I need a sandwich idea. Every month, my family has "Soup and Sandwich Night". One person has it at their house, one persom brings soup, one person brings sandwiches and one person brings dessert. This month, Joe and I have been assigned Sandwiches.

My sister is pregnant, so we're not eating hot dogs, deli or lunch meats - I'm stuck...we've had pulled pork, sloppy joes, tacos etc. Does someone have an idea for me? Nothing too involved, as I have to take the sandwiches to my sister and bil's, but just something different.

Thanks in advance.

Cheddar Cheese and Tomatoe slices with a touch of mirical whip is my fave! If you don't put mayo on them you can make them like a grilled cheese.
Those with carrot and celery sticks are amazing! And meat free!

What about tuna or chicken salads? If you dont want the meats, you can leave them out and just have egg salad. What about Quesadillas (sp?) as you can make them with or with out meat.

Quesdillas - that's a good idea! I'll have to keep that in mind.

My sister will eat meat, just not hot dogs and lunchmeat. If she could eat lunchmeat, I'd just get a sandwich ring from subway and forget about it - there's been too much going on lately for me to worry about what sandwich to make on Sunday....but alas....no sandwich rings for us, until after May 11th.

What about grilled veggies. Zuccini, peppers mushrooms ect... Between flat bread add provalone cheese and Taziki dip on the side. You could add chicken breast to it as well. Its easy if you have an indoor grill. I love them!! Hope this helps!;)

I was gonna suggest chicken salad. I love the kind with grapes and walnuts ... it is quite yummy  Of course I don't know what soup would go with that ;)

I had some chicken salad this past weekend at a baby shower with red grapes in it on croissants. It was pretty good!

Does everyone like tuna?

Buy a tuna steak, one per bagette and poach it until it is cooked through in water seasoned with a few black pepper corns, a bay leaf, and the juice of a lemon.

When that is done through, let it cool then chop it up very fine. To the tuna add one half of a red onion, finely diced, a good handful of Kalamata or Nicose olvice, diced, a few tablespoons of capers, diced. Then fold in a chopped up tomato. Dress that with a little calt, the juice of a lemon, a couple dashes of red wine vinegar, and then enough olive oil that it binds together.

Hollow out some good baguettes, line with romaine lettuce leaves, and then stuff witht he tuna mixture. I haven't had a party yet where these weren't a hit.

It's not good to give a pregnant woman tuna (or any other fish that may contain mercury) so I think chicken salad would be a good idea..

One of my favorite sandwiches is from a local sub shop. It's sauteed onions, bell peppers, and mushrooms. Cheddar and Swiss cheese melted over it, and some mayo. It's REALLY tasty. :bbmrgreen:

Quesadillas it is! Mom is making some kind of black bean soup or something, so it will go well together.

Once in a while, we have a really stupid combination of soup and sandwiches, everyone just makes whatever. It's the getting together part that is important.

Thanks for your suggestions! I wanted to make hot dogs and cheese in crescent rolls (I get a craving for those once in a while), but my sis can't eat them, so I'll have to wait until post-baby to make those for my next sandwich turn....lol.

Ok, I know you decided already, but I wanted to stick in my two cents...

I just LOVE Quiznos' Veggie subs! Tomatoes, Mushrooms, Olives, Onions, and a vinagarette dressing toasted then they put lettuce and guacamole on it! It's just so incredible! I bet it tastes even better with the cheese on it! (Sorry Lacey). Ok, I'm done now...:)
