View Full Version : Peach & Mango Rum Cake

My mom wants a peach and mango rum cake for her birthday. Apparently a friend of hers had something similar; I told her I would try to make something for her. I would like to just alter a box recipe, but I am not sure where to start. Any tips or ideas?

Do they make peach and mango flavorings or would I have to use fruit?

I don't know if this is anything close to what would please your mom, but I've made a type of upside down cake before with peaches and rum. If this type of cake would be okay - You could gently sautee some fresh mango and peach in brown sugar and butter in some type of oven safe pan, cast iron works best for this. Just do it until the sauce is caramel like and the fruit is barely softened. Right before it's done add a splash of rum and evenly spread out the mixture. Pour the prepared cake batter mix (you could add a splash of rum to that too) over the fruit mixture and pop in the oven for whatever time/ temp the box says.

If a more traditional cake is what you're after then I'm sure that you could use peach flavorings in the cake mix, but I've never seen mango. Then again I've never really looked for it so it could very well be out there!

Thanks guys, but I went to the store today and I think I have a plan.

I got some peach preserves and I will make a filling out of that for the middle of the cake. I got some mango nectar that I will use in place of part of the water in the mix (the rest I will use rum); then I got some dried mango I will cut up and use in the frosting.

Hopefully it will turn out ok; I hate peach and mango so I won't be trying it ;)

So I think that is what I will do; unless someone has a better idea for the things I have.
