Another thread about Christmas traditions brought up baking cookies ... I bake cookies for friends and family during Christmas, though I usually buy the mix ;)
But there is one that I make from scratch, call tea cakes. My MIL used to make them so I got the recipe from her.
So I thought I'd share
Tea Cakes (they are kind of like sugar cookies but a little bit 'cakier' and not quite as sweet)
You need:
- 5 Tablespoons butter or margarine (melted)
- 1 1/4 cup sugar
- 1 egg white
- 1/3 cup evaporated milk
- 1 Teaspoon Vanilla extract
- 3 cups self rising flour
----------------------------------------------------------------------
Prepare:
- Melt butter and mix with sugar in a large bowl
- Add egg white and vanilla
- Add milk and flour (one cup at a time)
*Refrigerate overnight*
Bake:
- Preheat oven to 350
- Using wax paper dusted in flour, roll out dough (approx 1/2 in thick) and cut into desired shapes
- bake 8 - 10 mins
* Makes 2-3 dozen
-- Allow to cool and enjoy
*Also great frosted or dusted with powdered sugar or cinnamon sugar. We tried adding those mini M&M's last year and those were good too. You could add just about anything you wanted, nuts, chocolate chips, whatever.

My sister makes everyone christmas cookies and I make christmas candy. I like to make divinity, fudge, chocolate caramel turtles, reeses cups, chocolate covered cheeries, orange balls, almond joy and heath bars. I love making candy and giving this out for gifts. And everyone loves it as well.

I usually just help my mom bake cookies and she knows all of her cookie recipes by heart....I usually don't make my own.

I make cookies for gifts also. I've started making Cake Mix Cookies. You take whatever cake mix you want and add some stuff (chocolate chips, coconut...whatever you find in the store). I haven't had one turn out terrible yet and it's much easier than making a huge mess with the flour and sugar.
If anyone wants the recipe, let me know.

In a saucepan over medium heat, combine the sugar, cocoa, milk and margarine. Bring to a boil, stirring occasionally. Boil for 1 minute, then remove from heat and stir in the vanilla, salt, peanut butter and oats.
Drop by rounded spoonfuls onto waxed paper. Allow cookies to cool for at least 1 hour. Store in an airtight container.

Another idea is to make the jar gifts and attach on the recipe. I do this for my grandfather. All he has to do is add some water and maybe some oil. You just attach the recipe onto the jar. You can also dress up the lid to.

I will find our butter cookie recipe, it is so good! It is for a cookie press though, although I'm sure you could roll it out and use cookie cutters too!

Cookie Press Cookies
Makes 2 to 3 dozen cookies
Rich, buttery, and made with lots of vanilla, these cookies are simple to make. Use a cookie press—a hollow tube fitted with a decorative nozzle at one end and a plunger at the other—to press the cookies directly onto the baking sheet.
1 1/2 cups (3 sticks) unsalted butter
1 cup sugar
2 large egg yolks
3 3/4 cups sifted all-purpose flour
1/4 teaspoon salt
1 tablespoon pure vanilla extract
Colored sanding sugar
1. Heat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Add egg yolks, flour, salt, and vanilla. Mix thoroughly.
2. Fill a cookie press with the dough, and turn out cookies 1 to 2 inches apart onto an unbuttered baking sheet. Sprinkle cookies with colored sanding sugars.
3. Bake until the cookies are lightly browned, 7 to 10 minutes. To ensure even baking, rotate sheet halfway through the baking process. Transfer to a wire rack, and let cool.

What is cake paraffin? Can you get that at the grocery store?

We are making Peanut Butter Balls this year too! They are so easy and very Yummy!
I will submit my recipe as well.
We make the basic PB Ball recipe and then dip some in choc., some in confect. sugar, some in frosted flakes, etc.. (I have never seen one w/ rice krispies. I'll have 2 try yours too!)

Chocolate Gooey Butter Cookies (I LOVE these cookies. I made them after watching an episode of Paula Deen and have made them ever since!)
1 (8-ounce) brick cream cheese, room temperature
1 stick butter, at room temperature
1 egg
1 teaspoon vanilla extract
1 (18-ounce) box moist chocolate cake mix
Confectioners' sugar, for dusting
~Preheat oven to 350 degrees F.
~cream the cream cheese and butter until smooth. Then beat in the egg, then the vanilla extract, and finally the cake mix.
~Cover and refrigerate for 2 hours to firm up so that you can roll the batter into balls.
~Roll the chilled batter into tablespoon sized balls and then roll them in confectioner's sugar.
~Bake for about 12 minutes. The cookies should remain soft and gooey, hence their name.
~When they are cooled sprinkle them with more confectioners sugar.

My mom calls these Swedish Spritz Cookies:
1 c. soft butter
3/4 c. sugar
1 egg
1 T. vanilla
2-1/2 c. flour
1/2 tsp. baking powder
1/4 tsp salt
cream butter & sugar, add egg & vanilla
add dry ingredients
force through cookie press
sprinkle with colored sugar
bake in 400 degree oven 5-8 minutes or until lightly brown
yields 4-1/2 dozenWe usually just make them into S's and trees. Sometimes the flower shape and stick half of one of those canned cherries in the center.

We also dip pretzles into almond bark (this is my job :)) and I sprinkle them with red/green mixed sugar. Oh, and lets see...we made chocolate stix but I don't have the recipe right now. Snowballs are yummy too, but again I have to get the recipe.

I don't know if its a Christmas cookie, but I think I found it once in a holiday cookie book. Here is the recipe:
Thumbprint Cookies
1 pkg (8 oz) Philadelphia cream cheese, softened
3/4 c. butter, softened
1 c. granulated sugar
2 tsp. vanilla
2-1/4 c. flour
1/2 tsp. baking soda
1 c. finely chopped Planters Pecans
beat cream cheese, butter, sugar, & vanilla in large bowl w/ electric mixer on medium speed until well blended. Add flour and baking soda; mix well. Cover.
Add pecans; refrigerate 30 minutes.
preheat oven to 350 degrees, shape dough into 1 inch balls. Place on ungreased baking sheets. Indent centers. Bake 10 minutes.
Fill each cookie with 1 tsp. of your fave preserves. Continue baking 8-10 minutes or until golden brown.
makes about 5 dozen cookies.I have never made this but it sounds really good!
And I just thought I'd share my gmas chocolate chip cookie recipe:
1-1/8 c. sifted flour <----
1/4 tsp. baking soda <---- sift these 3 together
1/2 tsp. salt <----
1/2 c. shortening <----
1/4 c. brown sugar <---- cream these 3 together
1/2 c. white sugar <----
1 egg
1 tsp. vanilla
1 pkg. chocolate chips
1/2 c. nuts
Mix all together and bake at 350 degrees for 10 minutes.

I found these Mexican Wedding Cookies, but I think they're the same as my mom's "Snowballs" so here's this recipe. My mom uses walnuts instead of pecans.
1 cup (2 sticks) butter, softened 1 cup powdered sugar, divided 1 tsp. vanilla 2 cups flour 1 cup finely chopped PLANTERS Pecans
PREHEAT oven to 350°F. Beat butter, 1/2 cup of the powdered sugar and the vanilla in large bowl with electric mixer on medium speed until light and fluffy. Gradually add flour and pecans, beating on low speed after each addition until well blended. SHAPE dough into 1-inch balls. Place, 1-1/2 inches apart, on ungreased baking sheets. BAKE 14 to 15 min. or until bottoms of cookies are lightly browned. Cool 5 min. on baking sheets. Roll warm cookies in remaining 1/2 cup powdered sugar until evenly coated; place on wire racks. Cool completely. Store in tightly covered container at room temperature.

I forgot about these! Does anyone make these peanut blossoms? My mom does sometimes.
1/2 cup (1 stick) butter, softened
2/3 cup peanut butter
2/3 cup granulated sugar, divided
1/3 cup firmly packed light brown sugar
1 egg
2 Tbsp. milk
1 tsp. vanilla
1-1/2 cups flour
1/3 cup PLANTERS COCKTAIL Peanuts, finely chopped
1 tsp. baking soda
1/2 tsp. salt
48 foil-wrapped milk chocolate pieces, unwrapped
PREHEAT oven to 375°F. Beat butter, peanut butter, 1/3 cup of the granulated sugar and the brown sugar in large bowl with electric mixer on medium speed until light and fluffy. Add egg, milk and vanilla; beat until well blended. Combine flour, peanuts, baking soda and salt. Gradually add to butter mixture, beating until well blended after each addition.
SHAPE dough into 48 balls, each about 1 inch in diameter; roll in remaining 1/3 cup granulated sugar. Place, 2 inches apart, on ungreased baking sheets. BAKE 9 to 10 min. or until lightly browned. Immediately press a chocolate piece into center of each cookie. (Cookie will crack slightly around edge.) Cool on baking sheets 1 min. Remove to wire racks; cool completely.

1 . Heat oven to 350°F. Line cookie sheet with parchment paper. Draw 10-inch circle on paper. Turn paper over so mark is on underside; line will show through. 2 . With dabs of frosting, attach cut-out cookies to cookie wreath, allowing 1 layer to set before adding another layer.

I still haven't gotten my PB ball recipe yet but here is an very easy Eggnog recipe that is very delicious and goes well w/ cookies! :puppy:
Effortless Eggnog:
1/2 Gallon of cold milk divided
1 package (3.4 oz.) instant french van. pudding mix
1/4 c sugar
2 teaspoons vanilla
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
In a large bowl whisk 3/4 c milk and pudding mix until smooth.
Whisk in sugar, vanilla, cinnamon, and nutmeg.
Stir in remaining milk. Ref. until serving.
*Serves 16 (2 quarts)
