We saved the top layer of our cake to eat on our first anniversary, which is Sunday!

What I was wondering, what would be the best way to thaw it? Just sit it out on the counter or let is sit in the fridge overnight?

I tried to google it but theres not a lot of information on thawing year old cake...

I believe we let ours sit out for a bit.
And a little helpful hint...when thawing out bread, rolls, cake, etc, put some paper towels in the package when you pull them out of the freezer. It will keep them from getting hard after!

We let ours sit in the fridge to unthaw. On the day we were going to eat it we left it out on the kitchen counter to do a "final thaw" I guess you could say. But I did pull it and put it in the fridge severl days before we ate it.

Most everything I have heard was to let it thaw in the fridge for a couple of days.

Have a Happy Anniversary!!

Thanks ladies! I think I will put it in the fridge now.

We put ours in the fridge for a day and then we left for vacation so it got set out at room temp for around 6 hours. Then it went back in the fridge for a night...then back at room temp for half of a day...and then back in the fridge for a final time. We unwrapped it, cut it up, and ate it. Yep, all of that back and forth and it was just as good as it was the day of our wedding! Not a recommendation though! ;)

We put ours in the fridge the night before, and then let it sit out on the counter the day of our 1st anniversary - then we ate some that night.

Was it really that good? I can't imagine that cake sitting in the freezer for a year would have matched the experience of your fresh cake.

I'm really wondering :) We opted to serve our top tier and then buy another small single-layer cake for our first anniversary, because we both assumed that saving our first layer for a year would result in, well, icky cake, to be honest.

Was it icky? Or did it taste pretty good?

Happy Anniversary!

I don't wish to be a downer... but my mom used to work as a baker and she said that most cake is only good in the freezer for 6 months, then it goes bad (like, food safety problem bad). Did yours keep? :crosses fingers for you:

We're going to eat ours - ours is made from brownie as well (I think!), so we're going to probably fridge thaw it then microwave it, put some ice cream over the top and Voila!

Please let us know how it goes :)

We just ate some for breakfast:) and it was pretty good. We just left it in the fridge the last couple of days, the icing was still a little frozen so it had a funny taste. But the cake its self was good.

we are going to set it out on the counter for a while and try another piece later to see if it thaws a little more. And see if that helps.

Very interesting! Glad to hear it was pretty good! My DH and I decided to not save the top tier because we were afraid that, like Whitewater said, it would be icky, and, like Christine said, it wouldn't keep properly. So we just agreed we'd buy ourselves a little carrot cake next year in lieu of the original. But I'm super happy to hear it worked out for you! Happy Anniversary (a little belated...)!

Our Fridge / Freezer blew up and i have no idea when it went kerput. So we lost our Wedding Cake along with £400 of Frozen Food. :(

We might make a cake ourselves and stick our heads in it.
