Alright ya'll, I've tried mac n cheese in quite a few ways and I think baked is the best. Anyone got a favorite recipe? So far I haven't really found the recipe that looks like THE ONE ;)

I'm thinking of combining these two sorta.... But I still wanna know if ya'll have any special recipes for it that you wanna share!

BAKED MACARONI AND CHEESE 1 1/2 cups macaroni, cooked
2 cups thin white sauce (see below)
2 tsp. grated onion
1/2 pound grated cheese
fine buttered bread crumbs
paprika
Preheat oven to 400°F. Cook and drain macaroni and place in a buttered 1 1/2 quart casserole. Blend onion and cheese with white sauce and pour over cooked macaroni.
Sprinkle with buttered crumbs and paprika. Bake uncovered in preheated oven for 30-35 minutes.
THIN WHITE SAUCE:
1 tbsp. butter
1 tbsp. flour
1 cup whole milk
1/4 tsp. salt
Melt butter at 200-212°F in saucepan, microwave or double boiler.
Add flour to butter and whisk well to blend. Gradually stir in milk, whisking constantly until smooth. Allow to cook over medium-low heat until sauce simmers and thickens to desired consistency. Add salt, to taste. If you prefer a richer sauce, use 2 tbsp. flour and 2 tbsp. butter.


GOLDEN BAKED MACARONI AND CHEESE
¼ cup butter
¼ cup flour
3 cups milk
1 cup grated cheddar cheese
½ teaspoon salt
½ teaspoon dry mustard
¼ teaspoon pepper
1 teaspoon Worcestershire sauce
½ package (8 oz.) bite sized macaroni
1 cup grated sharp cheddar cheese
bread crumbs
Melt the butter in a large saucepan. Blend in flour and gradually add the milk, stirring constantly; add the seasonings. Cook until the sauce is thickened.
Add one cup grated cheddar cheese and stir until melted. Cook macaroni as directed, drain, and add to cheese sauce and mix well. Turn the mixture into an 8-inch square baking dish or pan. Sprinkle the top with 1 cup sharp cheddar cheese and breadcrumbs.
Bake in a 375°F oven for about 15 minutes. Remove from the oven and place under the broiler until the cheese is bubbly and lightly browned. Serves 6-8.

I have made one before using Velveeta and sharp cheddar. Basically I cook the macaroni, then make a cheese sauce with the Velveeta, milk and a little sour cream ... add a dash of salt, pepper, paprika and a pinch of garlic.

Then I put it all in a casserole dish ... mix some shredded sharp cheddar with crushed garlic/cheese croutons and sprinkle on top ... bake at 350 for about 25 mins :yummy:

I made a white cheese version once too that was really good; I forget what all was in that one though.

I tried to make baked mac and cheese once...I failed...lol. Sounds like a good combo though. Good luck!

I love homemade mac n cheese! I don't use a recipe, I just make a cheese sauce (butter, flour, milk and cheddar cheese) then pour that over the cooked noodles, mix it all together then I like to throw in some canned diced tomatoes and a can of tuna and put bread crumbs and cheese on the top and bake it.

Well here's how I ended up doing it - and I didn't even get a pic :doh:

I ended up using more macaroni noodles than it called for and it turned out pretty dry - but still yummy. Note to self - if it looks like too much sauce, it's probably just right ;)

I would have never thought to put Worcestershire, onions and dry mustard in mac n cheese; was it spicy?

I made the one I posted about earlier on Sunday; I left off the bread crumbs and the garlic though cause my family is picky ;) It got eaten so I guess everyone liked it.

The only thing I tasted were the onions... Not sure what the purpose of the sauce was, or the mustard since it only called for 1/2 tsp :blink: but next time I think I'll spice it up with a little more pepper and maybe fresh onions instead of dried (yuck).

This is my favorite, but FH won't eat it, so I haven't had it in a while... now it sounds really good though. I may have to try to find a way to scale back the recipe and make some to keep around for lunch. Now I'm hungry ;)

I got it from Alton Brown, on the Food Network. I love their website... it's got all sorts of great recipes.

Ingredients


1/2 pound elbow macaroni
3 tablespoons butter
3 tablespoons flour
1 tablespoon powdered mustard

1/2 cup yellow onion, finely diced
1 bay leaf
1/2 teaspoon paprika
1 large egg
12 ounces sharp cheddar, shredded
1 teaspoon kosher salt
Fresh black pepper Topping:


3 tablespoons butter
1 cup panko bread crumbs Directions

Preheat oven to 350 degrees F.
In a large pot of boiling, salted water cook the pasta to al dente.
While the pasta is cooking, in a separate pot, melt the butter. Whisk in the flour and mustard and keep it moving for about five minutes. Make sure it's free of lumps. Stir in the milk, onion, bay leaf, and paprika. Simmer for ten minutes and remove the bay leaf.
Temper in the egg. Stir in 3/4 of the cheese. Season with salt and pepper. Fold the macaroni into the mix and pour into a 2-quart casserole dish. Top with remaining cheese.
Melt the butter in a saute pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs. Bake for 30 minutes. Remove from oven and rest for five minutes before serving.
