Ok I found a recipe for this Cheesy BBQ Chicken that I'm making tomorrow and I am having trouble deciding what to make with it.
The chicken is marinated in margarita, grilled, then dipped in bbq sauce and covered with melted cheese. So what should I make to go with this?
I may need recipes too ;) Thanks ladies!

Well you should def. have some potatoes...I think garlic mashed potatoes would be so yummy!!!

Baked beans is always good with any type of BBQ. Also maybe some roasted corn and some type of cobbler (peach is the best IMO) for dessert. Don't forget the icecream on the side.

Go but a bag of those little tiny potatoes or just dice up some regular potatoes. Make a foil packet (be sure to spray the inside with some cooking spray). Then add several pats of butter, salt, pepper, and a little thyme. Just toss on the grill and cook until tender and brown (about 45 minutes). Grill some vegetables with it (eggplant, summer squah, zucchini, red peppers, mushrooms) and you are set.

I agree, Lacey's sounds yummy!!! I forgot my phone at my Mother's house so I can't call Amber, but I will email her and get a good one for you, Brandi. :)

Probably too late on this one but you could always do something like a twice baked potato. Just cook whole potatoes then cut them in half and scoop out the insides in a bowl. To the bowl add all your favorites like cheeze, bacon, scallions etc. and mix. Then scoop the filling into the potato halves, sprinkle with cheese bake in the oven until the cheese is all melted and yummy!
Or you could do a pasta salad which would be cool and refreshing. Just cook your favorite small pasta then cool. Add your favorite Italian dressing, chunks of pepperoni, cheese, olives, tomatoes, onions whatever you like. Quick and easy pasta salad.
For veggies I love grilled corn on the cob or asparagus...
Well now I am hungry...LOL!

Amber your not too late (we have dinner kind of late since we get up late ;))
The twice backed potatoes sound good (you know I never understood those until now ;)) but to save time I think we are going to have microwaved baked potatoes. I'll probably make some broccoli for a veggie.

I agree with potatoes... mashed would be excellent, as it goes so well with chicken. I'd also make either some corn (kernels) or steamed vegetables to go on the side.

In those twice baked potatoes (I called them stuffed potatoes :wink:) I would add some ranch dressing when you scoop them and mix it. THen put back in the potatoes. Add cheese, reheat and yum!! My hubby loves these!! I also add garlic salt and seasoning salt!! I remember Brandi saying she loves Ranch dressing so I thought I'd share that!! :)

That I do ;) We ended up making once baked potatoes ... and yes I put ranch dressing in mine ;)

I usually add a little bit of horseradish to my twice baked potatoes. Gives a little kick.

Ice cream is always good! It is especially good on hot summer days.
