I had cereal. Jackboots failed to throw any shrimp
on da barbie for me because he thought I was asleep!

I don't think I posted what we had the other night and I don't feel like looking that far back!...we had quinoa patties and stewed cabbage. The quinoa patties were super yummy and Paisley loved them. We have such a hard time finding foods for her to eat because she doesn't like getting her hands messy and still isn't so good with utensils. Last night Chad's mom treated us out and I had breakfast for dinner - my fav! Scrambled tofu, soy sausage, roasted potatoes, and salsa. yum yum
Tonight I made more tofu parm like I made the other night. I also made some baked zucchini sticks hoping that Paisley would like it. I ended up just giving her hummus and bread sticks because she wouldn't eat anything else though. :snide: We thought the were super yummy though! It's a good way to get rid of all of that zucchini during zucchini season. We didn't make the dip though.

Tonight we went to the mall and ate at Great Wraps; we got the sante fe chicken wrap ... and cookies for dessert at The Great American Cookie Company.
Tonight I made more tofu parm like I made the other night. I also made some baked zucchini sticks hoping that Paisley would like it. I ended up just giving her hummus and bread sticks because she wouldn't eat anything else though. :snide: We thought the were super yummy though! It's a good way to get rid of all of that zucchini during zucchini season. We didn't make the dip though.

Yeahhhh...I've screwed up my fair share of tofu. I understand not wanting to cook it! :) I think I finally (finally!) have it down though. My MIL was eating dinner with me and she said that the dish reminded her of fried cheese sticks dipped in marinara sauce, made into a casserole....I took a bite and realized that it kinda reminded me of that as well! Interesting.

a rude husband like me!" And then I saw the name and I'm
like aww shucks.
We haven't had dinner but I heard DH pull out the wok and
slice some carrots. Probably cooking grilled chicken and
vegs on a bed of cabbage. I think I'll have Cocoa Puffs
instead. :drool:

I've been eating hospital food for the last few nights! :snide: Last night we had roasted butternut squash, roasted cauliflower, and chickpeas. Tonight we had a pizza that I had made a few weeks ago and froze in anticipation of an exhausted night like this one. :)

We had fried chicken and biscuits from The Loveless Cafe (http://www.lovelesscafe.com/). Yum!
We've had quinoa chili and cornbread the last several nights. Tonight my aunt is coming to meet the baby and picking up some food - chili con queso, guacamole, enchiladas, beans, rice, and beef fajitas. Of course we're not personally eating some of those things. ;)

Taco bell... I got out at midnight and didn't want to make dishes since i am making a meal for the week tomorrow..
ohhhh keely, can you share the recipe for the quinoa chili?
Easiest, super easiest, recipe everrrr!
1 bag dried mixed beans (Do not soak! Just rinse and sort!)
1 jar salsa
1 can tomato sauce
1 cup uncooked quinoa OR 12 oz ground turkey, browned
12-13 cups water if you're using meat, 14-15 cups if you're using quinoa
1 tbsp chili powder
1 tbsp cumin
1 tsp allspice
Salt & pepper to taste
Put everything in slow cooker. Stir it up. Set it on low in the morning, it'll be ready by dinnertime
*I've also made this on the stove by putting it on low and letting it simmer all day, but it's just easier in a slow cooker. We add more spices and several big glugs of hot sauce, but this is the base recipe that I go by.

Last night I got lazy and ordered pizza, wings and calamari. (Although first junk dinner we've had in a while... we've been eating well!)
Tonight I am making stuffed turkey. We have turkey cutlets and I am thinking about layering provolone, fresh basil and turkey pepperoni and rolling it up, lightly coating it in Italian bread crumbs and baking it. Serve it with a steamed veggie, spinach, tomato and mozzarella salad and maybe some garlic bread. Mmmmm.
Tomorrow night we'll have chicken sausage jambalaya, served with homemade cornbread (thanks Sandy! ;)) and regular house salad.

Made that pork, apple, apple sauce, and sweet potato with cinnamon in the crock pot thing again.. :) I cook a week at a time since i can't cook every day with my work schedule.

Nope! Not much of a recipe though.. I suck at cooking. XD i just throw it all together (the apple sauce being the 'watery' part..) and cut up sweet potatoes and use the apple slicer, then slice those apples in half.. Then just leave it there till its all cooked (8 hrs or more).... Yeah. Haha

I didn't use whole wheat noodles and used the ground beef. It worked out almost 600 calories per serving, but well worth it. It was soo good! Oh, and I know it doesn't say where to put the water, but I just poured it on the sides after everything was in the pot. Worked out well.

So i just planned out my meals for the rest of the week other then tomorrow. anyone cooking anything quick and good they want to share :)
Here is my friday-sunday menu.
Friday - Grilled steaks on the bbq with a side of onions and mushrooms and baked potato
Saturday - Beer brisket (this recipe is amazing! made it last week and my husband was soo upset when the leftovers were gone!)
Sunday - Leftovers from beer brisket and french onion soup! (or Clam chowder- but last time i attempted that, it was an issue!)

I'm so happy that I've made the time to cook the last few days. I feel better physically because we've been eating a bit better.
The night before last we made falafel (in the slow cooker, crazy!), a kale and quinoa pilaf side dish, pita bread, and salad.
Last night I made a batch of refried beans in the slow cooker and we had chalupas.
Tonight I made tofu piccata, roasted asparagus, and Greek roasted potatoes. It really hit the spot. It was practically a gourmet meal for like $2 a serving. Mmmm and the house still smells so yummy! The Greek potatoes were crazy good. I can't wait to make them again and again!

Last night we went grocery shopping and ate their ready to eat stuff. They have a good variety of healthy foods! :heart: Wegmans. I had terriyaki meatballs (200 calories), stir fried green beans, and Buffalo Chicken salad.
Tonight we are having Crispy Ranch Chicken, steamed veggies, Butternut Squash soup and probably some salad.

Last night was "clean out the fridge and eat whatever needs to get eaten" night. Last night we had Lobster Raviolis because they'd been in there a while and needed to get eaten, loaded baked potatoes and fruit salad. The potatoes had been in the fridge for about a month now, but they were still fine, and I was SO glad the fruit was still good because some of that'd been in there a couple of weeks, and I got to it JUST in time before it spoiled! Tonight's going to be the same thing where I make whatever needs to get eaten. Not sure husband likes those nights, but he can deal until the fridge is manageable again! :yesnod: I threw away TWO things of uncooked beef last night because they both went bad before we had a chance to eat them! :irked: I HATE throwing away meat that WOULD have been perfectly good meat if we'd just eaten it when we first got it, but what happens is, it gets stuffed in the fridge, and nobody knows it's there until it's a science experiment! :mad2:

We went out last night and actually had a decent dinner - amazing! We both had pizza cooked in their traditional stone pizza oven. So wonderful! I had a margherita pizza and salad. Chad had one with spinach, garlic, and artichoke hearts. Paisley loved Chad's pizza and ate a ton. I guess she was too busy eating to misbehave. lol ;) It was so nice to have an enjoyable dinner at a restaurant with both of the kids.

I'm doing chocolate fondue for DH tomorrow night for VDay (we're going out Tuesday night). Might do cheese fondue for dinner and then wash the fondue pot and do chocolate for dessert. Thinking about it anyways. ;) How'd yours turn out? Where'd you get your recipes? From the fondue pot owner's manual or somewhere online?

Cool. I'm searching now. :) Bought DH a fondue pot for Christmas, and we've NEVER used it - not even once! :bbredface: So, I figured Valentine's Week would be a good time to break it in! ;)

It seems like ALL the cheese fondue recipes I'm finding call for wine. Is it true that cooking the wine takes the alcohol out of it?! :bbeek: Since I'm pregnant, I don't want to risk anything with my baby - even a little bit. I know they say a little alcohol is fine, but I'd rather not risk it if I don't have to. Anyone have a non-alcoholic recipe for cheese fondue?!
Last night I seriously had ice cream and french fries for dinner. :bbredface: Tonight we're doing pasta with a creamy tomato mushroom sauce, green beans, and garlic bread.

Pam- they make non-alcoholic wine. Usually in the drink mixer aisle at grocery stores.
We are having bourbon glazed steak (I bought a beautiful ribeye yesterday), bourbon glazed scallops wrapped in bacon, steamed veggies and salad with Pear wine. Chocolate dipped strawberries and red velve cupcakes served with sparkly Catawba wine for dessert. Tonight is our Valentine's day.

IT"S FONDUE NIGHT!!! :ura1:
We're having chicken, beef and sausage cooked on the fondue pot with potatoes, broccoli, and carrots and sparking white grape juice to drink. I'm making 2 fondues for dinner - a lemon garlic fondue and a 4 cheese fondue. One will be in the crock pot while the other's in the actual fondue pot. I decided to use regular white wine for the cheese fondue because I just happened to have a bottle of Chardonnay in the fridge that's been there (corked) since before I got pregnant, and there's only about a cup of it left anyways, which happens to be the amount I need! ;) So, I'm cleaning out the fridge AND cooking something yummy at the same time! :D As long as I cook it long enough, I think it'll be fine.
Then for dessert, we're having chocolate fondue with fruit, cheesecake, pretzels and rice crispy treats to dip.
I can't wait until Nate gets home!!! :drool:

I made my own corn salsa and ate that with brown rice with cilantro and chicken. Basically the 3 ingredients that I've been eating for a year. :rofl: Now at least I don't have to pay $4.55 Chipotle for the meal.

Tuesday night I didn't really eat anything due to a crisis at work. Last night we went to Olive Garden (yum! I had the Shrimp Mezzaluna). Tomorrow night I am making a butternut squash and italian sausage risotto.

Lets see; we went out for Mexican Friday and burgers on Saturday. Then last night I made sort of Mexican; I made queso verde chicken. It is grilled chicken with salsa rice and black beans and spinach cheese sauce on top.
Gosh, my days just blur into each other lately! One night I had popcorn for dinner. The next night we had cheesy quinoa bites, roasted asparagus, and baked zucchini fries with sauce. I made it all because I thought that it would be successful with Paisley and then she was in an awful mood and we put her to bed early before it was done. :snide: Bah! It figures, right? So Chad and I felt kind of silly sitting there eating teeny finger foods by ourselves, but it was still really tasty! lol
Then the last two nights we had slow cooker lentil soup and it was aaaamazing. The gremolata on top is a must! We also topped it with a drizzle of Spanish olive oil and habanero hot sauce. We ate it with grilled pita bread.

Tonight I am making a risotto and trying out sauteed greens for a side.
Mmmm I made mini veggie loaves the other day that were super awesome. It used this homemade lentil brown rice ground beef substitute. I was so skeptical when I was making it, but I was really surprised at how great it turned out. I already want to make them again...and make extra to freeze. We also had roasted asparagus (It's been on sale lately!) with mashed potatoes and gravy. We make a low-fat chickpea gravy that kicks booty.
The night before last we had orange glazed tofu, brown rice, and yes more asparagus! lol. We've been trying out so many great new recipes lately. The orange tofu tasted just like the orange Chinese dishes you'd get at a restaurant. Yum!
Then last night we had a brown rice, lentil, and spinach slow cooker dish. It was good, but not great. Not enough flavor for me, but Chad enjoyed it more than I did. I just had leftovers for lunch so it couldn't have been too bad! ;)

Last night we did roasted veggies - cauliflower, asparagus, and potatoes. If you don't think you like cauliflower, - cut it into florets, toss in olive oil, salt, and pepper and bake at 425 until they're nice and charred until they're dark dark dark brown in places and tender. You'd be crazy not to like it this way! ;) I made the Greek potatoes again. I can't get enough of 'em. I also made popcorn tofu. It's pretty much popcorn chicken, just with tofu! I froze the tofu in the water packed container, defrosted, and then used it. It turns out more "meaty" and chewy that way. I also used a tofu press so it gets a whole lot more water out than just using your hands. You learn little tofu tricks along the way! lol
We've been doing some vegetarian dishes and not just vegan. Tonight I made a black eyed pea dip that was actually a lot better than I expected. I'll be making this for the next family party! Paisley really liked it too. She ate and ate and ate it. It has to be warm out of the oven though. It wasn't as good as it cooled down.
I also made chickpea salad which is a play on chicken salad. It's actually for lunch tomorrow, but I couldn't help snacking on it tonight. It tastes eerily similar to chicken salad...but in a good way. Another yum recipe! I'll be eating it with crackers tomorrow...instead of a spoon. lol!

Steve and i split one of those steamables noodles and veggies with garlic sauce.. I cut up two pieces of thin sliced chicken and cooked it with olive oil and garlic and put it on top. :) It was good, but i am still a little hungry so i am having tea (Steve's having coffee, lol) with small slice of kings cake. Hopefully i won't feel like i am cheating too much..

Last night Chad and I had a late dinner at an old fav restaurant in Houston, Mai's Vietnamese. It used to be a fabulous hole in the wall. It was always busy and super popular. Then there was a fire and they rebuilt all nice and trendy. Boooooo. They also increased the prices and decreased the portions. They did something to the food too. They must have standardized the recipes or something. Anyways, it was good but not the amazing food that I used to crave. We had Vietnamese veg eggrolls, garlic tofu w/ rice, and Vietnamese coffee.
Tonight we're going out for dinner without the kids and I fully plan on drinking an alcoholic beverage for the first time in over a year. I'll report back later. ;)

you just get a pound of ground sausage (tube), onion, carrots, and potatoes. Carmalize the onions, add meat. While this is cooking add carrots and potatoes to pan with water to steam, put on lid. When veggies are soft and meat is done mix together and stir in ketchup. =) I know, exciting right?

Last night was kind of whatever since we weren't hungry. I had a chicken wrap.
Tonight I made a stir fry with smoked sausage, green pepper, red onion, mushrooms and feta. Served it with a house salad.
Tomorrow night is whole wheat flatbread topped with vodka sauce, smoked mozzarella, bacon, green pepper, red onion and pineapple. Serving it with a spinach, baby tomato and mozzarella salad.

Last night, we were supposed to go to Melting Pot and to the movies for date night, but the movie we wanted to see got postponed a week, probably due to the opening of Hunting Games. So, we grilled hamburgers at the park across the street from us and took a stroll by the lake with Brindle. He thoroughly enjoyed both his hamburger and the long amount of time outside with us. :heart:

Last night my niece and I got subs. Tonight I made French onion chicken nuggets, steamed veggies in a rosemary butter sauce and salad.
The night before last we grilled on the bbq outside. We just did easy veggie burgers from the freezer, asparagus, and potatoes. I had never grilled potatoes before, but they were so very good!! A little too good, in fact. I went over my calories for the day!

I've been REALLY wanting to make strawberry soup for a while now, and I've got the fresh strawberries and all of the other ingredients that are needed for that, and I need to use them up before they go bad. But what would go well with strawberry soup?!?! :bbeek: DH doesn't like salads of any kind, and when I think of strawberry soup, I think of things you'd get at a tea room - chicken salad, chicken salad sandwiches, macaroni salad, etc... but those are things I really don't think DH would like. So, I'm not sure what to make with the strawberry soup. Maybe grilled chicken breasts?! That might go well with strawberry soup... wouldn't it?! :boggle:
