I need some suggestions for lunches during the work week. I'm really trying to cut my carb intake so I'd like to only eat a sandwich once a week or so.

I really don't know what to eat for lunch that isn't carb loaded. I can take a salad one day, but I know if I try to take salad every day I'll be board and end up going out for something. Soups are usually a good choice for me but they have so much sodium in them and sometimes a lot of carbs too.

So what do you do for lunch girls? Any suggestions for healthy low carb (I'm not going no carb just cutting back because of my PCOS and eating only whole grains)

I'd love to take egg salad or tuna but I don't think anyone walking by my office within an hour of lunch would appreciate it haha

I used to make extras of any meals that reheat well in the microwave and bring along w/me to work...

You could make mini burgers, wraps and sandwiches, but in lettuce leaves instead of a bun if you want to cut out carbs.

You could make soup or look for lower sodium versions.

I usually just eat leftovers from dinner the night before (or some variation there of) for lunch.

I also do leftovers. Or carbs. My co-worker brings lots of fruits and veggies and just munches every few hours. My boss does the Lean Cuisine's.

I like Jan's suggestion of fruits and veggies. I do that from time to time. I'll make a big bowl of dill dip (not sure how healthy that is), but I'll munch all day long on the veggies.

i've done the lean cuisine/smart ones things before.. the only problem the portion size for me is a bit tiny so i need a snack to go WITH the lean cuisine...

I make this for DH about 2x a month. He loves it. The only thing I change is I use quinoa and NOT bulgur. Its sooo much better, IMO. Greek Salad with Chicken (http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=1160566)

I make homemade mac and cheese sometimes (which chicken in it so it is an entree), that probably would taste good the next day.

We hardly ever have left overs. Mostly because I only cook what I know we should eat - because if I cook more we tend to eat more even if we don't need to. When I KNOW I've cooked too much I put some in the fridge before we even start eating. Maybe I'll start making too much and just putting some aside before we start eating so we don't eat my next days lunch haha

I just find it easier to have left overs. I get it ready the night before and literally just grab and go in the mornings. If I don't have something prepared, I usually forget about it.

when i want to make sure i have stuff for lunch i put it in a container that i'll bring with me and then tuck it in the fridge

I'm with Jan - I love leftovers. I usually try to make extra the night before just so we have leftovers for lunch. However, it also induces overeating at dinner haha.

Bake up a casserole - they're great for lunches. Some of my favorites are:

Tuna Casserole - but make it with chicken instead of tuna so you don't have the tuna smell in the office

Alfredo casserole - broccoli, cauliflower, mushrooms and peas (maybe even carrots?) in light sauce and penne. The veggies (for me) overpower the pasta so it's really a decent meal

Taco Salad - I make it without meat but with everything else

Broccoli Beef - no carbs! Add in a few favorite veggies to make it even healthier.

And you can't go wrong with a yogurt/fruit combo :D

Personally, those low carb microwave lunches...they don't make me feel like I ate anything filling. I love to have a lunch of roasted almonds(high in calories, but so filling), cut up fresh fruit (USUALly melon or grapes), a couple slices of tillamook cheddar cheese, maybe some veggies with low fat ranch dip, a boiled egg or so, mini bagels with peanut butter. I usually just mix combinations of these things.

Good luck and share ideas that you end up using!

I'm a big leftovers person as well and to help prevent overeating at supper I lay out our 2 plates plus my lunch container and just put food in/on all of them at the same time.
