Last night, we had Subway in the middle of the afternoon (busy day!)

I was going to make steaks last night for dinner, but neither of us was hungry, so tonight - steaks, corn on the cob, salads and breadsticks.

i have dubbed today the "Day of Food" it's our last full day of classes here and so we have a luncheon to say farewell to the graduating class, then lunch w/a small class of mine, then dinner after the last class of the day... i'm gonna be SOOO full tonight!

I think I am going to run to the store for some chips and sour cream and we'll have Nachos tonight. I got a craving for them last night that just won't go away. We already have some meat and cheese, so I need to get some sour cream and I think I will get an avocado to make some guacamole. I may get some beans too, I heard a trick the other day, that if you put a can of beans in with your meat it really stretches the meat.

haha I love how my shopping list just went from sour cream and chips to sour cream, chips, beans and avocado.

Okay so I'm back from the store. I ended up buying chicken too haha -- not for tonight but because it was on sale. 2lbs of frozen chicken breasts for $4.99

I'm sooo excited for nachos tonight, yum!

I think I'm making chicken/rice/veggie one pot mix. I have a recipe with the perfect proportions and it's really yummy!

I'm also making spaghetti and meat sauce for our lunches this week. :)

Well I liked the Cajun maple chicken, but the plantains were a litte lack luster; I don't think I will make them again.

HA! So much for a relaxing dinner. Mom decided at the last minute to come out for sure last night... so she came out, we went to pick up some Koi for her pond, and we stopped by JITB with a coupon I had for free mini sirloin burgers - which are freekin amazing :irked:

So I had 2 mini sirloin burgers and some shrimp from Popeyes when we met my sister.

Tonight I'm going out to eat - not sure where yet. Meeting some friends from HS.

Tonight we're having pork baked with A-1 on top of it (simple, but yummy), Uncle Ben's Long Grain and Wild Rice (healthy and yummy) and steamed green beans (because Fiance asked).

Tomorrow I think I'll use up the last lonely pound of hamburger and make Cheddar Cheese Tater Tot hotdish. It's simple, relatively, and Fiance likes it. And it's some positive reinforcement for him quitting smoking!

The only stuff I'll have to buy is cheap. Some frozen corn, tater tots, cheddar cheese condensed soup. Maybe, $6.

I made grilled buffalo chicken sandwhiches. I thought it was a little too hot, but DH said it was good. We had ice cream for dessert to cool the heat ;)

I am having the most random assortment of leftovers ever - a steak enchilada, some tortilla chips and cheese dip, a piece of fried chicken, grits, and fudge pie. I'll probably save the mac and cheese, rice, mole chicken enchilada, and a biscuit for my midnight snack! (oh and did I mention this is all cold and having to be eaten with my fingers because the microwave and silverware have already been moved out?)

Tonight, we had steamed artichokes dipped in a simple sauce made with mayonnaise and honey dijon mustard, and a rice pilaf served on the side. Yummy!

Last night, I made some grilled chicken, and baked potatoes. I put my chicken over a salad, FH ate it seperately.

I made extra chicken for left overs this week....hmm...what to do :)

Chicken and dumplings? Sautee it with some onions and peppers and mushrooms and eat it in a tortilla for fajitas? Chop it up and make chicken salad sandwiches? Mmmmm make chicken parm with it!!!

Holy cr@p girl, I just posted that and look at you!! Chicken parm sounds good, I never made it with leftover chicken though..I'm thinking maybe shredded BBQ chicken?

last night was rough... we moved into our new apt this weekend and have NOTHING b/c all the furniture, cookware, impt stuff is still at FH's apartment (he wont move in fully until July) so we had spagetti w/jarred sauce and a salad

spent a buttload of money on groceries and some cheap cookware @ target tho so i should be able to pull something better together tonight

now i just have to figure out what that will be...

Well, tonight was interesting :)

I had some lasagna (couldn't eat the whole thing, there's probably two more meals left in what I brought home!) and a ceasar salad at my favorite little Italian place.

Fiance had really yummy (I know, 'cause I've been there) teppan-yaki Japanese steakhouse food with his mom. She took him out because she needed him to try to fix her computer (she can't get online). Unfortunately, her computer is still broken.

So I thawed some chicken breasts, but I don't think either of us will eat them tonight. We'll probably have them tomorrow.

We've been having grilled chicken and veggies a lot lately, now that the weather is appropriate for grilling. :)
Tonight we're having company and I've been summoned to make wheat pasta w/ pesto, chicken and sundried tomatoes......very easy to make and very delicious!

Last night we went to Zaxby's and I got hot wings (wimpy ones that is ;)) ... tonight I made a beef enchilada bake (kind of like mexican lasagna) with guac/ranch dip on top *yummy*

We had banana splits for dessert ... I didn't have pineapple in mine though ;)

Tonight we're having roasted pork loin with long grain and wild rice. Fiance will probably finish up the salad, and I'm seriously considering nuking some spinach and having that with some lemon, salt and butter.

Tomorrow we're having friends over and we're barbequing on our Weber kettle, the first barbeque of the year. So excited, I can't wait. We'll crack open a bottle of wine or two, have hot dogs and hamburgers (and maybe some corn on the cob, if there's any good stuff out there), and just generally chill outside in the nice, *finally* warm weather.

Wed. dinner will be somewhere at the Mall of America, probably the food court because it's cheap and I can find healthy alternatives there. It's not just fast food! That's the second day of Wedding Madness this week, and hopefully the last one. I try to keep Wedding All Day days to a minimum, for my own sanity. But it will be good to make sure that both my attendants are on the same page :)

Tonight we grilled some kafta burgers ... it is sort of a Mediterranean burger served in a pita. It is basically ground beef patties with parsley, garlic, onion, salt and pepper.

Ooh, kafta burgers sound good -- and like something that Fiance would eat. I'll have to try those once.

In the meantime, tonight it was a free-for-all dinner. Fiance had hot sausage with salsa on toast, and I had some white rice and some cottage cheese :) I just didn't feel like cooking!

Tomorrow we'll probably have some chicken, and then on Monday we're going to grill some steak and have grilled zucchini and potatoes too. Also brownies.

And then on Tuesday we'll meet for dinner out, it's our date night -- and then go folk dancing.

I bought some scrod and baked it with garlic, lemon, white wine, a little margarine, thyme, parsley, dill and panko breadcrumbs on top. We had the fish with sauteed spinach on the side....it was really good!

We had fish. I put individual fillets in foil, cover them in some white wine, lemon, dill, chives and whatever other herbs I have, then just bake them in the oven. I served them with some sweet potato cakes and salad. Very yummy!

I'm making 'Football watching stuff' at the request of my DH. There is a really important game on tonight, (state vs state, everyone cares about it, even people who usually hate football) so apparently we have to eat accordingly. I've decided that this means steak burgers. I'll also make a sweet potato dip and some brushetta, and a pavlova for dessert, since we're having guests.

Steak burgers and pavlova, could I be any more Australian today?

We had what I call Salsa chicken. It is chicken breasts sauted in garlic, onlion, oregeno and tequila, then topped with cheese. I put a salsa sauce (salsa, taco sause, dijon mustard and brown sugar) on top of the cheese. Sometimes I put a dollop of sour cream on there too. Then I serve it with rice (cooked in chicken broth) and black beans. *yummy*

i have been so out of the cooking scene for a while right now... since before the wedding.. i have cooked but havent been coming up with anything interesting.. the other day i put up a pot of sauce, dh has been eating on that for a couple days... hahaha didnt make anything tonight cuz he and i went our seperate ways so i could finish laundry and he could hang with the guys but tomorow im having a romantic dinner....it will be shrimp and bay scallops with lemon, garlic wine and parsley - over rice or pasta, havent decided. i know i have to add something else... ill figure out a dessert too.

Hmmm last night i made one of my favs and dh too.. dont know what its called, not quite a scampi, - dont know what to call it. haha

So in a food processor i mix herbs - dried herbs not fresh- usually oregano, parsley, bay leaves, etc etc whatever you like, with about 3 pieces of garlic, about a quarter of an onion and i toss shrimp and sea (or bay) scallops in there.. let those rest and get that flavor, then in the food processor again, another quarter onion and another 2 pieces garlic- saute this with the other half of the onion (sliced) in a pan with a bit of olive oil and a bit of butter and a spring of fresh parsley (if you dont have fresh, dried works too) - one the onions get a bit transparent, add about half a lemon and pan sear the scallops - while pan searing add a tiny bit of paprika on the tops of the scallops - once those are starting to cook well ( they toughen up a bit) add some white wine, a little more butter and a bit of lemon - the last minute or so add the shrimp and a little more wine - the sauce thickens up unlike a scampi . I usually add salt and pepper on last so that it gets into the rice too.

i serve over white rice usually with aspargus.. yum..

by the way, sea scallops are expensive but go a LOOONG way- i get 4 scallops and right before they are done cooking, cut them into 3-4 piecees.. they are so large that its still enough for two people to get a nice mix of shrimp and scallops if you only buy 4.. this cuts the cost of this dish WAAAAY down..

we are going to have baked potatos alot this week, the store by me had them on sale for a bag (about 13-15 potatos) for 1.89$ hahaha

Well the plan was to grill this turkey tenderloin thing we got at the store yesterday, but now I am not sure. I knew we were going to have a late dinner, but it is nearly 8:30 and DH is still working on putting in the new garage door. He may not feel like grilling when he gets done. We may just throw in a frozen pizza or go out.

EarlyBird agrees: mind posting your ginger beef and broc recipe?? been looking for a good oneWhat I made tonight was just beef strips and broc in a store bought sauce. It is actually called a stir fry sauce.

But I have made a similar thing with prepared beef gravy, a dash or two of red wine vinegar, ginger powder, garlic, onion, black pepper and an ounce of bourbon/whiskey.

Tonight we had GARLIC CHICKEN WITH PASTA (http://www.cooks.com/rec/doc/0,1939,148190-247192,00.html) It was ok, but not like really good. I felt like it was missing something, sort of blah. Hubby said there wasn't enough sauce and thought it would be better with rice. I am not sure I will make it again though.

Yesterday around 11 a.m. we still hadn't eaten breakfast and didn't want to cook or leave the house so we ordered in. It ended up being both of our breakfasts, my lunch, and my dinner so it was totally worth it. We had general tsao seitan, sweet & sour seitan, veggies, brown rice, soup, and 2 egg rolls. Yum!

Tonight we were both off so we cooked together. :D We sauteed up some rainbow swiss chard w/ onions and garlic, topped it with a puree of tofu and seasonings, and baked it. It tasted similar to quiche, but so much healthier. I was amazed at how good the recipe was since I often don't like tofu - http://blog.fatfreevegan.com/2009/06/savory-swiss-chard-pie.html. We also made some homemade mashed potatoes with a ton of fresh dill that we got from the farmer's market. I can't wait to eat both of the leftovers for lunch tomorrow!

Tonight the plan is this mexican beef and plantain casserole thing. I saw it on TV not too long ago; it is kind of like this - Cuban Style Beef and Plantain Pie (http://www.foodnetwork.com/recipes/emeril-lagasse/pinon-cuban-style-beef-and-plantain-pie-recipe/index.html). But I am going to make a simpler version with basically taco meat and cheese layers with the mashed plantains.

I hope it doesn't suck ;)

Brandi, your recipes always sound so good! They inspire me :)

Tonight, we're having baked salmon with dill and lemon, along with boiled baby red potatoes with drawn garlic butter and a blend of sauteed onions, yellow and green summer squash, and red bell pepper (with some garlic).

This meal is a blend of our Irish heritage with summer veggies that come from our garden. We don't have anything yet (though we will by the end of the month, I suspect!), but I'm growing peppers and green zucchini, and trading some of my green zukes for my seamstress' yellow summer squash. And hopefully soon I'll be getting a green bell pepper plant for free, in addition to the banana and jalapeno peppers I already have. Yay for summer veggies!

Our intentions were to grill steaks and chicken on the grill last night, but we are still working on the house and my parents will be here TOMORROW! So, I ran and got us Popeye's chicekn....which wasn't what I really was hungry for. Oh well.

tonight is the 3rd nite of leftover meatloaf, gravy, n mashed tatos... i made 1 1/4 lb meatloaf sunday nite n it's SOOO good... but since i worked til 7 last night i ate out... hopefully tonight i'll be polishing it off but if not... *shrugs* oh well! it's still yummy!

Last night i made a really good pasta with various veggies of our fav kind- Basically in a light oil, garlic butter sauce.

filled a WHOLE freezer bag after dh and i ate- gave half the bag to my bro and he said believe it or not, it was a pretty good COLD pasta salad haha

tonight i didnt feel well so i bought a ham and cooked it, along with a baked potato.. was sooo easy.

tomorrow for fathers day we will be with my dad and having chick parm, eggplant rollatini and various other appetizers- yum cant wait- i try not to cook all my italian favs here at home cuz of the fattening aspect.. but its nice to eat there and not feel guilty when i am cooking AND eating like at home when i make that stuff hahahahah

We're having semi-homemade spaghetti :) The only thing that's not home-made about it is that I didn't make the sauce myself (or butcher the cow . . .). But I add the spices and I brown the meat and so on, so it's as homemade as somebody who is waiting for her tomatoes to ripen can get!

We had barbequed hot dogs, brats and corn. And now I think I might just go and get myself a slice of left-over wedding cake! We had so much left over that we have a HUGE hunk, aside from our 1st layer, to somehow eat. And we gave away a goodish bit of it to our guests as they left the reception . . . *man* we had a lot of cake. Not that people weren't eating it, 'cause they were, but . . . when the cake serves 133 and you only have 50, you're gonna have cake left.

Hey, I have to get it out of the freezer so I can have our freezer back, right? Cake for dessert tonight.

tonight i'm cookin for ma man man since i'm home w/not much to do... he defrosted these country style boneless pork ribs n they needed to be cooked TODAY so browned em n threw em in a pot filled w/BBQ sauce... right now i have it on the lowest heat setting (as we normally use a crockpot on low for like 8-10 hours...) so I'm hoping this will sort of mimick the slow cooking if i leave it on low til FH gets home n just make sure there's always enough sauce in there...

It's so good! :) It's a soup with milk and cheddar cheese to make it thick, and chicken broth, shredded zucchini, and shredded carrots. And some other ingredients. It's so yummy. It's FMIL's recipe. We have it with crusty bread and it makes it delish!

I made pizza last night - and it turned out pretty good! I made a garlic sauce from scratch for my pizza cuz the red sauce gives me heartburn. Mine had garlic sauce, olives, onions, and cheese (didn't have pepperoni or mushrooms or I'da had the perfect pizza), and Matt's was a traditional hawaiian with ham and pineapple.

I just got done finishing off the last of mine for breakfast :)

Both sound good! I make something like that mexican rice thingy and it is good; I usually serve it with flour tortillas.

Okay, so I found a Tortillaria right down the street from my house - YUM!!!!! I loooove fresh tortillas. So I bought them fresh and warm and some chicken (for a total of $5.50) and went home, chopped and cooked the chicken and we had tacos that can compete with the taqueria around the corner! Oh it was so yum! I couldn't stop eating the tortillas :)

Trout. I hope i got all the bones out. o.o;; I put sliced lemon under it, and garlic, with white wine and olive oil on it.. wrapped it in foil, and hopefully its good in 25 mins. lol.... I am boiling baby carrots on the side.. I'll throw butter on 'um when they get soft...

Oh experimenting. o.o;

Tonight I did make DH his stuffed peppers, potatoes and corn, I had manwhich! I love that stuff!
