Hey Ladies, since we are 'exchanges' I thought that is would be neat to do a recipe exchange, if it hasn't been done before.

Any takers??

We had a thread on here not to long ago with recipes on it......and it did have some good ones.

My favorite way to cook porkchops is to put them in a pan, cover them with sliced onions and cream of mushroom soup. Put foil over the pan and slow cook at 325 for about an hour and a half. You will have pork chops so tender you can cut them with a fork!
I have NEVER screwed these up and I have never made them for anybody that didnt absolutely love them. (Its also the 1st dinner I cooked for Brian!)

Mmm. that sounds good! I will have to try that.

My favorite healthy meal I make:

Leftover spaghetti noodles (or you can make new ones)

Season boneless chicken breast to your liking and bake at 400 for 20 minutes. Chop into bite size pieces.

Sautee the noodles in olive oil with some minced garlic and add your own spices to this as well. (I use onion powder, oregeno, pepper, salt...)

Top the noodles with the chicken. Also slice some olives for the top. I love tomatoes on this as well. I marinate the tomatoes in balsamic vinegar.

Made it just last night. It's great.

Ever hear of Peperoni Roast??

Hollow out the center of a pork roast, just big enough to slide a stick of peperoni in. Cook in a slow cooker, w potatoes and carrots for about 5-7 hrs, depending on size of roast.

Slice the roast so that each slice will have a slice of peperoni in it. The flavor of the peperoni will permiate the roast.

It's awsome.

This is an all time favorite in my house,

Breakfast Pizza

1 pkg pilsbury cresent rolls
1-1 ½ lbs sausage, cooked/drained
1 lb cubed (frozen) hashbrowns, thawed
3 eggs (beaten, no milk added)
1-2 cups shredded cheese (I use a mix of cheddar,
mont. jack, and parm.)
Optional: onion, bell peppers, chilies, salt peper
(can be mixed w sausage, or eggs)

Preheat oven to 350
Grease pie dish, and layer w cresent rolls to make
bottom crust, press the sides up to to edges (just like a pie)
Spoon on sausage, then cover w potatoes, then cheese
Slowly pour beaten eggs over top, making sure not to
pour too much in one place.

Bake for about 35-45 minutes.
If sides start to brown, place foil around edges.
If eggs are not completely done, I learned the trick of
‘nuking’ it for a minute at a time to cook the eggs.
This won’t change the taste.

Top with salsa if desired.

This is pretty good:

Pasta with red pepper sauce (very fast and healthy)

1 pound gemelli or penne or other small ridged pasta
1 (16-ounce) jar roasted peppers, drained
extra-virgin olive oil
2 cloves garlic, finely chopped
1 large shallot, finely chopped (a small mild onion will work in a pinch)
1 cup dry white wine or chicken stock
1 (28-ounce) can crushed tomatoes (you can use canned whole tomatoes, just drain a little and stick in the blender or food processor)
A handful chopped flat-leaf parsley
Salt and pepper
Grated Romano or Parm., as an accompaniment

Cook the pasta in boiling salted water.

Grind drained roasted peppers in a food processor.

Heat a large skillet over medium/medium high heat. Add extra virgin olive oil, garlic, and shallots to the pan. Saute garlic and shallots 3 minutes, stir in roasted peppers. Saute pepper paste 2 minutes, stir in wine or chicken stock, reduce liquid for 1 or 2 minutes. Stir in tomatoes and parsley. Simmer to desired consistency. Season sauce with salt and pepper and simmer until ready to serve.

Toss hot pasta with sauce. Pass cheese to sprinkle on top.

It is!!

Chicken Parmesan

Take cooked breaded chicken patties and place on cooked linguine noodles. Heat marinara sauce and drizzle heavily over chicken and noodles. Top with shredded Parmesan or mozzarella cheese. I will serve this with a salad and garlic cheese toast.

I know that these sound really gross but they are SUPER yummy, low in fat, and pretty quick. Plus it ialmost grill season. I have a million recipes for turkey burgers! Sean could live on these:

Turkey burgers with apples and cranberries:

1 1/3 pounds (the average weight of one package from meat case) ground turkey breast
1 small McIntosh apple, finely chopped
1 small white onion, chopped
1 rib celery from heart of the stalk, finely chopped
1 rounded teaspoon poultry seasoning
Salt and pepper
Vegetable oil, for drizzling
4 large burger buns
Whole berry cranberry sauce (I am picky and have to make my own but you can buy good stuff in a jar too)
Mayo
Bibb lettuce, cleaned

Combine turkey, apple, onion, celery, poultry seasoning, salt, and pepper in a bowl and form into 4 large patties. Preheat grill (or skillet) to medium high heat. Drizzle skillet or brush grill with vegetable oil and cook patties 5 to 6 minutes on each side. Toast buns. Serve with cranberry sauce, mayo (I never use) and lettuce.

I told you, we love a turkey burger around here. (Way less fat). These ones are another favortie. They have a Carribbean spin to them.

1 1/3 pound ground turkey breast, the average weight of 1 package
1 garlic clove, minced
2 scallions, thinly sliced
1 serrano or jalapeno pepper, seeded and minced
1-inch ginger root, grated or a pinch or dried ginger
2 teaspoons fresh thyme leaves or a very small pinch of dried
1 teaspoon allspice, eyeball the amount
1/2 teaspoon nutmeg
1 teaspoon coarse black pepper
Coarse salt
Extra-virgin olive oil or vegetable oil, for drizzling
1 ripe lime, juiced
4 bib or green leaf lettuce leaves
4 buns

Papaya Salsa:
1 large, ripe papaya, seeded, peeled and diced (I use the DelMonte jarred papaya that they sell in the fridge of the fruit section, just make sure to rinse off the syrup)
1/2 red bell pepper, seeded and diced
1/4 red onion, finely chopped
1 serrano or jalapeno pepper, seeded and finely chopped
2 tablespoons fresh cilantro leaves, finely chopped
1 navel orange, juiced
Coarse salt

Preheatgrill to medium high heat. Combine the turkey, garlic, scallions, ginger, thyme, allspice, nutmeg, salt and pepper in a medium bowl. Form mixture into 4 large patties no more than 1-inch thick. Drizzle the patties with a touch of oil. Place patties in a hot grill and cook 6 minutes on each side. Squeeze the juice of 1 ripe lime over the patties before removing them from the heat. Place the cooked patties on bun bottoms and top with lettuce leaves.
Combine the papaya, red bell pepper, red onion, serrano or jalapeno, cilantro and orange juice in a bowl. Season salsa with salt, to your taste. Pile salsa on top of the lettuce and add bun tops to the burgers.
