I have a meeting right after work, so I'm going to stop at Timmy Ho's and grab a chicken salad wrap, apple and medium coffee. I looked up a lot of calorie stats, and that seems to be the most health conscious.
We had sweet potato falafel w/ yogurt tahini sauce and Turkish stewed green beans. I loved the green beans and I'll make the recipe again, but I didn't care for the falafel. Luckily Chad loved them.

Due to my training yesterday I couldn't take FH out for his birthday, so tonight I'm taking him to Zebb's. It's been forever since I've eaten there. I'm talking, I haven't eaten there in at least 10 years.

Yep, WoodChuck it is! I loveee it! It goes down so smoothly, I could easily drink more then I wanted to if I didn't watch myself.

I made some Ecuadorian Quinoa & Veggie Soup. I'm not sure what makes it Ecuadorian though...maybe the spices like coriander and cumin? Hmmm I dunno, but it was good stuff. Suuuper healthy too. Next time I might add mushrooms to give it a little more depth.

I ended up with half a burrito (hold the refried beans) and Spanish rice. FH had ribs with fries. He ordered some potato skins, too. I had one, but they were meh. Also, ended the night with a Woodchuck Cider, Fall Variety that FH and I split. Thanks for the tip Amy and Stacy!

Hehe you're welcome! I ended up buying a 12 pack last night. It has 4 different flavors. I tried the Granny Smith and 802. 802 is by far my favorite. Goes down sooo smoothly!

That one is good! The pear is pretty awesome, too. The only one i really don't enjoy is the dry one. =P

We went out to a local family owned place; we got their gyro's. I have gotten it there once before and it was really good, but this time it tasted like that stuff you get at the grocery store; I wasn't impressed :(

So.. Ended up eating a Healthy choice Fresh mixer thing. Pretty ok.
Yummmm I made jambalaya tonight. I just wanted to keep eating and eating it! It had just the right amount of spiciness and tons of veggies like squash, zucchini, eggplant, etc. I used a lot less olive oil than called for, brown rice instead of white, and cooked it for quite a bit longer. We'll be putting some of this big ol' batch in the freezer!

We were running errands and stopped at a barbeque place. I got a sandwich with fries and some mac and cheese. I really wanted a potato, but they were all out! Oh well, it was still good!

I cooked a ham in the crock pot (Sobey's last week had buy 1 get 2 free) which I served with boxed potato scallop and corn. Dessert is homemade apple crumble from my mom that she froze and sent down to me so I can just reheat when wanted.
I have another one after this one too :)

Hubby and I cooked dinner together tonight. We made some Cajun Chickpea Patties and seasoned green beans. I think I may have posted the chickpea patty recipe on here before, but I'll post again because they are so darn good. We tossed the steamed green beans with a spice mixture we made in the spice grinder - toasted sesame seeds, red pepper flakes, and salt. That's one way to get you to eat your veggies. That stuff rocks.

Snacking because I'm not hungry. Going to eat a cup of rice for some substantial-ness in a little bit. I've had a mini-bag of pretzels and a serving of lunch meat (turkey). Oh, and a really small piece of our freshly-baked (like, 2 minutes out of the bread machine) sour dough bread. Yum.

Wonton Egg Drop soup for me and some other stuff - I actually brown-bagged it for dinner at work. Complete with a PBJ sandwich and a pudding cup... I feel like I'm in grade school again but it's cute :) Oh and I have animal crackers - ....oh oh and guess what I found at the store?!?!?!

Tonight we'd just having salads
We're going to have leftovers again tonight. Chickpea patties and green beans! I'm tempted to make some sort of remoulade or tartar sauce for the chickpea patties since they're reminiscent of crab cakes. It depends if I have enough calories "left" at the end of the day though!

We really didn't feel like cooking either! However, we were already at home and decided that delivery would have been too expensive. We've got veggie meatballs in the oven, jazzed up some Newman's Own tomato sauce, and we're boiling some pasta right now. Eh, not exactly what I was in the mood for, but it'll do.

Last night was spinach ravioli & garlic bread.
Tonight, I forget the name, but all it uses is ground beef, velveeta mac n cheese, and cream of celery soup. All you do is basically mix it all together. (after the mac n cheese is cooked) It's so easy, and is super yummy!

I made a copy-cat of one of my favorites at a restaurant in my hometown - started a couple of pieces of chicken in the grill pan, then put sour cream and swiss cheese on top and baked it for a bit to get everything warm and melty. Very tasty and actually quite easy!

I am pretty sure we are trying Five Guys for the first time.
Last night we went to a casual place and had nachos, black bean burgers, and margaritas. Yummm it was so good. The burger had a green chili topping.
Tonight we went out for a nice dinner and I have to absolutely gush about this place. So I'm gonna tell you everything we got. Yeah, I'm that excited about it! We shared an app that had wild mushrooms, epazote, huitlacoche, and truffle oil. I had some tacos that had trumpet mushrooms, hominy, greens, pico, and some yummy sauce. Chad had a poblano pepper stuffed w/ butternut squash, quinoa, pepitas, and (again) some sort of yummy sauce! We shared a side of avocado w/ sea salt, lime, and olive oil and sweet plantains with salsa verde. We had an apple tarte tatin w/ candied quinoa, foam, and fennel ice cream. Ever heard the term "foodgasm"? LOL Thank you Groupon for that kick butt deal!

- Steamed green beans
I pulled out some cookbooks, got inspired, and now I'm not feeling like spending a couple of hours in the kitchen!

We had tacos with ground turkey. Used con-queso instead of shredded cheese and mmm!! Less fat and calories, too!!
I think that I made the best meal I've ever made last night! It took long enough it better have been darn good. I made some pecan dirty rice, braised kale, and Creole mushrooms which was a deep rich dish of mushrooms, kidney beans, celery, carrots, onions, mushrooms, herbs, spices, espresso, tomato paste, red wine, and a homemade roux. Oh my gosh it was aaaamazing.
Next time I'm going to try to make it without the roux for a much healthier dish. It was six servings and I think that roux literally added like 100 calories per serving.

I ended up skipping the jambalaya last night and got some sushi from Wegmans instead. Going to take the veggies I have and make a soup instead since FH told me he wasn't feeling jambalaya.

I halved the recipe, and it was just about good for both of us. It was about 3 servings. DH really liked it and said it's a keeper!
I'm going to try 2 other crockpot recipes next week - ham and scalloped potatoes and taco soup. Both recipes I got from SparkRecipes.

After I run errands this morning I am sticking a salsa chicken recipe (http://recipes.sparkpeople.com/recipe-detail.asp?recipe=672711) in the crock pot. FH works until 5 and I work until 6, so crock pot it is! So excited to break it in. :)
Last night I picked up a tofu dish from PF Changs. I resisted the fried green beans...you have no idea what an accomplishment that is for me! Theirs are amaaaazing!
I'm planning on cooking all day today once my husband gets home from work (on his day off no less) so I'm not sure what we're doing for dinner tonight.

I had a grilled cheese before DH got home then we went out for sushi n i had a spider roll and a shrimp tempura roll (both cooked)
i got full after a few pieces which makes me sad now that i'm feeling a lil peckish again and could go for more! :(

Will had the idea to boil the leftover steak from Sunday's breakfast and add it to Saturday's leftover stew. So, that was dinner. Stew w/biscuits and asparagus stir fry for me, and he had salad instead of the stir fry.

PIZZA! I've been craving Pizza Hut for weeks, so I finally got it and it was exactly what I wanted!
I met Chad on his break today and he brought me a veggie burger from work for my dinner. OMG it was so good! The patty was topped with Romesco sauce and avocado plus the regular lettuce and tomato. I never would have thought about putting Romesco sauce on a burger or sandwich. Such a good idea!!

I had some ginger and maple baked tofu along with some stir fries mushrooms and garlic. I'll be pan frying my tofu from now on. Wasn't fond of the baking. It was at 475 for half an hour and still kind of mushy. :(
I had refried beans, lettuce, and tomatoes on 2 tortillas.

i had a big DELICIOUS lunch... a BLT w/provolone cheese on herb ciabatta bread half sandwich with a HUGE helping of fries from a place called Fritz's belgium french fries...
after that all i could do was have some pita chips as a snack :P (oh and a ton of water to help it umm digest better :laugh2:)

I went to Qdoba. There's a new one here and they sent us a $5 gift card! I got Mexican Gumbo which was pretty much tortilla soup broth w/ rice, beans, corn, pico de gallo, and I topped it with lettuce and salsa. Surprisingly really good.

I haven't been feeling the greatest and the typhoon hit us yesterday. So I had spaghettios with hot dogs and celery and baby carrots with ranch. It was the quickest thing I could find.
I'm thinking of making General Tso flavored chicken wings for tonight, but we'll see how I'm feeling after dress shopping in the rain. Might just pick something up on the way home.
I'm having black bean soup tonight. Chad brought me home some from the restaurant. We have no groceries and I don't really feel like going anywhere so hopefully I can make it stretch for both lunch and dinner!

Luckily I've only gained .8 pounds this week. I am hoping some of that is water weight from the wine last night. :crossfingers:
