I haven't followed the recipe exchange thread, but I think it has something to do with mailing recipes.
Could we have a thread where people who are good at cooking, helps those who are not so good (a.k.a. me)? Maybe posting easy and deliciuous recipes. And people like me could become better wives :bblol:
I went grocery shopping and bought a whole chicken, but now I'm not really sure what to do with the sucker!!! LOL
I do have a few recipes I know inside and out so I could post mine if anyone wants?
What do you think of my thread idea?
Will it only help me? If so then don't worry about it.

Ok....you want to bake it. And here I was trying to get my recipes for chicken and dumplings and chicken and rice together for you! But in those you have to boil the thing........after you stick your hand up its butt and remove all the insides!
I dont usually bake a whole chicken....let me see what I can find!

I have done this receipe before. It is easy, and YUMMY! Also, remember you can add or omit any ingredient you want. For instance, if you are concerned with using things like thyme go ahead and omit it for parsley or something you are more comfortable with. Tell me what you think...also this receipe is for a large party so you would cut it down for two people.

1 (5 to 6-pound) roasting chicken
Kosher salt (you can use regular salt)
Freshly ground black pepper
1 large bunch fresh thyme
4 lemons
3 heads garlic, cut in 1/2 crosswise
2 tablespoons butter, melted
1/2 pound sliced bacon
1 cup white wine
1/2 cup chicken stock

Preheat the oven to 425 degrees F.

Remove the chicken giblets. Rinse the chicken inside and out. Remove any excess fat and leftover pinfeathers and pat the outside dry. Place the chicken in a large roasting pan. Liberally salt and pepper the inside of the chicken. Stuff the cavity with the thyme, reserving enough thyme to garnish the chicken dish, 1 lemon, halved, and 2 halves of the garlic. Brush the outside of the chicken with the butter and sprinkle again with salt and pepper. Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken. Cut 2 of the lemons in quarters and scatter the quarters and remaining garlic around the chicken. Lay the bacon slices over the chicken to cover.
Roast the chicken for 1 hour. Remove the bacon slices from the top of the chicken and set aside. Continue roasting the chicken for an additional 1/2 hour, or until the juices run clear when you cut between a leg and thigh. Remove to a platter and cover with aluminum foil while you prepare the gravy.
Remove all but 2 tablespoons of the fat from the bottom of the pan. Add the wine and chicken stock and bring it to a boil. Reduce the heat, and simmer for 5 minutes, or until reduced by half. Slice the chicken on a platter. Garnish the chicken platter with the bacon slices, roasted garlic, reserved thyme and 1 lemon, sliced. Serve with the gravy.

OMG, Amber, I watched the Barefoot Contessa make this the other day. I was going to make it too. It sounded so easy and she was just going on and on about the flavor. I was totally believing every word she said.

Shawna, I like the idea of posting the recipes on here. I am not the best cook either. So I wouldn't do very well in the recipes exchange cause I have nother to give out! LOL. I am slowly learning how to do simple things. I luck out though because Steve is an awesome cook. I think that's part of the requirements to be a firefighter in his department. All of the guys there can cook!

If you're interested, I thought I would share my quick and easy recipe for making cinnamon rolls. They say the fastest way to a man's heart is to make him homemade cinnamon rolls. lol I used to make them for bake sales and they went like hotcakes.

Thaw out 2 loaves of frozen bread dough.
Roll it out on a floured surface to about 1/2 inch thickness.
Spread with about a cup of soft butter.
Mix about 2 cups of sugar with 3 tablespoons of cinnamon.
Sprinkle that mixture all over your butter. (You could also add nuts and raisins but that's optional.)http://i61.photobucket.com/albums/h52/Karen602/sprinkle.jpg

Cover them and put them in a warm place and let them double in size. It takes about an 1 to 1 1/2 hours.

In the meantime, in a medium bowl, mix 4 cups of powdered sugar, 2/3 cup of melted butter, 2 teaspoons vanilla. Then add 6 tablespoons of hot water one at a time until the glaze reaches a good spreading consistency.
Then spread over your slightly cooled rolls.That's it. Good luck!

Here is my favorite recipe, because it is soooo easy:

Chicken Parmesan
Ingredients:
- Boneless Skinless Chicken Breasts (4)
- 2 cups dry bread crumbs (I always get the Italian seasoned one)
ts (about 1 - 1 1/2 pounds total)
- Extra virgin olive oil or cooking oil
- unsalted butter
- 2 cups tomato sauce (pasta sauce)4 tablespoons extra-virgin olive oil, or cooking oil of your choice
- 1/2 pound mozarella cheese (grated)
- salt and pepper

1. Preheat oven to 400 degrees F
2. spread bread crumbs on a flat plate
3. Set the tomato sauce on low heat to warm
4. Coat chicken with bread crumbs (thoroughly)
5. On med/high heat, melt butter and olive oil. Sautee breaded cutlets until they are deep golden brown on both sides. Remove to paper towel to soak up oil.
6. Plcae 1/2 cup of the warm tomato sauce in bottom of a baking dish (make sure dish is large enough to hold chicken in one layer). Add breaded chicken to dish, add the remaining sauce on top of the chicken. Add mozzarella on top.
7. Cook the chicken parmesan in oven for 10 mintues (if cheese not melted, but broiler on for a few minutes).

I LOVE chicken parmesan, but I always thought it would be too hard to make. But this sounds very easy, I will definitely be making this recipe soon. Thanks, Shawna!

If you haven't tried it yet, I live off of www.recipezaar.com (http://www.recipezaar.com) You have different options for searching, so I can search for meals that are lactose free, less than five ingredients, take less than 1/2 to make and main ingredient is chicken, or so on and so forth.

As for the whole chicken, we used to have whole chickens/cornish hens instead of turkeys for Thanksgiving when it was just the three of us. We just pulled the **** out of their butts (which makes some REALLY good gravy), melted butter and rubbed it all over them, sprinkle some salt and pepper and whatever else you'd like and then bake the recommended amount of time at the recommended temp (they tend to be on the bird's wrapper). If you're worried about it drying out, they sell oven bags that keep the meat so juicy that it just falls off the bone! Baste regularly with melted butter if you don't have a bag, that will help keep it from drying out. We did this with Italian dressing one time too...that was EXCELLENT! Yum yum!

Boy, that's making my awful McD's dinner head straight for my toes!

Oh! And if you want to cheat a little, don't bother pealing potatoes if you make mashed potatoes from scratch. The skin is good for you and as long as you don't have too much of a picky eater to feed, you really can't taste it. I especially love red skinned mashed potatoes that way!

Thanks, Kelli, I had never heard of that website. Good info!! I don't leave the skins on the russets, but I also leave the skins on the red potatoes, they are delicious. I actually prefer it that way.

I love this thread! I need more recipes. I have a few I could share, I make a pretty yummy Key Lime Pie ...

- I use a Nilla Wafer Pie Crust

- 1 16oz can Sweetened Condensed Milk
- 1 teaspoon vanilla extract
- 2 egg yolks (whites are not used)
- 1/2 cup lime juice (I use 'Nellie & Joe's Key West Lime Juice)

With an electric mixer, blend eggs, Milk, vanilla and lime juice until smooth like pudding. Then poor into pie crust and back at 350 degrees for 10-12 mins.

Cool and serve with whip cream *Yummy Low sodium too! The Nilla wafer crust and the vanilla take away the tartness of most Key Lime pie.

I made some Beef (well turkey) Stroganoff the other day that was really good.

- 1 lb ground turkey
- 1 can beef gravy (12 oz I think)
- 1/2 cup cooked mushrooms
- 1/2 cup sour cream
- 1 tablespoon dry ranch dressing mix (optional)
- Salt/pepper to taste
- 1 teaspoon dried dill
- 1 tablespoon olive oil
- 1 clove garlic (chopped and sauteed)
- 1/2 small onion (chopped and sauteed)

Saute garlic and onion in olive oil then add the mushrooms and brown the turkey. Drain and return to pan (I use a big deep skillet) add gravy, sour cream and remaining ingredients. Serve over warm egg noodles :drool: I will usually make green beans and garlic bread to go with this.

Ok.... I'm not really a good cook or anything. But i thought i would share my favourite thing.

mix equal parts of your favourite fruit yogart with Quakers Original Harvast Crunch Cereal. Then add in diced fruit. I use strawberry bannana yogart and then chopped strawberries, raspberries, and bannanas.
Mix them all together with your spoon and enjoy! It's great cause its sweet, and a little tart. With some nice crunch! I find it really filling and satisfying. I plan to take it for lunch when i start work.

I just bought the best cookbook "Rachel Ray's Express Checkout". It's so amazing. I'll read through it and post some good ones. She even gives you a grocery list of things to buy every 2 weeks (or month if your a small family), and what to buy on a weekly,bi-weekly basis. I love it, it's so shawna-proof.

I love to cook......and I didnt always feel this way. What it sounds like would help you is to make a weekly menu, and do your grocery shopping accordingly. That way you know what to set out every morning and you know exactly what youre cooking that night.
Im more laid back in that aspect. We really dont have a set menu. I know what my family like and thats what I cook unless I get a special request (in advance). I usually make sure I have stuff for "quickie meals" too on those evening things are a little too hectic and I cant cook an entire meal. I also try to alternate between the beef, chicken and pork.

I hate to cook, mostly because I am not good at it. I do like it when I make something that turns out well. I just feel like we make the same things over and over again. So I want to try new things, but I am sort of picky and then we are trying to eat healthier (mostly lower sodium), so that makes it harder.

I think I am going to make grilled shrimp alfredo tonight.

Here's another recipe for me to add.... very easy:

Ingredients
- 1 package fresh or frozen tortellini
- 1 and 1/2 cups of milk
- 1/2 cup Herb and Garlic cream cheese spread
- 6 TBSP Parmesean grated cheese
- Grated peel from one lemon
- 4 cups baby spinach
- 1/2 cup quartered cherry tomatoes

1. Cook tortellini as directed on package
2. Place milk, and cream cheese in a skillet.
3. Cook on med. heat until cheese completely melted and mixture is well blended, stir occassionally.
4. Stir in 4 TBSP parmesan cheese and the lemon peel.
5. Add spinach, mix well.
6. Drain the pasta, and add it to the spinach mix, coat well.
7. Sprinkle with the tomatoes and 2 TBSP of parmesan cheese.

I'm making this with a caeser salad and garlic bread.

I think I had posted this before, but something I make that is VERY simple an NOBODY ever believes how I make it is Shrimp Fetticini (sp?) Alfredo. I can make it the hard way, but the way I make it most of the time is to buy a box of the Tuna Helper Fetticini Alfredo and instead of using tuna, I add salad shrimp. You would never in a million years think its Tuna Helper. I usually serve this with a salad and garlic cheese toast.
I have yet to serve this too anybody, that they didnt just love it!

WOW! That's awsome! I can hardly cook a simple chicken breast!
I am really hoping i figure out how to cook after the wedding. Maybe i will be more inspired having all the new toys too! We'll see. But i will definatly be coming back here for some ideas and receipes.

I got this emailed to me and thought it was cool! I'd like to try it but the DH doesn't eat eggs! lol

"ZIPLOC OMELETS"
Have you ever heard of this? This works great! Good for when all your family
is together and no one has to wait for their special omelet.

Have guests write their name on a quart-size Ziploc freezer bag with
permanent marker. Crack 2 eggs (large or extra-large) into the bag (not more
than 2) shake to combine them. Put out a variety of ingredients such as:
cheeses, onion, green pepper, tomato, hash browns, salsa, etc.

Each guest adds prepared ingredients of choice to their bag and shake. Make
sure to get the air out of the bag and zip it up. Place the bags into
rolling, boiling water for exactly 13 minutes. You can usually cook 6-8
omelets in a large pot. For more, make another pot of boiling water. Open
the bags and the omelet will roll out easily. Be prepared for everyone to be
amazed. Nice to serve with fresh fruit and coffee cake; everyone gets
involved in the process and a great conversatio! n piece.

Hey that omelet thing sounds like a great idea! But I am the only one that eats eggs in my house ;)

By the way, here is what I made for dinner tonight ...

Cheesy Chicken

- 4 chicken breasts (butterflied and flattened)

- 1/4 cup cheddar cheese

- 1 1/2 cup Gold fish crackers

- 2 eggs

- salt/pepper or garlic seasoning to taste

Preheat your oven to 400, take out your baking sheet and cover with foil (for easy clean up) ... rinse, butterfly and flatten chicken breasts. Whisk eggs in a med size bowl with seasoning. In a zip-lock bag, add crackers and smash then add cheese and shake.

Using tongs or a fork coat chicken in egg mixture then allow excess to drip off. Then toss in cheese/cracker mixture in zip-lock back. Arrange on baking sheet and cover with remaining cheese/cracker mixture.

Bake at 400 degrees for 15-20 mins (depending on thickness of chicken)

It was good, I made broccoli and carrots and creamy garlic herb noodles :drool:

*Tips for those with kids that like to help ... Goldfish crackers come in lots of colors and flavors, let them pick their favs.

Another variation on this, you can use your fav flavor croutons instead of the Goldfish.

I planned to do them this past weekend.....I really did. EVen told several different people about them too. Never actually got around to doing it though.
I was gone Saturday morning and Brian let me sleep in on Sunday and he fixed them bowls of cereal. Well the little ones he did.
I really do plan to try them......just not sure when I will actually get around to it!
