Ok so I thought to make a batch of lemon squares for this Wednesday, BUT!!! I don't have eggs and there is NO WAY I'm going out in the freezing cold!
So I looked up "replacement for eggs in baking" and I found something that I could do with the stuff I had on hand. 2tbs water + 1 tbs oil + 1tsp baking powder.

Ok anyone that knows... Is this going to make it blow up?!?!??! :snide:

It sounds like it should work just fine! Could you make a small portion (scale the recipe down a bunch) and test it maybe??

In certain recipes bananas can be used in place of eggs. This is how my vegan friends modify recipes. Also, 2 tbsp of corn starch = 1 egg.

Eggs can also be substituted with 1 tablespoon soy flour + water. But I'm guessing you probably don't have soy flour in the house.

nope and I didn't have bananas (I'm not a HUGE fan)
I did do the one I found and for a second it looked like a 5th grade science experiment!!:bbeek:
It just kept growing and GROWING.... then I realized duh! lemon (acid) and baking powder!
It took a bit longer to bake and it's in the fridge now... when I get home from work I'll take a look and see if it's edible.

im so interested in this.. i cant tell you how much i have this problem.... I never have eggs in the house b/c we dont eat them much and then when i go to bake i wind up going DOH!!

I was thinking the same thing! It would be great to have a list of common things like this :)

Nope!
It had this baking soda like taste all through it that made you feel like you were eating Alka-Seltzer tablets!! :bbeek:
Sufficed to say I went out and got eggs the next day.
