Ok ladies.. my DH and I are having a first cook out. Our mother in law was so sweet as to buy us a new grill, PROBLEM.... We have never used one before. Anyone have any suggestions on what to do or wanna share some easy recipes. I know we put the charcoal in like a pyrmid, light the coal and let it go for about a half an our till the coals are hot and gray...and to put foil around the rack...any other suggestions....so I don't burn our house down...:bbredface:

I have posted this here before but I can't say that I have ever done it on a charcoal grill. I won a Jenair oven and $500 of beef with this recipe.

Prize Winning Marinade for Beef
I combined my sister inlaw's marinade recipe with my friend's barbeque cooking method. I then submitted this recipe into to a radio station as part of a contest and I ended up winning the grand prize of a jenair stove! It's so versatile that it works both with cheap cuts of beef and expensive too. I won't cook beef roast any other way. Enjoy!

1/2 cup Worcestershire sauce (http://www.recipezaar.com/library/getentry.zsp?id=176) 1/2 cup lemon juice (http://www.recipezaar.com/library/getentry.zsp?id=55) 1/2 cup soy sauce (http://www.recipezaar.com/library/getentry.zsp?id=473) 4-5 cloves garlic (http://www.recipezaar.com/library/getentry.zsp?id=165), crushed 40 whole peppercorns (http://www.recipezaar.com/library/getentry.zsp?id=337), crushed 1 sirloin tip roast (http://www.recipezaar.com/library/getentry.zsp?id=818) or blade roast or round roast or prime rib roast or london broil beef (http://www.recipezaar.com/library/getentry.zsp?id=818) 1 pint sour cream (http://www.recipezaar.com/library/getentry.zsp?id=147)
Using a food processor- Crush peppercorns until fine.
Add garlic to processor and crush.
Add soy sauce, worchestershire sauce and lemon juice and blend.
Pour mixture into giant zip lock freezer bag and add the meat to be marinated (even the cheapest cuts of beef will taste like prime rib!).
Seal bag.
Refrigerate for 48 hours (turn bag every time you open the fridge door).
Reserve the marinade for later use.
Barbeque the meat as you would normally however, I prefer to cook the meat very VERY slowly using an indirect cooking method- only ONE side of the barbeque is lit and turned down to low.
The meat is placed on the one side of the barbeque which is off, over a pan of water, which sits on the barbeque rocks.
Note: total barbeque time depends on the size of beef roast.
Relax while your dinner cooks.
Put marinade on the stove and bring to a boil.
Add just enough marinade to some sour cream, to make a sauce to drizzle over the cooked meat.
Sit back and enjoy the compliments.

I'm assuming its an outdoor grill? (but your 'burn the house down' comment made me ask) :)
Im going to have to try your marinade Elizabeth, not too many ingredients, nothing too wacky or exotic, you do the prep work way ahead of time - then just relax as the meat cooks - MY kind of recipe! :D

Btw, if you use lighter fluid, or charcoal that had lighter fluid on it, make absolutely sure to burn it completely off. Otherwise your food will taste like lighter fluid and be ruined.

Another suggestion (Spent 14 years as a chef)
Get som wod chips (maple, hickory, etc) Soak them overnight. Once the grill is hot. Drain them and place ontop of the charcoal. Instant smoker.

I was watching the cooking channel and they did something on BBQing :)
All I remember is they said dont brush the meat with BBQ until you are ready to take it out. Some people sit there all day brushing the BBQ sauce on there.
There is a BBQ sauce called country sweet or something like that. They only sell it up north and I make my mom buy me a case every year and send it down here. All my friends love it.

If you like veggies, you'll love bbq veggies. Home Depot sells a grill plate that goes on the grill, to keep on the veggies on and yummm! It comes out great!
