So I figured it's about time for me to start a journal. I was doing pretty good at maintaining my weight and then I gained 3 pounds on my vacation. Boo!!!!

So many years ago I used to weigh 105. All through high school, through most of college, but I know that would be way too thin. At the time I just didn't gain weight.

Just before I quit smoking I weighed 115. Then I gained 20lbs. I just ignored it for a while, but when it hit me I realized I didn't want to buy new pants. So I changed my diet and that worked pretty well for the first 10lbs. I used to eat a lot of junk food, McDonalds and such. But after losing the first 10lbs I kinda got stuck, but have for the most part managed to stay right around 125.

So after I got back from Hawaii I stuck myself on the scale and was back up to almost 128. Yikes. It's been about a week since we've been back and i was just under 126 this morning.

I did record everything I ate for the first 10lbs and when it was going well I stopped writing everything down. So I think I really need to get back to that.

1 packet of kirkland organic oatmeal - 190 cal
(I'm slightly disapointed with the purchase of this oatmeal because I didn't realize that they added evaporated cane juice until just now and it doesn't need to be as sweet as it is. I really think companies should allow for people to sweeten some products as they see fit. Not as someone at the company does.)

Snack

I totally agree about the sugar thing. I find it most frustrating with breakfast foods. Chad and I were laughing last night because we had a whole conversation about how good some new cereal we got was. It's called Barbara's Bakery Shredded Spoonfuls. It has just a touch of molasses in it - 5 g sugar/serving. Good stuff!

I got it at an HEB grocery store. It's a big Texas chain so I don't think that would help ya much! I'm sure that they carry it at many national chains though.

Yep - there are oats. The ingredients are: Whole Oat Flour w/ added oat bran, Yellow Corn Flour w/ added corn bran, Molasses, Whole Wheat Flour, Salt, Baking Soda, Vitamin E, & Vitamin C

It looks like I forgot to finish recording last night. For dinner I had homemade soup with veggies tofu and whole wheat pasta. About 400 calories. So total for yesterday was 1220.

Today's calorie count. Which ends up not being too bad for a weekend day.

Yum! I love taco salad! I haven't made it in a while, but I love to put a whole wheat tortilla sprayed w/ olive over a bowl and bake it so it takes on the shape then top the salad w/ mango avocado salsa.

You've been doing great, BTW!

So I had my yearly woman check-up a few days ago and got lectured on calcium intake and osteoporosis. Since I don't really like milk that much and dairy products have so many calories and I still think using cow's milk as a source of calcium is overrated I've decided to start taking One a Day Women's which had 50% of daily need for calcium and other things that are good for me.


So yesterday's list...

Salad with cheese and tofu - 300
1/2 Apple - 40

Yellow potato - 150

This weekend I want to get some cooking done and try out some recipies.

I'd like to try out the crockpot I've had for years and never used. I think I'll make a "pulled chicken" thing if I can.

I'd also like to attempt making my own chili. I love hormel's hot chili spiciness but they add extra things that give it more calories for no reason I can tell, plus I don't like the meat they put in there, but their vegetarian recipie is way too sweet.

I was also going to mix up some tuna salad an dif I can find them I might see how it tastes using shirataki noodles. Has anyone tried these?

So I found some tofu shiritaki noodles and they are crazy expensive but totally worth it. I made a bowl of tuna salad that was only 290 calories thanks to these noodles. (I also use light miracle whip so that's way les calories than mayonnaise).

Dinner last night:
Tuna salad - 290
Can of coke - 140

Desert:
Chocolate cupcake (made with pumpkin) - 150 (Ryan had some of it)

Total for yesterday - 1380


Today so far

Breakfast:
Egg white scramble with 2% cheese - 180

Snack
Popcorn - 300

Lunch
Pulled chicken sandwich - 360
(I'm guessing here, the bun was 200 and I'm guessing on the BBQ sauce)


The pulled chicken worked really well and it's incredibly easy. I just need to eat it not on a potato bread bun (small indulgence for today)

I'm trying out making chili and I don't think it tastes right. So I'll need to work on that recipe.

I did make pasta sauce so I was planning on making some chicken parmesan and using the other bag of tofu shiritaki noodles for a pasta side dish. Ryan also like using my pasta sauce to make pepperoni sandwiches for lunches.

Aren't shiritaki noodles the best? Yeah, they are on the expensive side so I don't get them a lot, but they are a calorie counter's friend!

Totally! My local QFC was had them on sale so I bought 4 packs. I tried finding a place online where I might be able to get them cheaper but the best I can find is the same price as the store.

I didn't fully calorie count over the weekend nor did I really eat "meals" per-se. I did go to a rollerskating b-day party on Saturday and while I did avoid the cake, pizza, and soda, I allowed myself 1 of those ice cream cups and a chocolate covered strawberry.

I also made a few recipies over the weekend:

No-pasta vegetarian lasagna, it doesn't hold it's shape or look that appetizing but it tastes awesome.

No-yolk deviled eggs, which end up being about 20 calories for every half egg rather than 40 or more, pretty cool. Basically you use mashed potato instead of yolks.

Egg (white) foo yung which came out pretty lo-cal.

Chicken and snow peas. The chicken didn't quite taste the same but I pan fried it in light oil and the marinade instead of deep frying it, I'd rather have the small taste discrepancy than the extra calories from deep frying in oil. I'd actually like to try this recipie with Tofu instead of chicken at some point.

Oatmeal-applesauce cookies. These don't quite come out as firm as I'd like in an oatmeal cookie. I like the crunch and I imagine the chewy is all related to the applesauce.

Spanakopita, oh man are these good. The feta probably isn't the best for you but I did manage to find a brand of feta that claims only 60 calories per ounce and has less saturated fat than others, it does taste a lot saltier though than other brands. I think next time I would be okay with more spinach and less feta too.

With left over cottage cheese from my lasagna and the filo dough from the Spanakopitas I made some cheese and onion piroges for Ryan.

I also made some more pulled chicken for the week. We had some Tony Roma's BBQ sauce that we had bought from costco. I discovered after making the pulled chicken with that and with KC Masterpiece I really like the KC Masterpiece a lot better. The Tony Roma's is just too sweet and not enough tangy.

I did gain back half a pound over the weekend, but I attribute that more to popcorn intake and the Margaritas on Friday (something about slowing down your metabolism...)

I am back up a little again after the weekend, but I think it's mostly water weight. I know I had a lot of salt. I feel like I slipped a little, but when I go over what I did eat it wasn't too bad, just a lot of salt.

On Friday for lunch we wnet out for Pho and I got the vegatable tofu and asked for half the noodles, but I imagine it is probably one of those high sodium dishes, I guess I don't know for sure...

On Saturday we went out for chinese food. I did slip and have potstickers which I imagine are high calorie after all is is pork wrapped in pasta..., but I'm so happy I found potstickers that are like the ones I had as a kid that I don't care. Then I had wonton soup, which is pretty high in sodium. For an entree I had a tofu and vegetable dish, but I did not eat the rice and I didn't add any soy sauce to it, however the tofu was deep fried. It was so good though!

Then on Sunday I ended up having a lot of popcorn and I didn't use my low sodium salt like I usually do.

I do tend to go through phases where I crave salt, but I'm starting to wonder if it's the iodine my body is saying it needs and not the salt... Hmm, I think I'm going to pick up some shrimp the next time I go shopping and make a few shrimp dishes for myself and see if that changes my cravings. I woudn't say these are bad cravings, just more of, "I'm in the mood for something salty...", though I almost feel like I have to wonder if the Pho place uses MSG and it's not salt that I was craving all weekend. The chinese place said no MSG by request on most dishes, so I did make sure to request no MSG, the Pho place doesn't say if they use it or not.

I did make a fresh batch of peanut butter oatmeal cookies and made them smaller so they are only about 75 calories each instead of 100.

I counted and was loosing weight and then I stopped counting and then gained some of the weight back. You've inspired me start again though... I might even try keeping a journal on here too. I think having to admit what you ate to someone other than yourself makes you a little more aware of what you are eating.

A cookbook that has really helped me is the Biggest Loser Cookbook. It has lots of great information and the recipes are easy and tasty. Plus every recipe tells you exactly how many calories (and other nutritional info.) are in each serving.

Thanks. Yeah I need to get back to recording on here, I have been keeping track still, I've just been so busy lately I haven't even been on here much. I haven't looked and that cookbook, the weight watchers one is pretty cool too, it gives nutrition, calories and points.

I was reading the post earlier up on the page about the Chinese food and Pho and the first thing that popped into my head was MSG. Maybe the Pho place did add it in. I know that stuff causes me to gain a little water weight. But Pho sure is good and so worth it, even if it did have a little MSG!

I totally agree! I don't worry about MSG, I think I'll just have to be aware that I might gain a little water weight after. That all came back off so I'm betting that's really all it was.

Yummy healthy sushi! A good friend just told me about this vegan asian buffet that supposedly has excellent mock sushi. I am so psyched to give it a try. They even wash all of their food with a reverse osmosis water system and everything. Needless to say, the place sounds very interesting.

Tomorrow I'm going on a flight test and they provide lunches, but it's ususally a sandwich, some sort of fruit, greasy chips and a really big cookie with 2 grams of trans fat and a ridiculously high number of calories, so I don't plan on eating that. I might consider the sandwich and fruit, but that might depend. I'll definitely bring some of my own food.

Grr, I can't seem to get out of this yo-yo of 2 lbs. It's not the end of the world, it's just frustrating because I'm not losing weight when I'm bouncing back and forth.

I think it's a fairly new product, I just saw them recently. They taste just like the original. I looked again to make sure, and they are technically called Goldfish made with Whole Grain, but whole-wheat flour is the first ingredient and they have like twice as much fiber as the original ones.

So i have been keeping track of calories still, just not recording them.

I did manage to see just under 121 (120.8) on the scale over the weekend. That was even after having some chocolate cake and ice cream to celebrate my son's b-day (of course I made the cake with pumpkin and I got light ice cream). Now my next goal is to see under 120 again, I haven't seen that in a really long time.

I think my next step really needs to be at least adding a moderate amount of excercise to my regular routine. I do make the effort to walk up the 4 flights of stairs instead of taking the elevator at least once per day and I also try to do some sit-up every so often when I'm watching TV. I just really need to find something that suits me better and I could make more regular.

It's really crazy how much they use trans fat still. That's why I don't eat the cookies. That's also why I won't order girl scout cookies. I'm all for supporting the girl scouts and I know they made an effort to reduce the trans fat, but the bakeries claim it changes the taste too much and I don't agree with that. I just think they are concerned with shelf life...

Okay so Friday I had an Asian Pear for breakfast, then my group went for dim sum for lunch, I have no idea what I ate, much less the calories in it. We did have a lot of shrimp and most everything was steamed instead of fried, so it probably wasn't too bad on the calorie side. Then we went to our Alumni St. Pat's party for dinner and for my entree I had the grilled veggie wrap minus the wrap. I also had a small piece of a margarita pizza and some french fries.

Yesterday I had Kashi squares for breakfast, a few salads throughout the day, chili with cheese and crackers, 2 PB cups, watermelon and popcorn.

Woo hoo! Nice. I didn't even notice that part in the nutrition info, I just love Kiwi and eat about 2 when I make lunches and have them on hand (I buy them from Costco in bulk and they last quite a while in the Fridge).

So this weekend I had the chance to make another batch of no pasta lasagna. I added spaghetti squash to the recipe and a dusting of feta on top.

I also made some turkey potstickers and with leftover cottage cheese a handful of pirogies.

The final thing I attempted to make was some whole wheat lemon poppyseed muffins. I ended up making 2 batches (so now I have a butt ton of muffins) the first batch didn't come out very lemony and not very sweet either, but I realized I forgot like half the honey, so the first batch is actually about 10 less calories per muffin. The second batch I added a lot more lemon juice and even a tablespoon of lemon zest and they still aren't very lemony. I think the wheat flour is just overpowering the lemon taste. They are ok, just not something I'm willing to take in and share like other things I make.

Have you tried baking with the white whole wheat flour? It's a much milder variety of wheat. Maybe that will compensate for the stronger wheat flavor? I just made my first batch of bread with it rather than the regular whole wheat. I am in love! My bread has been coming out really yummy, but very dense. I like dense wheat bread when it has a lot of different nuts and stuff in it. However, if it's just regular wheat I prefer it to be a little lighter and airy. I've achieved that texture with this flour.

This is my first post...hope I am doing it right! But anyway, have you found an exercise routine yet? I am a huge work out fan and I had a few suggestions! Is there a gold's gym near you? They have the greatest group workout classes! I have never been such a fan of exercise until i joined this gym. My gold's has a few cardio classes, like step and spin, and also a weight lifting class that I love. It's alot of fun. Also, I noticed that you said you like the biggest loser cookbooks. Have you tried their workout DVD's? They are great. They are really tough but there are different options on the DVD menu according to your fitness level.

Did you know that Rose Hip tea is loaded with Vitamin C too? I first learned about this when a friend of mine that was researching for a paper at university. She stumbled on an article that said something like "lose weight pay higher health costs for obesity" and was stunned that this was the opinion of a law professor.

Also heard that the Barbados Cherry has more Vitamin C than an orange and that it contains the most Vitamin C of any fruit. Vitamin C content ranges from 1000 to 2000 mg per 100 gm in the edible portion of fully ripe fruit and may be as high as 4500 mg per 100 gm in partially ripe fruit.

Don't you wish you could grow this in your back yard?

Grrrrr!!!!! Stupid Lifetime!!!! I had no idea Friday was the last syndication of Denise Austin's workouts. Poooooo, I finally found something liked doing every day and figured since she's been on TV forever there would be enough episodes to change it up everyday. That's why I'm not a big fan of DVD's, because I felt like I ended up doing the same workout every day. But since the only other workout on my cable is something for people that can't really get up and exercise it appears I had to go and get some DVD's so I have something.

So I still have a few episodes on my media center and I can mix those in with 3 DVD's I ended up buying. I bought 2 Denise Austin ones and 1 10 minute workout one. I like the set up of the 10 minute workout because it's got 10 of cardio, 10 of stretching and 3 different 10 toning sections. So I can get in a 30 minute workout and change up which toning section I use on the DVD. I also ordered another DVD that is supposed to have variety including different levels. Then I put some different types in my netflix queue since I'd like to see if I like them before I add DVD's to my new collection.

Ack, so my mom and my brother were in town this weekend to celebrate mine and his b-days. We went to this really nice restaurant on Saturday for celebration and I just stuffed myself. The food was soooo good. We also went through 2 bottles of wine and went for margaritas that evening.

Sunday was better eating wise, but I still didn’t really measure what I ate, so I'll chalk the 2 days up to B-day celebration and not worry about it.

With my mom being in town she also has a Y membership so Saturday morning I did go to the Y with her and spent an hour on the elliptical and did a few reps of some weight stuff.

Then with all the walking we did Saturday I just wasn't up for doing anything on Sunday (plus I think I either knotted or pulled a calf muscle on the elliptical) so I didn't do a workout then.

I did get back in to my normal routine this morning.

Oh and Ryan got me a watch that measures my heart rate for my B-day so i got to use that this morning to make sure I was really getting it up there. It also approximates calories burned based on heart rate (I imagine it's not very accurate, but I think it might be at least a ball park figure).

It seems like you had a great b-day weekend. That's a great gift too. Those really help ya get up there. You're probably right about the calorie estimates. I hook our my heart rate monitor up to our treadmill and it will say that I burned like 800 calories. Geez, I wish.

I could go for faux prosciutto (haha the price on that would be way cheaper than the real stuff and if it tasted the same....).

It might be spring somewhere! (Where ever costco buys their fruit from.... :D). I usually tend to cycle through what they have, like I had an asian pear almost every day for a while there, but they seem to be out of season at costco, and the berries all look so good right now! They do actually tend to have strawberries almost year round, but the overall look of them tends to vary throught the year.


I don't remember who suggested packing up invidual serving sizes on Sunday for snacks during the week, but I started doing that with the fruit I can when I buy it and it has saved a whole bunch of time in the morning. Like the berries are really easy to wash and separate the whole package into smaller servings. And we tend to buy the pre-sliced pineapple, so i'll but a slice in a baggie and then just grab the baggie and put it in muy lunch box.

Thanks! I sometimes feel like I have to force myself to get up and work out, but I know myself and if I let myself slip, then I'll keep slipping. This morning I only got 20 minutes in because I was running late, but I just tell myself I really should at least get that in everyday.

I was home sick today (I wasn't feeling well enough to exercise until about an hour ago). I've also noticed some breathing problems since last week when working out and I'm not sure if it is because I have a slightly stuffy nose or if because during one day in that class last week our room reeked of that propane/natural gas smell. Which means I have no idea how much I inhaled all day.

I did wake up feeling better, my muscles are a little tense but I was still able to get up and work out so other than a little stiffness, all is back to normal.

I've tried those flat outs before and I really didn't like them. (A couple of years ago.) They tasted too pasty like a piece of plain white bread. However, I think that I would like the flax ones because flax gives things a little nutty flavor. If I run across them I'll definitely give them a try!

Thanks (I've been there for a while though... hahahaha I got stuck and started excercising and I'm still stuck around the same weight, but I think it's just starting that push down...)

I was almost worried that I led you to something that contained whey cause I saw something on the site about whey, but I checked again and only the traditional and mini southwest chipotle flavors contain whey, the others are just processed on the same equipment.

It's one of the Quaker rice cake flavors it's a chocolate coating and has a few little chocolate chips on it. I'm not a plain rice cake person so I usually get flavored kinds.

So before I left for my brother's on Saturday I did get in my Jab, Kick & Burn workout.

I did not count calories, we went out and celebrated and I had a whole bunch of bad stuff for me, beer, potato skins, fried chinese food...


Today we went hiking to the top of Beacon Rock, so I do figure I at least got some workout in. Either way I was sweating a little (though it could have been from the sun, 30 SPF my arse... I have a little burn on my face).

I had pancakes for breakfast, some fruit and chips for lunch and taco bell for dinner, and then some popcorn this evening. I think overall, it wasn't too bad because I watched everything else except taco bell, I just haven't looked up the calories yet.

Yeah yeah I know I haven't been keeping up with this.

I did still watch what I ate over the weekend, homemade soup, pizza wrap on flax, kashi for breakfast, whole wheat blueberry muffins for sweet snack.

i also got a billy blanks thing on saturday that I tried, i don't like it, too hard to keep up with. So when i got frustrated enough I put on get up and dance. Then today I did 45 min of jab, kick and burn.

Alright. So I haven't been keeping up on the journal. I haven't really lost or gained weight either. But I do have an update, I went in for the "wellness screening" today and here are my results compared to last year:
