How much does it typically cost to hire one & do they actually plan everything?

Well planners will vary greatly in fees and services by area and experience.

Of course full service planners will cost more than say a day of coordinator.

Most of them have packages based on how much they handle for you. From what I understand, they can really be a lifesaver!

So no one knows what a ballpark of ranges may be? I'm in NJ if it helps....

It's really hard to judge prices because they can really differ. I plan part-time, but I don't have a set fee (I have a base fee that I won't go below, however). My fee is based upon the date of the wedding, how far I have to travel, and how big it is (how many guests). Some planners charge a percentage of your budget. Full planning can range anywhere from $2000-$10000 and higher, depending on how the planner charges, your location, and their experience level. You can contact some planners in your area and they should be able to give you a basic estimate.
