I think white roses would be good; here are some other ideas -
Popular Winter Wedding Flowers
Although the flowers you choose for your wedding will depend primarily on your budget and personal taste, the most popular winter wedding flowers are:
Red or white roses
Stargazer, Casablanca, or calla lilies
Chrysanthemums
Amaryllis
Hydrangea
Daisies
Carnations
Snowball mums
Poinsettias
Freesia
Gardenias
Magnolia

As for non flower alternatives; how about crystal beads? Could give a wintery icicle feel.

I am also having a winter wedding and I am having white garden roses, stock, and delphinians (spelling?), with white carnations in the BM's instead of roses. For the bouts and corsages, white freesia. I am doing more of a snowflake theme.

One caution about using fresh holly for boutineers- the tips of it have stickers on them so they would be prickly and could scratch your guys or anyone who might hug them.
Do you have any idea what you want your bouquets to look like? That might help us to give you suggestions on what flowers might be different- I personally love Casablanca lillies - they are stark white and huge, so you don't need many of them to make a beautiful hand tied bouquet.

What about making your bouquet out of fresh christmas greens and pine cones if you want natural? You could even put in some holly and maybe even pretty fresh berries.

that sounds like a good idea. see what fh and moh think. i love the smell of fresh pine and it makes me think of the real reason brides carried flowers...to cover the fact that they hadnt bathed. haha...what better way to cover up then with pine:bblol:

i was going to use stephanotis flowers. Very tiny but gorgous in a ball. Looks like snow balls in my opinion

Very pretty, but very expensive. Steph stems run about $3.00 per bloom. Have you had your florist price this out for you? If not, and this is the style of bouquet you want, but are on a budget, consider having the base of the bouquet made with white mini carnations or carnations and use the steph as an accent flower for it. That would give you the same look as the picture above at a budget friendly cost.

I made the bouts, corsages, and some table arrangements for a wedding using holly. This came about because holly grew on the bride's parent's property, who were friends of mine. The bride's mother and sister used nail scissors to clip the sharp points off the leaves in the holly for the bouts and corsages. Because I wired the leaves on individually and then added sprigs of red berries I was able to give them an exact count of how many leaves I needed, which wasn't many. Three for each boutonniere, five for corsages. Unless you have a lot of attendants it shouldn't be too hard for the same to be done for you. The other great thing about holly is how wonderfully it lasts.

Is she doing them out of silk flowers?

I'd look into what the florists or even local artisans (or maybe a combination of the two) might suggest. My two cents! Congrats!

I would like to use white carnations or roses. It would depend on our budget.
