1 c. cooked peas
2/3 c. freshly grated Parmesan
1/3 c. fine fresh bread crumbs


In a large heavy saucepan cook the mushrooms in 1/4 cup of butter over moderate heat, stirring until most of the liquid they give off has evaporated. Stir in the flour and cook the mixture over low heat, stirring for 3 minutes. Add in a stream (that is pour slowly) of milk, the broth, the wine, stirring bring the mixture to a boil, stirring and simmer the sauce for 5 minutes. In a pot of boiling, salted water cook the spaghetti until it is al dente (cooked) and drain it well. In a large bowl combine well spaghetti, the mushroom sauce, the turkey, the peas, and salt and pepper to taste. Stir in 1/3 cup of the Parmesan, and transfer the mixture to a buttered shallow 3-quart casserole. In a small bowl combine the remaining 1/3 cup of Parmesan, the bread crumbs and salt and pepper to taste. Sprinkle the mixture over the tetrazzini and dot the top with the remaining 1 tablespoon of butter, cut it into bits. Bake in 375 degrees F. oven for 30 to 40 minutes.

My mum always makes here left over turkey into a turkey curry! I cant tell you if its nice, I dont like curry, but everyone else seems to like it, They go back for it every year!

I usually have leftover turkey dinner for a day or two and that is about it. So I don't have any resipies to share.

But that TURKEY TETRAZZINI sounds wonderful!

Turkey Tetrazinni is fantastic! Just don't make too many plans for after eating it because it makes you super sleepy. Have it with a glass of milk for dinner and you're set for the night.

It is unbelievably good! I ate way too much, it is so rich! Mike could not stop raving about it, too! I even put an onion and a clove of fresh, pressed garlic in it when I was cooking the mushrooms, yummmmm! I want more but I don't think my stomach would appreciate it!

How about making some turkey pot pies or some turkey soup? At least this way, you can freeze it and pull it out when you aren't adverse to having turkey again. LOL

This was a recipe I was a little nervous trying as I am not a pie maker...What a pleasant surprise- it turned out delicious and was a good stick to your ribs meal on a cool fall day. Update- I tried it this year with the new Pillsbury refrigerated pie crusts, it turned out wonderful, see the photo I took!

1 hour 30 min prep
2 frozen deep dish pie shells, thawed (or homeade pastry for a double crust pie, or 1 box Pillsbury refridgerated pie crusts)
4 tablespoons butter, divided
1 small onion, minced
2 stalks celery, chopped
2 carrots, diced
3 tablespoons dried parsley
1 teaspoon dried oregano
salt and pepper
2 1/4 cups chicken broth
2-3 potatoes, peeled and cubed
1 1/2 cups cubed cooked turkey
3 tablespoons all-purpose flour
1/2 cup milk

Preheat oven to 425 degrees F (220 degrees C).
Melt 2 tablespoons butter in a large skillet over medium heat; add the onion, celery, carrots, parsley, oregano, and salt and pepper. Cook and stir until the vegetables are soft. Stir in the broth. Bring mixture to a boil.
Stir in the potatoes, and cook until tender but still firm.

In a medium saucepan, melt the remaining 2 tablespoons butter.
Stir in the turkey and flour. Add the milk, and heat through.
Stir the turkey mixture into the vegetable mixture, and cook until thickened. Cool slightly, then pour mixture into 1 unbaked pie shell.
Cover with remaining crust. Flute edges, and make 4 slits in the top crust to let out steam.

Place on a cookie sheet. Bake in the preheated oven for 15 minutes.
Reduce oven temperature to 350 degrees F (175 degrees C), and continue baking for 20 minutes, or until crust is golden brown. Note- Cooling the filling before putting in pie shell is EXTREMELY important, if it is too hot it will make the crust mushy.

I made it with chicken last night! Well a variation of it, I just used what I had in the house to make it work. I used green bean instead of peas, canned chicken gravy instead of the broth, and Marsala wine instead of the white wine ;)

LOL ... I guess it wasn't really Tetrazzini but it turned out pretty good :whoohoo:

This may sound strange but white often when I have left over turkey I do everything turkey till it's all done, but nothing is worse then the same turkey dinner every night.
I personally love pasta, and I make a rose sauce (alfredo with some fresh tomatoes roasted til mush). I rip up the left over turey and add it to the sauce. Add soem parmesean and wa-la!
