View Full Version : Day one of baking is OVER!!!

I've decided to get the ball rolling on my holiday goody packs this year.

This year they'll contain:
Peppermint Bark
Truffles
Peppermint Palmiers -now that I'm thinking about it though I should've just done spirals. oh well.
Lemon Squares
Cinnamon Wreaths -though I don't think I'll be making them into wreath shapes.
I have an excess of Bakers chocolates so I was thinking about doing some chocolate dipped Nilla Wafers... dunno


So today I did as much prep work as possible.
Tomorrow I will be doing actual baking, decorating, and packaging.

I love Peppermint Bark; you have a recipe to make it?

I am going to make some cookies at some point, but I will probably wait until the week of Christmas.

I use a super simple recipe:
1 box Baker's semi sweet
1 box Baker's white
Crushed peppermint sticks
peppermint extract if you want it super pepperminty


Melt the chocolate (separate bowls) in the microwave like 45 seconds to 1 minute -if you're using peppermint extract add it to the white chocolate
Pour chocolate into cool little ribbons
toss in crushed peppermint
lightly blend with a butter knife to get those cool swirls.

You can also do this with oreos -so GOOD!!!

OR
oreos AND peppermint!

What is a cinnamon wreathe? Sounds nummy.

Turned out great anyway!!
These are mine -not nearly as fancy looking. I always have the worst luck with cookie cutters so I rolled it, froze it, and just cut off little rounds.

Truffles "Coal" -I was having a hard time making these things round so I decided to leave them all bumpy and call them coal.

Chocolate dipped Nilla Wafers -I had TONS of leftover chocolate so I decided to dip some Nillas in chocolate

I do this much baking only once a year. Throughout the year I will make the occasional treat if it's someone's birthday or something, but this scale is reserved for the holiday goody bags!

I normally do marathon baking at this time of year too - Candy Cane Cookies, Butter Tarts, Gingerbread Men and Shortbread are a MUST + whatever suits my fancy that given year. If I get all that I need to do done, I will get at it .... otherwise, I am only going to bake the MUST haves and fill the empty spaces on the trays with bakery cookies (shhhhhh the guests will never know that I didn't make them :rofl:)

LOL! I had one father from my class EAT THE WHOLE bag before he even got into work, so of course his wife got NONE of it. Now I'm going to make her a special package of Lemon Squares only for her.

I totally want one of your goody bags. :drool:
