Lets see ... Last night I made this Sicilian Casserole dish (http://busycooks.about.com/od/groundbeefrecipes/r/siciliansupper.htm) I found online. I tweeked it some; I used prepared jar pasta sauce instead of the tomato paste and tomato sauce. And I used an Italian blend shredded cheese instead of just the Parmesan, and didn't use the peppers. DH and I both thought it was good so I will make it again.

Tonight we had my chicken and rice casserole (recipe is in the OW Recipe eBook); it was good too :D

Tomorrow, not sure yet; I assume something with ground beef.

I had Chick-Fil-A for the first time in my life. I had a chicken sandwich. It was okay. I'm not a big cook especially not on nights I work (at 8:30) so tonight, food court it was!

Jon had left-over teriyaki chicken stir-fry. I had garlic humus with wheat-thin veggi chips and a Tropical fruit shake. Orange juice mixed with frozen mango, peaches, pineapple, melon and kiwi. YUMMY!

We had an interesting dinner tonight.

Ben bought this coupon book for $20 the other day. We wanted to go out to eat tonight, so we decided to pick a place with a coupon. We chose a place in our neighborhood that we had never been to before. We find it and it turns out it's this bar in a bowling alley. We ordered queso dip as an appetizer, and when it arrived it was nachos with the runniest queso I've ever seen. It was like dipping the chips in milk. It also had this film on the top of it that would catch on the chips occasionally. For our entrees, he got a chicken sandwich and I got chicken tenders. They were both okay (and one of them was free because of the coupon), but I'm fairly certain we are never going back there again.

I've been having the same thing for dinner every night for the past week or so and I LOVE IT!! I call it the healthy-and-doesn't-contain-anything-I'm-allergic-to wrap:

Soft tortilla shell
Baby spinach leaves
Diced tomatoes
Shredded mozzarella cheese

That's it! And it's YUMMY!!

FH makes me some DIVINE homemade chili to take to work for lunch too :D

I'm proud I've actually been cooking all this week!
Mon- Fried deer steak, steamed broccoli, mac & cheese & field peas.
Tues- Baked chicken, mashed potatoes, & carrots w/brown sugar
Wed- Mrs. Pauls fish fillets:), left over broccoli & peas, & twice baked potatoes with redpepper, garlic, salt & pepper.
Yummy!

Awe, I Cant Really Add Anything, Seeing How Fh Is 90 Miles Away, But I Will Know Soon Enough What It Feels Like To Cook A Meal On A Week Night. Ha!

I made our first meal at our new condo- I never ever cooked before in my life. I made mozzarella parmesan chicken, spaghetti, and bruschetti... and my FH spent the night in the bathroom LOL.

man ya'll are making me hungry... I dont know what we'll be having for dinner tonigth b/c we'll be at FH house & he's all about quick an simple. I'm like it takes 30 minutes to make hamburger helper....so if everything was thawed and canned it wouldnt take much longer to make a "more complete" meal? But he still thinks it takes longer::rolls eyes:::")

I'm going to make some sort of soup tonight. (aka we're on a budget :bblol:)

Probably brown rice, portobello mushroom, and rainbow chard with aromatics, herbs, & veggie broth. That reminds me, I need to make a loaf of whole wheat bread this afternoon to go with it!

I'm not sure what we are having tonight b/c DH is still not home from work. He's training and I have no idea when he will be home-he is usually home by 4. Last night we had a homestyle bake with mashed potatos, gravy, chicken and biscuits. The night before it was pizza from Papa John's b/c I was not feeling the whole cooking thing! Monday night we had yummy hamburgers on the grill, salad and fries with the inlaws. Sunday night we tried a new recipe and it was yum-my! Italian Chicken Dijon (http://www.cdkitchen.com/recipes/recs/284/Breaded_Chicken_Dijon3931.shtml), with peas and corn and mashed potatos. It was SO good!!

I always have to leave some "calorie room" if I know that I'll be making a new loaf. It takes about ten minutes for the warm bread to get the best of me and I just have to have a slice. It doesn't matter if I'm hungry or not!

We had hash browns and eggs last night. :purplex: For once, I wanted to eat something healthy, but DF really wanted breakfast for dinner, lol. Tonight I think we're going to my parent's house though, so hopefully my Mom will cook something healthier.

Ooh, I am with you there - I used to make bread much more often than I do now...I stopped because, well, I would eat it!

We are doing spaghetti and meatballs for dinner tonight. (And yes, I will make some bread too!) FH asked for spaghetti just because he wants to try a new merlot he found and thinks it would be a "good pairing". :bbrolleyes:

OK, I think we are having nacho cheese and salsa burgers tonight :happy:Well the nacho burgers were a hit! What I did was mix a little salsa and a little garlic pepper in with the ground beef before shaping into patties. Then cooked them on the George Foreman grill. Topped them with a little velveeta/salsa 'dip' and served them on warm/toasty buns. I put a little sour cream on mine too *yum*

Ohhhhhhhhhhhhh I am salivating!!!! I asked (or rather demanded) DH to get the propane tank refilled this weekend. The snow has finally melted away from it, so it's time to BBQ!!!!!

2/3 cup of milk
1/4 cup of fresh shredded parmesan cheese
1 tsp garlic power
1/4 stick butter
grease baking sheet preheat oven to 400 Drop biscuits on sheet. Melt butter in microwave while they are baking for 10 minutes. Brush biscuits with butter and sprinkle with dried parsley.

I put the cheese and garlic powder in with the Bisquick. Usually I'll put the garlic power in the milk to make sure it gets mixed in well throughout the entire mix.

I had leftover brown rice, mushroom, & rainbow chard soup w/ a chipotle tofu remoulade & corn topping. I also had a bunch of roasted cauliflower and a piece of whole wheat toast. I was so full afterwards!

My parents just got a new barbecue, so we got their old one, so last night we had a couple friends over and bbqed hamburgers and chicken breast, rice, broccoli and homemade bread. Delicious!

We cooked up a storm this weekend! We had friends over Saturday night and had a Middle Eastern feast! I made parmesan flatbread to dip in hummus, baked falafel (http://en.wikipedia.org/wiki/Falafel) with cucumber dill sauce, beef kofta (http://en.wikipedia.org/wiki/Kofta), and tabouli (http://en.wikipedia.org/wiki/Tabbouleh)...sooo good!

Saturday we had leftovers of that Sicilian pasta stuff I had made earlier in th week (I had some in the freezer); Sunday were out running errands and such and just got some pizza.

Last night we tried another new recipe-Salsa Cornbread Bake. It was pretty good, and super easy. You just follow the directions on the box to make the cornbread, including baking instructions. While it's baking brown a pound of ground beef, add 1 cup of chunky salsa (or whatever you have), simmer for 7-8 minutes (i also added some frozen corn to have a few veggies, plus the recipe is very similar to something my mom makes called Beef Tamale Squares, and it has corn so I figured it would taste okay) then pour over cooked cornbread. Sprinkle with a cup of shredded cheese then put back in the oven until cheese is melted.

We might have leftovers tonight, or chicken tortellini (sp?). DH is working in the yard with his mom and I'm doing some spring cleaning so who knows what we are going to do for dinner!

I plan on eating a baked potato w/ cashew butter, olive oil, & hemp nuts. I need to put the potato in the oven if I plan to eat anytime soon! I'll also probably make a saute of fresh corn, sugar snap peas, green onion, and garlic with some raw tomatoes stirred in at the end.

After I clean up the kitchen, that is...:bbmad:

I made some yummy fish tonight (and I don't normally like fish)! I made halibut - melted a little butter and poured over it, put salt & pepper on it, and sprinkled crunched up jalepeno pretzels over it...then baked for 20 minutes. YUM!

Served it with broccoli cheddar rice.

Delish!

Went to a Japanese restaurant tonight (promise, i usually don't eat out so much, lol!!).. I got a bento box. :D With some tempera, salmon, california rolls, rice, miso soup.. Its like little samples of everything. Yummy stuff. Steve got his katsu bowl like he normally does, lol.

I was sad though, they used imitation crab meat in the california rolls... =P Yuck! Those make me feel pukey.. Everything else was yummy though!! Next time i think i'm going to get some veggie tempura.. =3

I'm not having the greatest day (not feeling sick like Brandi, just cr@ppy circumstances) so I'm hoping to do something slightly time consuming to make for dinner. Chad's working and if I don't spend some time cooking tonight then I'll just sit here and pout. I found a recipe for Lemon Gnocchi w/ Spinach and Peas I might take a stab at. I've never made gnocchi. It should be simple enough. If the recipe is good, I'll post it!

It should be simple enough. If the recipe is good, I'll post it!

Of coarse I didn't end up following the recipe, but I made the gnocchi from scratch and boiled it. I don't think that I added quite enough flour because it didn't have as much "bite" as I would have liked it to have. It was still good though. I tossed the gnocchi in a low fat bechamel sauce that I added peas, spinach, nutritional yeast, seasonings, and lemon to. I wish I would have had some basil.

I also roasted some carrots with olive oil and tossed some brown sugar, cumin, & cinnamon on them towards the end.

I'm excited to warm up Chad's dinner tonight!

Sometimes I get tired of cooking; or maybe it is just that I get tired of trying to figure out what to make so we don't eat the same things all the time ... and we are picky too which doesn't help :p

Have you ever tried any recipes from Top Secret Recipes books or website? You can find recipes from some of you favorite restaurants so you're guaranteed to like it! You have to buy some of the recipes online, but some of them are free. I get weekly emails about the new free recipe of the week. Every recipe that I've tried does taste exactly like the restaurant version!

I have seen some of those kind of things before, but the recipes were too involved and I am lazy :p

I will have to check out that website and see if I can find anything easy :frogg:

We had pineapple soy chicken on the george foreman with corn, mashed potatoes and some bread. It was yummy! The chicken recipe is from the George Foreman recipe book that came with the grill, but it's not complex, it just has some ingredients that I personally don't always have laying around, like soy sauce. It's also got honey, ginger and garlic, all mixed together (I also add a little bit of the pineapple juice) then spooned over the chicken (or dip chicken in and spoon some over it about half way through) and grilled. Towards the end you put a pineapple ring and continue grilling for like 2 or 3 minutes.

It was good, but I wish I had some veggies that I could've grilled or something. Stephen is picky about his veggies, but he's good about trying new things, so I would like to try some different veggies, like zucchini or something, and hopefully he will like it. We are trying to eat healthier and I am trying to make sure to have at least one veggie at dinner but I get tired of corn, carrots, peas, and green beans.

I think tonight we are just going to eat spaghetti. Last night we went to Buffalo Wild Wings and got the hot wings, mango habanero wings, and my brother got spicy garlic, but he didn't like it. So then he ordered teriyaki.

Tango & Lize: I thought the mango habanero ones taste funny, so Chris eats those. I like the hot ones, but last night they just seemed really really hot! So I only ate a couple of them. We get 10 each. Have you tried the blazin sauce? A few weeks ago when we went, we got a sample. It didn't seem hot until you eat something after it...Chris was crying it was so hilarious!

I normally like really hot ones too, but this weekend, they seemed hotter than the last time I got 'em. My lips were on fire! :bblol: The only ones I've tried there that I don't like are the parmesan garlic ones. Blech!

The mildest we have gone if honey bbq. Usually we get a sandwich too, and so that kinda cuts down on the fireyness because your mouth gets a break! but last night we just got wings.

Funny story about them though-me, my brother, and a bunch of our cousins and their sig. others went to there one night and my brother and one of our cousins got like 10 or 15 or the blazin ones (we just a bunch of wings with a variety of sauces so we were all just sharing). Well they decided to see who could eat more, so they start eating them and after like 2 they are both bright red, sweating, all that good stuff. My brother even asked if they had milk b/c his lips were on fire and milk is supposed to help! Finally they endured enough torture, but like half an hour later my cousin is still red-faced and everything-at one point he even said he need to pee but he was afraid it would burn b/c his whole body was so on fire lol! We finally notice that the blazin wings keep disappearing though, and we find out our other cousin's girlfriend has been eating them like they were nothing! She didn't even realize they were the blazin ones!! She's my hero!

I didn't end up being very hungry so I didn't really cook. I had made and frozen some chickpea cutlets a few weeks back so I just baked some of those. The cutlets are a mixture of chickpeas, wheat gluten, seasonings, breadcrumbs, and soy sauce. You knead it together, roll it out, and cut it into cutlet like shapes. Then you brush them with olive oil and bake them. They turn out kinda like chicken patties. I usually make a gravy to go with them, but it was a fancy ketchup topping tonight! :happy: I was actually craving ketchup so it hit the spot. I didn't even make any veggies tonight. I feel guilty!

Yep, even though hubby's a chef he rarely cooks at home. I do love cooking, but I always make the 4 person portions so that we can have leftovers for lunches and dinners so I don't have to cook 7 days a week.

Well the nacho burgers were a hit! What I did was mix a little salsa and a little garlic pepper in with the ground beef before shaping into patties. Then cooked them on the George Foreman grill. Topped them with a little velveeta/salsa 'dip' and served them on warm/toasty buns. I put a little sour cream on mine too *yum*

i'm stealing this recipe tonight! Timmy loves the george foreman grill so he'll be cooking for ME!

Chase (TangoWedding) actually turned me onto these. She knows I try to eat healthy! It's actually a nut or seed from an industrial hemp plant related to the infamous hemp (weed!) plant. The thing is that the recreational use of that plant gives it a bad name (or good depending on who you ask ;) lol), but it is an amazing crop. The nuts can be eaten, the stalk can be used to produce clothing, paper, etc, it's actually good for the soil it's grown in, it grows easily w/o pesticides, and I'm sure there are other great things about it too. It's much much better than cotton and I believe that the Declaration of Independence was written on hemp paper. It used to be widely grown in the U.S.

The nut is very high in protein, omega 6, omega 3, phosphorus, magnesium, zinc, and iron. It can be used on anything really. Chase puts it on yogurt and I tend to put it on salads, soups, tofu, steamed veggies, etc.

Above all...it's yummy! :D It just has a mild kinda nutty flavor.

Last night we had chicken breasts in a homemade marinade (soy sauce, worchester sauce, lemon juice, veggie oil, and an 'Asian Marinade' which is probably just a plain ol' oyster sauce or similar) and . . . .mac-n-cheeze. I admit it, I'm lazy, but mac-n-cheeze is easy to cook and Fiance will eat it, and it was kind of late, after sitting around for almost three hours writing the offer on the house.

Tonight I'm going to lobby for dill-crusted salmon (we're going grocery shopping so I can get some fresh, the dill part is my own recipe) and garlic-chicken rice. To make the rice, you boil it in chicken broth instead of water, and add garlic powder. Instant interest! I find plain white rice really boring.

I will probably have some of those microwave-steamed veggies, but I know Fiance will stick with the fish and the rice, 'cause he's not a veggie kind of guy.

Tomorrow maybe grilled pork chops and long grain wild rice. And I think friday we'll have some steak, not the expensive stuff, but some kind of grilled steak -- it's been a while. We don't have anywhere to grill outside yet, but we *do* have an indoor electric grill, which works just fine.

The vegan sausage turned out really good. It wasn't super greasy like pork sausage, but tasted kinda like a leaner type of turkey sausage. I'll probably eat some leftover sausage w/ the mashed potatoes & chickpea gravy that I never got around to making last night and some roasted asparagus & carrots.

FH is working late tonight, so I'll probably just eat something quick, like a hot dog.

I wanted to subsitute a baked potato instead of fries, and she said they couldn't do it, so when I said I thought that was a stupid rule b/c fries are potatos so what was the difference, she continously said don't get mad at the messenger, and actually called me high maintenance!! She said it in a joking manner, but she doesn't know me well enough to joke like that! After she checked to see if I could sub anything (which I couldn't-she said "You are getting fish and chips, you have to get the chips", to which I said fine, can he get a baked potato since he is getting a burger) she continued to tell me not to get mad and called me snotty! I was LIVID!! Who does that! Maybe if I know the customer well or something, but definitely not when we had never met and I was already an unsatisfied customer. Okay, sorry, I didn't mean for that to turn into a vent like that!

I have no idea what we are having for dinner. Leftovers maybe, maybe some sort of chicken.

Holy ****! I went to a resturaunt on time with some work friends and it was a bacholor night there (the t.v. show) and when we were trying to order i said that I wanted a sanwich to take home for Doug, she told me they don't do that. So I asked the other waiter (young kid) and he said no problem. Well once she saw that he accepted that order she was yelling at him in front of us and when we started to say something to her she cut us off! We were waiting for the manager so we could complain about her, she comes walking upstairs and sees us, and had the GUTS to ask us why we were going to say something about her!

And you can't forget the "secret" ingredient, a square of semi-sweet baker's chocolate. A lot of people look at me funny when I tell them that, but it's an old family tradition passed down by my Italian foster Uncle and it is SO GOOD! I hear Rachel Reigh or Ray or whomever put chocolate in her tomato sauce on her show once, now my friends don't think I'm so nuts!

I get my food inspiration from all different people, but I admit, one of them is Alton Brown!

Last night we had chicken satay with peanut sauce and saffron rice. All the websites told me that I couldn't do *real* saffron rice with Minute rice but I (having known beforehand how to cook with saffron) soaked the saffron in the rice water for about an hour beforehand. I could have used half as much saffron, oh well. It turned out a BRIGHT yellow! But it had the subtle saffron taste and scent, and that's what counted.

I created my own recipe for chicken satay based on what the typical Indian recipe was, and it was good, both of us liked it. It was also really easy to prepare! The chicken marinade was simple, just some lemon juice, vegetable oil and soy sauce, and the peanut sauce was even easier! We have some natural peanut butter here at home and I took two scoops of that, thinned it out with soy sauce and teriyaki sauce and milk, then added ground mustard, powdered ginger, garlic powder and chili powder to taste. Its' fabulous, and just as good as any restaurant.

Together with the saffron rice it rocked! I was very pleased, since I've never tried to make chicken satay before.

Tonight it's Fiance's day off, and we went to a small independent place that has the BEST roast beef sandwiches in town, probably the best in the state.

Tomorrow . . . . yikes, I haven't thought that far ahead yet. Maybe pork chops.

I get my food inspiration from all different people, but I admit, one of them is Alton Brown!

Last night we had chicken satay with peanut sauce and saffron rice. All the websites told me that I couldn't do *real* saffron rice with Minute rice but I (having known beforehand how to cook with saffron) soaked the saffron in the rice water for about an hour beforehand. I could have used half as much saffron, oh well. It turned out a BRIGHT yellow! But it had the subtle saffron taste and scent, and that's what counted.

I created my own recipe for chicken satay based on what the typical Indian recipe was, and it was good, both of us liked it. It was also really easy to prepare! The chicken marinade was simple, just some lemon juice, vegetable oil and soy sauce, and the peanut sauce was even easier! We have some natural peanut butter here at home and I took two scoops of that, thinned it out with soy sauce and teriyaki sauce and milk, then added ground mustard, powdered ginger, garlic powder and chili powder to taste. Its' fabulous, and just as good as any restaurant.

Together with the saffron rice it rocked! I was very pleased, since I've never tried to make chicken satay before.

Tonight it's Fiance's day off, and we went to a small independent place that has the BEST roast beef sandwiches in town, probably the best in the state.

Tomorrow . . . . yikes, I haven't thought that far ahead yet. Maybe pork chops.

I have to brag on my FH a little bit! :) When I got home from assisting a photographer at a wedding yesterday I was dead tired and didn't even want to think about what to make for dinner...

...but while I was working FH tidied up the back yard, got our patio table all cleaned up, refilled the propane on the bbq and went to the store for King Crab legs, corn on the cob and a bottle of Sauvingnon Blanc! When I got home all I had to do was make the cheesy garlic biscuits, melt some butter and sit outside with my glass of wine while he steamed the crab on the gas burner on the bbq!! I didn't even have a mess to clean up afterwards. :)

We made pizza burgers last night. They sound totally horrible when we explain them, but they've been in our family for years and years and we all love them. My Grandma used to make them all the time (it's a german recipe), then she handed them down to me.

You basically brown some hamburger with 1/2 to 1 onion, then add tomato soup, cheddar cheese, mayonnaise and sliced green olives to it. Put the sauce on hamburger buns and bake them. It sounds terrible, but they're SOOOO good! And it helps if you refrigerate the sauce overnight and let the flavors combine. Then they're also easier to put on the buns.

Tonight's menu consists of sloppy joes made with ground turkey, curly fries, and V8 juice. I had to work late today.

Tomorrow I'll be using the crock pot and braising a whole Cornish game hen with potatos and veggies. That way I can be late coming home from work and not lose cooking time. :)

Salisbury Steak dinner was a hit last night, so I thought I'd share what I did ... Mix a little pepper, onion powder and garlic seasoning in the beef as well as a dash of steak sauce and mushed up croutons; then shape into patties and cook.

Gravy: I used prepared mushroom gravy from a can and added a little garlic seasoning and a 1/2 ounce of red wine - simmer.

Mashed potatoes: Boil potatoes with a dash of turmeric seasoning for color and a hint of added flavor, then mash and season taste.

Green beans: Open can and warm :bblol:

I'll be with my FH and I love to cook so here is a pretty good casserole:

Stuff ya need

Boneless Skinless Chicken Breast (chopped, 2 breasts)
Thyme
Ground Cumin
Cream of Mushroom
1 can Green beens
1 can Sweet Corn
Mrs. Dash Spicy Mix
Breadcrumbs (Garlic flavored is best)
Butter
Your Fave. Bacon
Yellow Curry Powder

Spray butter onto the sides and the bottom of a glass dish
Sprinkle breadcrumbs into the bottom
Place one even layer of chopped chicken onto breadcrumbs.

Warm cream of mushroom soup, add 1/2 cup milk or water.
Add 1/2 tsp. thyme
Add 1/2 tsp. ground cumin
Add a pinch of MrsDash
3 squirts of butter
Add 1 tbs. Curry Powder
Stir.
Add cooked bacon
Add drained green beans
Add drained yellow corn
Add 1 breasts worth of chopped Chicken

Go back to your dish, add 2 squirts butter
Put in one layer of the soup mix
One layer of french fried onions
Breadcrumbs on top of that
Layer of the rest of the chicken
One more layer of the soup
Cover it in French fried onions (You don't have to, I just LOVE em)

Bake at 350 for 35min
Set to broil for 2mins
Let sit about 5-7mins
Enjoy!

It was really good! Now we have plenty of leftovers to get us through the weekend.

Last night I was feeling rebellious so I made pan fried chicken (in butter! Oh, the horror!) and stir-fry rice and veggies. The veggies were easy, I just opened one of those steam-in-a-bag bags, put them into the skillet, put the lid on, and let them steam themselves, then I added soy and teriyaki sauce and the rice, voila, instant stir-fry. And it tasted ok! I microwaved the rice first, though, so all I had to do was fold it into the veggies.

Stir-fry or Asian-ish cuisine is the only way I can get Fiance to eat vegetables other than corn.

Tonight it's Clear Out The Freezer night (I don't want to move a ton of frozen food!) and I think we may well have shrimp and pasta with alfredo sauce. That's easy too -- sautee onion and garlic (to taste), then add the shrimp (defrosted, pre-cooked, with their tails cut off), and sautee them in the onion/garlic while you boil the pasta. Open the alfredo sauce (we like Buitoni) and pour over the pasta. Add the shrimp. Voila! Semi-homemade, without fuss and only using one pot and one pan.

I was thinking of spaghetti also but that needs to slow cook for a couple hours and I just don't feel up to babysitting it tonight. Maybe tomorrow.

Tonight it's marinated and baked pork loin, steamed veggies, and baked potatoes. Ok, they're microwaved potatoes, technically, but they taste a lot like baked!

Tomorrow it's spaghetti, also semi-homemade, since I don't want to make a pot of sauce that will feed 35 people! That's my mother's recipe and it's fantastic but HUGE. And we're trying to stop filling up the freezer, at least, until we move.

Monday we'll probably have dill encrusted baked salmon and steamed veggies.

Man. It's so easy to get into a routine and just make the same half-dozen recipes or so all the time. I am going to try to fight this urge, and make new things to try at least once a month. I would make it more, but we can't afford to experiment more than maybe twice a month or so.

I hereby commit to exploring other dinner options on a regular basis!

Speaking of which, we haven't had stew in a long time . . . .

I felt like pasta tonight so I threw some stuff together and it turned out really good. It was pretty much a stroganoff.

I sauteed onions, garlic, portobello mushrooms, and yellow squash in olive oil and seasoned it with salt, pepper, paprika, and dried thyme. Then I deglazed the pan with some red wine. I let it cook down and then I stirred in a slurry of cornstarch and water. After that was dissolved I added some nutritional yeast, soy milk, and just a touch of dijon. I let it cook for a bit and then I threw in some frozen peas and stirred in some soy yogurt to thicken it up a little more. I tossed it with some whole wheat pasta! Good stuff. :grinhappy:

Tonight we are having steamed artichokes - and probably rice. It sounds weird, but artichokes are probably one of my favorite meals!

Last night we had steak (on the grill), sauteed asparagus (Olive oil, garlic, and a little lemon juice) and a spinach/tomato/feta salad with spinach I picked from our garden 5 minutes before dinner. YUM! We also had an incredible Spanish red wine that FH found at the grocery store. :D

Shake'n'Bake Chicken and rice. I know, it's probably one of the most unhealthy meals on the continent but Fiance is really freaking out about the fact that home-buying is about to become a reality instead of pie in the sky, and Shake-n-Bake is one of his comfort foods. Yikes. I have mostly broken him of his bad eating habits but I think he needs this tonight.

I'm also making a loaf of challah bread -- from scratch, by hand. I am not sure why people panic at the thought of making bread without bread machines, it's REALLY super easy and there's only one or two more steps than, say, muffins. And if you're not making a yeast bread, it's just the same as muffins or pancakes. You just adjust the ingredients (or follow the recipe) and cook it for longer.

My mom's mom taught me how to make challah and my mother taught me how to make both yeast and quick breads. I am only realizing now how lucky I am that this skill got passed down in my family, and I'm hoping to have somebody, 10-15 years from now, to pass it down even further. Perhaps the kid as yet unborn (due sometime in October) will be a niece instead of another nephew and maybe she'll be interested in learning heritage cooking from her dear ol' Auntie.

Anyway. Shake-N-Bake and rice, and homemade bread. Tomorrow, heaven only knows. Soft tacos, perhaps.

Whitewater - I can make anything except for yeast bread! I kill the yeast every darned time and I'm not patient with kneading it long enough. I know all of the little tricks too! But that is one thing I will be successful in sooner or later! Don't give up on possibly teaching a nephew. :D Chad's gramma taught him the family secret Thanksgiving dressing recipe!

Okay for you ladies you are scared of yeast bread - try this one!! It is so super easy I would make it every week if we actually ate that much bread.

Cuban Bread
5-6 cups all purpose flour ( I have used unbleached white, and wheat - usually a mix of the two)
2 packages dry yeast (4 1/2 teaspoons)
2 TBSP sugar
1 TBSP salt
2 cups hot water (120F-130F)
poppy or sesame seeds if desiredDo NOT preheat the oven for this one...

In a large mixing bowl stir together 4 cups of flour, sugar, salt and yeast. Pour in hot water (make sure the temp is right - that is what makes or breaks the yeast...) and beat with 100 strong strokes - or about 3 minutes with a mixer. Gradually work in the remaining flour about half a cup at a time until the dough is no longer sticky. (Use your hands if you need to - since there is no butterfat it can get stiff). If you are using a mixer the dough should start to clean off the sides of the bowl.

Sprinkle your work surface with flour and work it in to the dough as you knead - keep a dusting of flour between the dough and the counter. Knead for about 8 minutes, or until the dough feels smooth and elastic. (This is where I love having my kitchen aid - I put the dough hook in and let it knead for me...)

Place the dough in a greased bowl, cover with plastic wrap or a damp towel and place in a warm spot ( I put it on top of the fish tank lights :)) until doubled in bulk. This only takes about 15-20 minutes. Because of the double yeast and the sugar it rises fast!!

Punch down dough and cut into two pieces. Shape each into a round and slash an X with a sharp knife into the top of each loaf. (Sometimes I get lazy and do one long loaf instead of two rounds...or you can freeze one of the rounds to bake later - that works great for two people). Place loaves onto a baking sheet lined with parchment or sprinkled with cornmeal - and place the baking sheet onto the middle shelf of a COLD oven. Place a large pan of hot water on the shelf below and heat the oven to 400F. The bread will do it's second rising while the oven is heating. Bake for about 45 minutes, or until the loaves are deep golden brown. Be careful of hot steam when opening the oven door -

Enjoy!

Since the bread has no shortening it will go stale quickly if kept at room temp - we usually put ours in the fridge and then warm up a slice in the microwave. :)

From start to finish this only take about an hour and half - so it is easy to make for a weeknight dinner!

It's Soft Taco Night tonight! We have to use up the last of the frozen ground beef and the last of the onions, and we have pre-shredded cheese just hanging out in the fridge, so we bought some refried beans, soft tortillas, salsa, and sour cream.

I didn't want to spend the entire evening cooking. So all I'm doing is sauteeing the onions with the beef, and the rest is make your own.

My nutritionist is all about me eating more beans because they're high in fiber (she wants me to get as much fiber as I can stuff into my ol' bod). I am slowly learning to like refried beans. Or really just beans in general! My sister-in-law's mom has this fantastic 5 bean baked beans and bacon dish, but she won't share the recipe!


Whitewater (who has successfully made from scratch split-pea and ham soup twice, so far . . . .the Campbells chunky stuff is almost as good, and cheaper, though . .. .)

Ok, with all this food talk, and this may be a little off topic, but if I hear one more person comment about how I shouldn't eat the way I do because I'm not going to fit into my dress, I'm going to spit! Yes, I have horrible eating habits and love food, but I'm like my father - a human garbage can with a fast metabolism. And quite honestly, yes, I will diet closer to the wedding, but I am far too stressed out with work and school to add a diet to my routine. LAY OFF ALREADY! :irked:

Well, I flaked on dinner last night (we ate chips and salsa, lol), so I'll need to make up for it tonight. I'll probably do my chicken, broccoli and rice casserole. You basically get a casserole dish, layer it with cooked white rice, then a layer of cooked, diced chicken, then a layer of steamed broccoli. Top that with this sauce:

1/2 c. Mayo
1 can Cream of Chicken Soup
1 tsp. Lemon Juice
1/4 tsp. Curry (or to taste)

Then sprinkle A TON of shredded cheddar cheese on it and bake it at 350 for 20-25 minutes. I get so addicted to that dish, it's ridiculous.

Last night I made a soup from a new cookbook that I got. The Houston Public Library has this huge book sale at the convention center every year. We went and got 7 books all for $25! They're not old either...mid 90s to the present. I got a soup cookbook from a monestary. I figure those guys must know their soups!

The soup was called 'Potage Printanier a la Francaise'. Ooh la la. It was cauliflower, peas, spinach, carrots, leeks, tomatoes, basil, & thyme in a homemade veggie stock with a mini bottle of white wine added to it.

Tonight I'm gonna try a new veggie burger recipe made primarily from walnuts & oats and served on an Ezekiel bun. I'll make a side of whatever veggies we have on hand.

I didn't make the veggie burgers yesterday so I made it tonight. The flavor was great, but the texture was off. You browned the patty and then added broth and simmered it. They ended up too moist, IMO. They're yummy, but next time I try them I'll try a different method of cooking.

I steamed some broccoli and topped it with olive oil, hemp nuts, & garlic chips. I made the garlic chips by thinly slicing some garlic and frying them in olive oil. They add lots of flavor. Yum!

Wow, that broccoli thing sounds great! I might have to try it sometime -- if I can find the nuts. Might have to substitute pine nuts for hemp nuts, though.

We had baked salmon and corn for dinner tonight. Nothing fancy, but I'd run out of dill so I couldn't dill-encrust it, which totally changes the taste! I prefer the dill, and so does Fiance, but he'll eat just about anything that doesn't eat him first, so it was ok.

It was nice to have corn for the carb, as opposed to blah and boring rice and/or noodles. Anybody know a decent carb that's not potatoes, rice, or noodles? I'm desperate to try something different as a side.

Salmon w/ no dill? Is that even possible?! Haha ;) For some reason those two flavors are just magical together!

We need to stock up on some different grains. We haven't been eating a very good variety of carbs lately. We used to often eat quinoa, barley, wild rice, couscous, and bulgur as well as the various types of whole wheat pasta and brown rice. There's a world of interesting grains out there that have a wide variety of nutrients in them. They're all at Whole Foods if you have one near you.
