View Full Version : What to do with chicken quarters...

So I went to Wegman's for meat the other day and chicken quarters were on sale for $2.90! I got about 10 quarters for that $2.90. Of course they weren't fresh and weren't going to keep long, so I froze them all.
I want to take two out for dinner tomorrow. When I make chicken it's usually boneless breasts. SOMETIMES I do shake n bake with thighs or quarters, but hardly. What do you ladies do with chicken quarters?

I really love simple roasted chicken - just roast in a pan with a little bit of celery, onion, lemon and fresh herbs (I use rosemary and thyme) tucked underneath and around the pieces of chicken with just a little bit of olive oil on the skin to help it crisp. I usually cover it with foil for the first 20 or so minutes, then uncover it so it can get crispy until it's done.
Smoked chicken is also really fabulous, but you need a charcoal grill for that!

I made a roasted rosemary chicken with potatoes not too long ago that was really good.
You just mix together the spices in a big bowl -
2 tsp paprika
1 1/2 tsp crushed rosemary
1 tsp minced garlic
1 tsp minced onion
1/2 tsp pepper
pinch of salt
Add 2 tbsp olive oil, mix well and set aside.
Cut your potatoes into 1 inch cubes. Then toss potatoes and chicken in the mixture.
Put seasoned chicken and potatoes in a single layer into a baking pan and bake at 425 for about 30 mins ... until potatoes are fork tender (you may have to turn the potatoes a couple of times) and chicken is cooked through.
I made green beans with it the time I made it :)
