I'm going to do my own Wedding Favours but don't want to make them up too soon and have them go off.
My Sugared Almonds have a Sell-By Date of November 2010. But i don't want them to go yucky in the little nets.
I'm doing something similar to the picture below. (Sorry it's a bit big)
How soon before the Wedding is best to make a start? I don't really want a mad rush on a couple of days before the Wedding.

I had m&ms in mine and made them up the weekend before the wedding. They tasted fine! So my suggestion would be a week before, and enlist your hubby and kids to help! Although you might need to run out for more candy, though! :)

The Kids wont be until the Friday before the Wedding. So i know the Almonds are safe. :winktongue:

It's a Favour for our Guests as a Thank You for coming.
The Five Sugared Almonds inside the netting represent.
Health,
Wealth,
Happiness,
Fertility,
Long Life.

I think they are very pretty!
I can't almonds would go bad. as long as you keep them in a dry place. But a week does sound look a good amount of time before and not too much time for them to go bad.

I was more worried about them reacting to the little nets. They are new and clean but with holes in etc, i was worried about air getting to them for too long. At the moment they are safe in the box they arrived in.
I've made a note on my Calendar on when to do them.
I've got a Brain like a sieve and knowing me i'll forget all about them. :bbeek:
But as i've always said "If It's On The Calendar Then It Is Happening" :winktongue:

you could always make them up and store them in a rubbermaid tote type thing. as long as they are airtight i would imagine they wouldn't go bad. I make hard candy and keep it in an airtight ziploc bag or some type of airtight container and it keeps for over a year. I don't know about nuts, but if you store them in something airtight while you are in the process of making them i would think they would be fine.

I see where you're coming from. And i did think about this. But the Almonds go inside the Glass first and then the netting goes around the outside of the Glass. So to store 50 of these little Babies is going to be a nightmare between now and October. At least at the moment with the Glasses shrink-wrapped in stacks of Ten, storage isn't so much an issue.

I'm in a sort of similar boat. I'm going to make chocolate Fleur de Lis. We're having the wedding/reception at our home, so there's going to be lots of last minute stuff and I want to do as much as I can now. I've been told to wait until Nov to even consider making the chocolates. But then you have to store it too... Let us know what you decide to do!

I think i can hold on until a Week before the Wedding. Unlike you i've not got Chocolate. So i don't have to worry about stuff melting or being eaten before hand.
I've had a bit of a Productive Evening and sorted out my Buttonhole Flowers for the Guests. Putting the pins in and straightening the Bows from transit etc. Plus i've gathered all my Flowers together to make a start on my own Bouquet.
But then i went off the rails a bit to do the "Bouquet" for the competition. Not that i'm ever goona win. (I can't win an arguement lol) But it was a laugh doing it. :D
If you are talking about the Italian sugared almonds then they do not go off that easily as long as the place is not humid, i would suggest to get a box, make them, store them and have a lid. Put it in a Dark safe place.
I made mine as an engagement gift because my european friends cant come to Australia for our wedding. I ended up making them two months before the wedding, stored them in our cabinet so the cats couldn't get to them and they tasted fine.
