I was just wondering...do I have to option of picking out all the songs that will play at our reception? There's certain songs I want in and certain songs I want out!

I know I need a DJ, but can I give him a list of songs and say "These are the ONLY songs I want played." and then let him put them in the order that he pleases?

I don't see why not - Not I'm not speaking as a DJ here, but at my friend's wedding I know she gave him a list of songs she wanted played - It wasn't necessarily a list of play ONLY these songs (as we were able to make requests) but I know for a fact she gave him a list of DO NOT PLAY these songs, even if they were requested ...

Absolutely. There's no reason why you can't do that. Sure it'll limit the DJ's creativity or whatever, but they're going to get paid whether they play your playlist or their own. ;)
I say that if you definitely know what you want, go for it.
We gave our DJ a list of "Must" songs and we also laid down a ban on the chicken dance, macarena, the electric slide, any other line dance type songs, and all country. He didn't have a problem with it. :)

Yeah, I'd talk to your DJ about it. You are hiring them to do an explicit service. You're not outside your bounds to make requests and polite, respectful demands :) In fact, that's what they are supposed to do.

The DJ you choose should be able to answer these questions when you inquire about music:
Do you have a music library that allows me to add music to my request list?
How many songs am I allowed to have played?
Do you have a "do not play" list of songs that I can customize?
Can I use my own song selections for my special events?
What if I want a song that you don't currently have?
These are questions that when asked, the DJ should say yes to all of them. When brides book us, we set them up in our client database, and from there they have access to their planning forms (which allows them to select whether or not they want certain line dances) and a music request list. I give them up to 100 songs to pick from, and obviously they won't all get played, but I can categorize them in different portions of the reception. Your DJ should be willing to get any song that you want, especially if it's for your first dance, parent dance or last dance and not just say 'oh you'll have to provide it'. Also there may be "songs not to play for personal reasons" that you may have. Your DJ should consult with you and go over everything with you prior to your wedding day. I hope it helps!

Tell your DJ which songs you want and which not, you don't have to pick all the music.

I never had a DJ in my wedding because we did it all in live. I am a member of the band so my band mates was the one who played on my wedding day from church till reception and my favorite is our main wedding sond entitled "Beautiful in my eyes by Joshua Kadiso" I really like it. Here is the video.
