We ended up going to Moe's ... definitely gotta go to the store tomorrow and I will cook something.
Like Brandi we are seriously lacking in the grocery department. I scrounged up some stuff from the pantry and random things left in the fridge. I made some curried lentils with carrots, onions, red pepper flakes, ginger, spinach, garlic, canned tomatoes, cashews, & coconut flakes w/ brown rice & a little bit of mashed potatoes. Very random and desperate, but good! :grinhappy:

last night was shake and bake pork chops (fh fav) in this new garlic flavor, mashed potatoes and gravy and corn.

Tonight we really lowered our standards -- it was Fend For Yourself Night at our house!
Fiance had some leftover tater tots and a pork chop that's been in the freezer for literally 8 months. I am SO HAPPY that he ate it, finally! And I had about a half-cup of cottage cheese and a slice of homemade dill bread, toasted.
But I'm still hungry (not surprising, given that I ate about four hours ago!) so I think I might go and cook up some Ramen noodles. (I can just see KMS cringing right now!) :) But they're quick and filling, believe it or not, and by way of being comfort food.

Ramen is one of my staples. It's great to take to work--they always have hot water ready for tea and such. ;)
Tonight its barbeque ribs, courtesy of my FFIL. I love Sundays...most of the time I don't have to cook. :D

Tonight was Burger King. Too busy.

I made a taco ring tonight.
Can't go grocery shopping until Wednesday! :snide: Nooo groceries. I made some whole wheat pasta and tossed it with a sauce that I made with a few cloves of sauteed garlic, wine, nutritional yeast, crushed red pepper, hemp nuts, and parsley. Realllly good though.

This weekend, we set up our son's playset and asked a few of FH's friends if they could come over and help. We had a big bbq with hamburgers, hot dogs, seasoned potato wedges, homemade mac-n-cheese and salad w/Raspberry Vinaigrette. We also had Bloody Marys (Me and one of FH's friends are going through a seriously ridiculous Bloody Mary phase right now) and Henry Weinhards Beer. Then we built a big bonfire in the front yard and toasted marshmallows and listened to music. Good times.

Black beans and brown rice with a red bell pepper and some peas and corn mixed in! It's seasoned with chili pepper, cumin, and cayenne, with a couple tablespoons of colby jack grated in!
I made some fried rice for lunch and I'll be eating the left overs for dinner too. I took some brown rice and tossed it with reduced sodium soy sauce, Sriracha, toasted sesame oil, nutritional yeast, and tons of fresh sauteed veggies.

Made boca burgers and sweet potato fries! Mmm frozen, lol. Boca was a LOT better than the last brand.. Then again, i smothered it with mesquite sauce.. But not too bad. Steve, not so much.. But he did like the fries! :D

Last night, we had BLT Pizza from Big Louies. Has anyone ever had a BLT pizza? It's SOOOOO good! You make a regular cheese pizza with bacon on it, then once it's done, you slather it with Mayo, then top it with shredded lettuce and tomatoes. It sounds strange, but it's delectable.

Last night we had for dinner homemade mashed potatoes. The specialty of this dinner was these are grown and cooked from my own Garden Veggies. I have even tried this before this roast for a dinner party last month and it was a hit. It was so flavorful and was very simple to make. Be sure you brown it well!

We had Bruschetta. I found a recipe in a Taste of Home magazine a few years back that I altered. I'm not sure what 'genuine' Bruschetta is supposed to taste like, but FH and I LOVE our version.
Bruschetta, Nikita Style
1 French Baguette, sliced in 1' slices
Olive Oil
4 tomatoes
~1/4 c. Red Wine Vinegar
~1/2 tbsp. Dried Basil
~1 tsp. Dried Parsley
~1 tsp. Minced Garlic
~1/2 c. Feta Cheese
drizzle olive oil on baguette slices and toast in the oven at 400 degrees for ~10 minutes. Meanwhile, dice tomatoes to 1/2"-1" chunks. Combine in a bowl with remaining ingredients. Top baguettes with tomato mixture and enjoy!
It's fast, it's healthy, it's super simple and there's TONS of room for improvisation (which is how we ended up with this recipe in the first place). For instance, I LOVE Basil, so I use a ton. If you love garlic, you can add more. Just make it to taste.
Also, we rarely ever use baguettes and rather opt for hamburger buns. The baguettes are too hard when they're toasted and my mouth always hurts after eating them that way. (plus, we always have hamburger buns on hand)

Last night Fiance was having a really rough time, so I made him a favorite of his -- roast pork and mashed potatoes. The recipe for the potatoes is called "Heart Attack Potatoes' because it calls for butter AND milk AND sour cream. :) But it was a treat, we don't have them routinely, or even often.
Despite the fact that I was cooking with a headache that was threatening to turn into a migraine, the meal came out even more delicious than I had anticipated!
Sometimes the simple recipes are the best. The pork loin was dry roasted in high (425') heat, with a very little garlic and butter, the potatoes were boiled, then made with all natural, no preservatives/wierd flavors milk, sour cream and butter, and it was SO GOOD. I didn't use herbs, or salt or any 'flavor packs', just let the cooking speak for itself.
Wish I could make it again, but not with this health-conscious family :) Tonight we'll probably have salmon and veggies.

Last night was burgers on the grill.
Tonight I think it will be grill chicken (George Foreman grill this time) with cheese and then baked potatoes and broccoli :grinhappy:
I'm gonna make chickpea cutlets. It's pretty much mashed chickpeas kneaded w/ wheat gluten & spices to make a chicken cutlet type of patty. I'm also making some smashed red potatoes w/ portabello gravy and steamed broccoli w/ garlic chips.
I made some really good gravy tonight. It's my go to gravy recipe now. It's easy, lump free, and it's lower in fat than other gravy recipes. It's a vegan recipe, but can easily be substituted with whatever products you have on hand such as using dairy instead of soy milk, etc.
Mushroom Gravy
3 cups vegetable broth
2 Tbs arrowroot powder
1/4 cup flour
1 Tbs olive oil
1 small onion, finely chopped
2 cloves garlic, minced
2 cups mushrooms (such as portobello), thinly sliced
1 tsp dried thyme
1 tsp salt
a few grinds black pepper
1/2 cup white wine
3 Tbsp reduced sodium soy sauce
1/4 cup nutritional yeast flakes
1/4 cup plain soy milk
In a small bowl whisk the arrowroot and flour into the vegetable broth until dissolved. Set aside.
In a medium sauce pan saute the onions and garlic in the olive oil for 3 minutes. Add the mushrooms, thyme, salt, and pepper and cook for 5 minutes, stirring occasionally. Add the white wine and turn the heat up high to bring to a boil for 3 minutes. Add the soy sauce and the broth/arrowroot mixture. Bring to a boil and then lower heat and simmer for 15 minutes, stirring occasionally. Add the nutritional yeast and whisk until dissolved. Add the soy milk and whisk for another minute or so. Let cool for a few minutes before serving.
The whole recipe has -
500 calories
18 grams fat
14 grams fiber
30 grams protein

I made turkey medallions with some steamed broccoli and califlower, and i also made a salad. That seriously was the best salad ever. We are finishing it off tomorrow. :D I think it'll be lunch and dinner.. But i have turkey wrapped in bacon kabob thingys to go with it. =3 Yay manager specials! lol. I like trying stuff!

Last night we had KFC-I was craving chicken wings, so it was okay but I would have prefered BW3. Tonight I am cooking b/c I haven't cooked in for-ever!! We are having pork tenderloin, sweet potatoes, crescent rolls, and green beans (or some sort of vegetable). Sounds yummy!
We are going out for chinese tonight....it's been a while....I can't wait!
We have leftover plain whole wheat pasta in the fridge so I'll probably make some type of tomato sauce for it. I'm also making some collard greens sauteed with onions, garlic, and lots of red pepper flakes.

Last night I met a friend at a juice bar because she is doing a juice fast right now. I got a fresh pressed apple mint juice. It was so yummy and refreshing. When I got home I had some roasted green beans w/ olive oil and half of a Tofurky sandwich on Ezekiel sprouted bread. We have a loaf of the sesame Ezekiel bread right now and it's so good toasted because of the sesame seeds on the crust.
Tonight we'll probably use Chad's manager card to eat a Pappa's resaurant - probably mexican food.

Too hot here to cook anything in the oven...so I have a pot roast with potatoes and onions cooking in the crock pot. By the time FH comes home it'll be nice and tender...and right now it's stinking up the apartment...in a GOOD way. :)

No secret :D.
1lb bowtie pasta (i think its called Farfalle or something )
1lb ground sweet italian sausage (or you can take it out of the casing in links)
1 package Frozen chopped Spinach
1/2 cup Extra virgin olive oil
3 tablespoons minced Garlic.
salt, pepper, and Garlic Powder to taste
Optional Parmesan cheese to top.
In large pot begin boiling water for pasta.. cook as directed and put aside.
In a large Deep skillet pan, cook ground sausage with the Minced Garlic. Add Frozen chopped Spinach and Olive Oil. Heat until the spinach cooks down, and defrosts. Stirring frequently. Add salt pepper, and garlic powder to taste.
Mix with Cooked Bowtie pasta in a large serving bowl. My family and I like to put Parmesan cheese on top of our servings . ENJOY :)

1lb bowtie pasta (i think its called Farfalle or something )
1lb ground sweet italian sausage (or you can take it out of the casing in links)
1 package Frozen chopped Spinach
1/2 cup Extra virgin olive oil
3 tablespoons minced Garlic.
salt, pepper, and Garlic Powder to taste
Optional Parmesan cheese to top.
In large pot begin boiling water for pasta.. cook as directed and put aside.
In a large Deep skillet pan, cook ground sausage with the Minced Garlic. Add Frozen chopped Spinach and Olive Oil. Heat until the spinach cooks down, and defrosts. Stirring frequently. Add salt pepper, and garlic powder to taste.
Mix with Cooked Bowtie pasta in a large serving bowl. My family and I like to put Parmesan cheese on top of our servings . ENJOY :)I am gonna try this one day this week; TFS :D

Friday I went out to dinner with a friend to a place called 'The Sushi Spot'. It was delicious.
Saturday, we had Taco Bell.
Sunday, we went to FH's Dad's house for a BBQ. Slow cooked bbq chicken burgers, green beans, sliced potatoes and outrageously spicy jalapeno cornbread. All of it was delicious.

Last night I made 2 boxes of Lasagna Hamburger Helper...2 of Chris' friends were there. Lol. Not sure what I'm eating tonight, Chris works most nights, I hate that. So I might go to my mom's again.
I made some lentils, carrots, spinach, onions, tomatoes, bell peppers, and garlic in a curry coconut sauce. Served over quinoa and with a side of roasted green beans. It's very filling. Now I'm stuffed, overly so. :snide:

Tonight it will be Apricot Pork Chops, Scalloped Potatoes, and Honeyed carrots.
Apricot Pork Chops
6 Pork Chops
1 (1 oz) package dry onion soup mix
10 ozs. Russian Style salad dressing (which I can't find in a store anywhere so I make my own)
1 Cup apricot preserves
Bake at 350 degrees for 1 hour
Russian Salad Dressing
1/2 Cup Mayonnaise
1/3 cup ketchup
1 tbs red wine vinegar
1 tbs finely chopped onion
salt and pepper to taste
1/2 teaspoon Worcestershire
Honeyed Carrots
Cook til fork tender drain. Add 1/2 cup honey 2 tbs butter salt and pepper to taste. Bake covered for 30 minutes.

Tonight I made Mexican Chicken. It's a Weight Watchers recipe.
Basically skineless boneless chicken with 1 packet taco seasoning in the place of bread crumbs then you bake it at 350 until done then put salsa and non fat sour cream.. It's really good :)

Oh my gosh, since we found this chinese delivery place that has so many veg options that's all Chad wants on his days off. And we don't usually eat Chinese very often! It's usually Vietnamese or Thai if we eat Asian. Anyways, we had -

Hmm..Considering Sunday thru Thursday it's dinner by myself so it's usually mashed potatoes and bbq sauce topped with shredded cheese...Bad, bad, I know. =( On Friday and Saturdays we either have some kind of pasta or chicken, or I fix stew in the crock pot...And this covers every day, every week. =)

We celebrated our 6 year dating anniversary on Friday. We had a gift card for what used to be one of our favorite restaurants. We hadn't been since going veg and were surprised that we still had a few good choices. Of coarse we had to customize our meal, but it was wonderful!

Tonight was a nice change from the usual. My FH and I went over to his parents' place, where I put together some shish kebobs with pearl onions, grape tomatoes (grown organic in-state, so no salmonella!), green peppers, and pork cubes marinated in tamari (dark soy sauce), red wine, and cayenne pepper sauce. Apparently this impressed the heck out of my FFIL, who ate three skewers.
My FMIL made some awesome potato salad to go along with it, and my FFIL also BBQed some country ribs (his ribs are to DIE for), so we had quite the feast.
Ended with my version of "Better Than Sex Cake"--yellow cake with several holes poked in it, soaked in caramel sauce and topped with whipped cream and crushed Skor bars.
All in all a wonderful dinner.
I had leftovers for dinner - 3 steamed tofu veggie dumplings, 1/4 head of cabbage steamed w/ earth balance & hemp nuts, and half piece pita w/ some hummus. I plan on cooking dinner tomorrow. Probably some kind of bean dish.

We put mango and curry powder in them.. But that didn't help much. =P The texture was kind of yucky.. i think we had to make them mushier..
Yeah, there are many types of lentils and some of them get very mushy when cooked and turn into a thick soup and some stay firm like little tiny beans. Some are in between the two textures. Better luck next time! :grinhappy:

I had a strange combination of food for dinner! I tossed together some brown rice w/ a sliced zucchini, garlic, nutritional yeast, & a dash of soy sauce, hot sauce, and rice vinegar. I also had some mashed potatoes mixed w/ nutritional yeast and a bunch of spinach. Very random!

RC called and he is having a horrible day at work today so I decided to go all out tonight for dinner. Boiled red potatoes with fresh Parmesan cheese and Italian seasonings, and Beef Stuffed Peppers.
4 large sweet green, red or yellow peppers
Stuffing
1 tbs olive oil
1 small yellow onion chopped (1/2) cup
1 stalk celery, chopped (1/2) cup
1 clove garlic, minced
8 ounces each lean ground beef and ground pork
1 cup cooked and drained brown or white rice
1 cup canned low-sodium, crushed tomatoes
2 tablespoons minced parsley
2 tablespoons chopped fresh basil or 2 teaspoons dried basil leaves
1/2 teaspoon salt or to taste
1/2 teaspoon black pepper
pinch ground red pepper (cayenne)
Tomato Sauce
2 tbs olive oil
2 tbs chopped onion
1 clove garlic, minced
2 cups canned low-sodium, crushed tomatoes
1/8 teaspoon each salt and black pepper
1. Half-fill a large saucepan with cold water and bring to a boil over high heat. Trim the top 1/2 off of each sweet pepper; remove the seeds and ribs, being careful not to cup through the bottoms. Slide the peppers into the boiling water and simmer, uncovered, for 5 minutes. Remove with tongs or a slotted spoon and drain upside down.
2. To prepare the stuffing: Preheat the oven to 350 degrees F; lightly grease an 8 inch round baking dish. In a 12-inch nonstick skillet, heat the oil over moderately high heat. Add the onion, celery, and garlic and saute for 5 minutes or until tender. Add the beef and pork and cook, stirring frequently, for 8 minutes or until no longer pink. Stir in the remaining stuffing ingredients.
3. Bring to a simmer, then remove from the heat. Spoon this mixture into the sweet peppers, and stand them upright in the baking dish. Bake, uncovered, for 40 minutes or until tender.
4. To prepare the tomato sauce: In a medium-size saucepan, heat the oil over moderate heat. Add the onion and garlic; saute for 5 minutes or until tender. Stir in the remaining ingredients and bring to a boil. Lower the heat, cover and simmer for 10 minutes or until the flavors are blended, then spoon over the peppers. Makes 4 servings

Oh my golly! I just went to a local brewery for lunch and had THE MOST amazing Mediterranean Pasta! It was tomatoes, olives, feta, artichoke hearts, sauteed spinach and garlic and grilled chicken breast over linguine tossed with a light wine sauce. It was SO GOOD!!! :tongue:

That used to be one of my favorite places so I don't know if my tastes have changed (haven't been to one in years) or if they just aren't as good as they used to be. Even the bread, which I used to looove, didn't do it for me. Yes, bummer!

Thankfully tonight's dinner was a hundred times better than last night's dinner. My friend and I went to an Asian buffet that is 100% Vegetarian, 95% Vegan and I ate a lot of super yummy veggie, rice, and mock meat dishes. It was great...I was amazed! They even have a reverse osmosis system for the whole restaurant which makes it even more awesome. Yum. :grinhappy:

FH is coaching this weekend (and it's a double class) so he might not get home till 8:00 or so. So I've got some chicken breasts marinating in kind of an Asian concoction I made, and I'll steam some veggies and make some saffron rice to go with it.
Well, we didn't end up going for Chinese, we went to Applebee's and had hamburgers. They were so good!
Tonight we grilled out, we made shish-kabobs with steak and chicken, onion green and red pepper along with zuchinni and rice pilaf.

Lunch leftovers for dinner - whole wheat pasta, broccoli, & mushrooms in a curry yogurt sauce. I took an Indian cooking class yesterday so I just had to throw some curry in it! :grinhappy:

Today we're having semi-homemade meaty spaghetti and noodles. Tomorrow, probably chicken. Yesterday we had sauteed rosemary chicken over chicken garlic rice and the day before, baked teriyaki pork chops in the toaster oven (thanks to a grease fire in the new-to-us oven!).
Tomorrow, if we get the stove cleaned, we'll have chicken something or other.

Tonight I'm making deviled eggs, a salad, grilled vegetables and grilled barbeque chicken with cupcakes for dessert! I'm pretty excited.. the vegetables have green pepper, green onion, grape tomato, and red potatoes and we're also making some asparagus separately. Yay!

I picked up some hazelnut field roast patties from Whole Foods. I can't get enough of those things, but they're expensive. :snide: They kinda taste like a chicken patty coated in breadcrumbs, herbs, & hazelnuts. I also made some steamed green beans and quinoa. I eat quinoa every once in a while, but I found a new tasty and easy recipe so I think we'll be making it more often now.
SPICY LEMON QUINOA
2 cups quinoa
Coarse salt
1/2 cup toasted pine nuts
2 teaspoons freshly grated lemon zest
1/2 cup chopped flat-leaf parsley
1 teaspoon ground cumin
1/4 teaspoon cayenne
1/4 cup lemon juice
1/4 cup extra-virgin olive oil
Freshly ground black pepper
Place quinoa in a fine mesh sieve. Rinse under cold water until water runs clear. Transfer to a medium saucepan, add 1 teaspoon salt and 2 1/4 cups water. Bring to a boil, cover, and reduce to a simmer. Cook until water is completely absorbed, 18 to 20 minutes.
Transfer quinoa to a medium bowl along with pine nuts, lemon zest, parsley, cumin, cayenne; drizzle with lemon juice and olive oil. Season with salt and pepper; toss until well combined. Serve warm or at room temperature
I pretty much followed the directions, but just used different nuts and cilantro instead of parsley because that's what I had on hand. Yum!

I love Sweet Potatoes too. Our wedding coordinator is doing our rehearsal brunch and she's making these AMAZING Yam muffins. When FH's Mom offered to set up the brunch, I told her okay, as long as I get my Yam Muffins, lol.

We are having beef (well venison) and broccoli with rice.
I didn't do soup. I actually ended up feeling like cooking. I got my Vegetarian Times in the mail and made 2 things from it.
I tried a dip recipe called Muhammara. It's walnuts, roasted red bell pepper, garlic, olive oil, salt, and pomegranate juice all ground up together. I ate it with some toasted pita bread and really enjoyed it! I also made some Chickpea Croquettes. I make something similar often, but this recipe called for sundried tomatoes which added a nice deep flavor. I simply roasted some green beans for a veggie side.
Good stuff!
Well, I have been marinating steaks for about 2 days. So, instead of grilling them tonight (weather was iffy) we went to Chili's, we spilt boneless buffalo wings, he ate a small portion of chicken alfredo, and i had a small salad. Steaks are for another time, they are now in the freezer.
