I was wondering on what's the best way to thawing out the top anniversary layer of wedding cake. Should I do it in the fridge or just on the counter and how many days in advance should I get it out of the freezer???

Cake shouldn't take that long to defrost. I am sure that if you set it out on counter the morning before you plan to eat it, it will be fine.

A whole cake will take you about an hour to defrost on the bench. How do I know this with such certainty? My FMIL, a lovely woman who is convinced that I need 'fattening up', is constantly bringing me cakes. Constantly. Bringing. Me. Cakes. I am, therefore, constantly freezing said cakes and eating them at my leisure. I can't bring myself to waste them, so they go in the freezer until I have company, or get invited to bbq's, or I have a bad day at work and need to eat a cake.
Just call me the frozen cake expert :winktongue:.

Defrost it in the fridge for a day and don't unwrap it until it is fully defrosted.

I have defrosted cake both in the fridge and on the counter and both turn out fine. It does take longer in the fridge though.

Good to know, guys. We're planning on whipping ours out soon because we don't want to wait a whole year to eat it. :D
