Hey ladies, I want to make meatloaf for dinner tonight, but I've never made it and my mom doesn't make it often enough to have a recipe she likes. I am always apprehensive about getting recipes online because you just don't know how they are going to turn out. I would love a fairly easy one, although I know most are pretty easy. I was planning on using ground beef and ground turkey b/c am trying to make small healthy changes in my eating habits.
Sooooo......does anybody have any recipes you wouldn't mind sharing? Thanks in advance!

When I worked in a group home, I used to make this recipe all the time. It turns out pretty good!

I generally chose soy sauce, and you can use tomato sauce instead of ketchup if you desire.
Well, I'm no help. lol. However I did use to always shred up zucchini and toss it in there with the meat to add moistness to it. I'm also a big believer in ketchup on top of meatloaf instead of a tomato sauce! :D
I'm sure that somebody will have a good recipe for you, but if not then I always trust in using www.epicurious.com (http://www.epicurious.com). If something is very highly reviewed on there then it's a sure bet that it will be great!

Ooooh, I love meatload and make it from time to time. Warning, it does not look pretty the way that I make it, but it tastes good.
I usually make it from 3 lbs worth of ground beef, just pick up the cheapest they got, and the fat actually makes it taste better and more most. Oh, and I almost never use measures.
For 3 lbs of ground beef, get 3/4s cups of regular oatmeal, not instant kind. 1 pack of sliced mushrooms broken into pieces, some diced onions, some black paper, a bottle of beer (Heiniken is good for this) and then a bunch of your favorite BBQ sauce. Mix all together. Then put in a form, just make sure not to make it too full, or liquid may overflow and dirty your oven. Baste with some bbq sauce on top, and stick in 350 oven until done.
I do not use eggs, once that I did it just didn't look right to me. This is easy to make, tastes good (at least to me), just doesn't look very pretty.

1 pound of VERY LEAN ground beef.
2/3 Cup of Milk
1/2 Cup of Bread or cracker crumbs
1/4 cup of Ketchup
1/2 Cup Onion
1 tsp. salt
1/4 tsp. pepper
1 egg
(I also added a few shakes of garlic powder/salt)
Mix All ingredients. Place in a bread loaf pan.
Bake at 350* for about 1 hour.
*If you make this, let me know if you LOVE it.

This is probably too later, butoh I LOVE mine...I make it all of the time with Turkey, in fact I have never made it without turkey.
2 eggs beaten
3/4 cup milk
2/3 cup bread crumbs
1/4 finely chopped onion-I use more like 1/2 a cup of red onion
2 TB parsley
1 t Salt
some black pepper
Meat
I use some Tobasco too
Mix it all together....bake at 350 for about an hour, then I put it up HIGH for about 10 minutes to crisp it up
1/2 Ketchup
2 TB brown sugar---I don't use this
Some BBQ sauce
mustard
(Make this to your families taste)
Mix together and put on top return to oven until crisp!
SOOOO GOOD!!!

Thanks ladies!! I found a recipe online from epicurious.com (thanks Keely) that got great reviews, but it was kind of dry, so I will try one of these next time. The meat loaf itself was good, so maybe I will try Megans sauce with it. Thanks again!!

I had that happen actually when I made the meatloaf with the leanest beef I could find. Having less than leanest ground beef seemed to help.

I wondered about that since I used 1 lb. of turkey. But the other pound was like 75/25 ground beef (we buy the cheap stuff and it's not lean at all lol). Next time I might add either more ketchup, a little tomato sauce, or make a sauce to go over it.

That's the secret to my meatloaf. And no egg.

lol i will probably try them both, and depending on what i have on hand is the one i will try first. The only problem with Lady Dane's is that I don't drink so I don't have beer on hand!

So pick one up next time you go to the store. :p And let me tell you, if you have a grill, pick up 2 cans of Heinekens, a chicken, and make Beer Butt Chicken later. That dish alone could be enough for me to marry Scott :p

One of the guys on the next food network star made something like that and it looked soooo good!
I think that there are special holders that you can get, but I've always seen people just stick the can right up there. Haha

I never really liked meatloaf as a kid, but there are lots of ways to make it these days. I want to try something, but DH doesn't want to try it :p

The crispy crust on meatloaf is THE BOMB! Beer-butt chicken... sounds DELISH! lol. I'm assuming it's the chicken that rests on the can of beer?!? Isn't there a special holder you need for it?
Essentially, Beer Butt Chicken is a chicken that you make with a can up its behind and standing vertically, with legs and can making like a tripod. You can use a special holder for it, but Scott always just made it on a can of Heiniken. It is incredible. But the secret is to pour off about half of the can of beer, make marinade with that half, and then while grilling, baste it with the marinade. And you absolutely have to use wood chips. Without soaked woodchips giving off smoke, it just didn't taste right.
