We were talking about starting a thread for recipes so here it is. Post away all you favorites.
Danny loves no bake cookies. I found this recipe and made it last night. It tasted a like dark chocolate to me. Yummy and really easy to make.
Here it is:
NO BAKE COOKIES WITH COCONUT
2 ¼ C Quick cooking oats
1C Flaked Coconut
1/2C Milk
¼ C Butter or Margarine
2C Sugar
1/2C Baking Cocoa
1t Vanilla
Combine oats and coconut. Set aside. In a saucepan combine milk and butter. Cook until butter is melted over med heat. Stir sugar and cocoa together in a small bowl until well mixed then stir into the butter mixture. Bring to a boil. Add oat mixture, stirring constantly. Cook for 1 minute. Remove from heat. Add vanilla. Drop by rounded spoonfuls 1 inch apart on wax paper.

This is a very easy to make bread recipe using your bread machine. It is very good. Danny ate one loaf as soon as it cooled! LOL! :bblol: If you don't already have a bread machine you may want to put one on your registry. I use mine quite a bit. It saves so much time. I even make my pizza dough in mine.
ITALIAN SWEET BREAD
1C Warm Milk (70 – 80 degrees F)
1 egg, lightly beaten
2T butter, softened
¼ C sugar
1t Salt
2C all purpose flour
2t active dry yeast
EGG WASH
1 Egg
1T water
Italian seasoning
In bread machine pan, place the first 7 ingredients in order suggested by manufacturer, Select the dough setting.
When the cycle is complete, turn dough onto floured surface. Divide in half. Shape each portion into a ball; flatten slightly. Place in two greased 9inch round baking pans. Cover with a clean towel and let rise until doubled. About 45 minutes.
Preheat oven to 350 degrees. Beat egg and water; brush over the dough. Sprinkle with Italian seasoning. Bake for 20 – 25 minutes or until golden brown. Remove from pans to wire rack and let cool.

Ok, so what can I offer here .... hummmm .... :bbidea: I can bake pretty good! (well, sort of *wink*)
I make a yummy Key Lime Pie -
- Nilla Wafer Pie Crust (pic below)

- 1 16oz can Sweetened Condensed Milk
- 1 teaspoon vanilla extract
- 2 egg yolks (whites are not used)
- 1/2 cup lime juice (I use 'Nellie & Joe's Key West Lime Juice - pic below)

With an electric mixer, blend eggs, Milk, vanilla and lime juice until smooth like pudding. Then poor into pie crust and back at 350 degrees for 10-12 mins.
Cool and serve with whip cream *Yummy :drool: Low soduim too! The Nilla wafer crust and the vanila take away the tartness of most Key Lime pie.

Ok, I like to experiment with cooking with alcohol ;)
I made some Margarita Chicken once that was quite good. Just make your fav basic rocks Margarita and marinate your chicken in it overnight. I usually add in some herb/garlic seasoning too ... you can even add fresh orange and lime. Then grill or bake and serve with rice and your fav veggie :D
Ooh, and Chicken Marsala is a fav of mine too! I use a basic store bought brown mushroom gravy to start with then add about 2 oz of Marsala wine and some fresh sauteed onion and mushrooms and a little garlic/herb seasoning. I also marinate the chicken in the garlic/herb seasoning and Marsala. It is all quite yummy over pasta, rice or mashed potatoes.
I haven't really done anything like that with beef though, I will have to think on that.
I made some Kahlua brownies one that were oh so yummy! I just took a regular box brownie mix and replace the water with Kahlua. I have also done this with Amaretto and Hazelnut liqueur as well :drool:
This also works well with box cake mix too ... add clear rum, Amaretto, or Hazelnut liqueur in place of the water. Then frost with butter-creme icing.

Where do you get marsala wine? I have never heard of it. Will any supermarket that carries wine have it? I have heard of marsala chicken, but I guess I never looked at the recipe. LOL!
I am drooling over that margarita chicken one! Mmmm!:cheers:

I have to apologize in advance. I'm a throw together person, so I really don't know any measurements. Just do whatever feels right! :)
I do have a couple chicken recipes to contribute (I eat a lot of chicken):
Fried Chicken
(This recipe makes GREAT nuggets and is great to have kids help on!)
Egg (I usually use one egg for each pound of chicken--2 breasts)
Corn Flakes (Sorry, don't have a measurement for this, just put what looks like enough in the bag and if you need more, get more, if you have to much, toss it when you're done...I'm exact aren't I? :))
Chicken
Wash and prepare chicken (if you want nuggets, cut up into 1-inch pieces...these will cook much faster, which is nice). Pour enough oil in the pan to create a puddle that the chicken won't be covered by, but can still sit in quite reasonably. Heat up oil. A good way to test is to take a very little bit of water on your fingertips and drop it in the oil...if it pops immediately, it's warm enough (make sure the kids aren't near the stove, the oil pops a lot during cooking. Also, I like to wear a long sleeve shirt when making this.)
Mash up corn flakes (I use a sandwich bag and a rolling pin). The finer they are, the easier they'll stick to your chicken and stay stuck through all the cooking. Dip chicken bits in egg and then plop (yes, plop) in sandwich bag with corn flake bits. Shake until covered. Plop chicken in hot oil.
I tend to flip the chicken three times during cooking, so both sides are in the oil twice over. I don't know how long to cook it, I just pick the biggest piece and cut it open to see if it's white on the inside. I'm an awful person to get recipes from I know. When chicken is done, pull from the oil and let drain on a plate with a paper towel for a little bit.
Tomato Soup Chicken
1 can condensed tomato soup (more if needed)
Chicken
Rice
Cook rice and place in bottom of casserole or baking dish. Wash chicken and place on top of rice. Cover with condensed tomato soup and bake at 350-degrees for 30-35 minutes (until chicken is cooked through). This is good to top off with italian seasoning at the beginning OR mozzarella cheese (I know Lacey) about five minutes before it's done.
Chicken and Green Bean Casserole
Chicken
Rice or Noodles
Chicken Gravy
Can of Green Beans (I'm sure frozen ones will work to, we just tend to cook out of cans)
Salt & Pepper
Corn Flakes
Cook chicken and rice or noodles. Mix chicken, rice or noodles, and green beans together. Prepare gravy if needed and add to mixture. Make sure to cover everything. Mix in salt and pepper to taste. Top off with some mashed up corn flakes (better if they are not finely mashed) and bake at 350-degrees for 15-20 minutes or until everything is warm. This is GREAT to make the night before for those busy nights.

Yes, you should be able to get Marsala wine at a good supermarket. But, don't go for the cheapest one, go for about $10 a bottle at least, the cheaper ones are not as sweet and don't do much for the recipe ... You can get it at a good liquor store too. It is not really a drinking wine, it is made for cooking. A friend of mine drank some once and said it wasn't good that way ;)
Yeah, I love the margarita chicken too. I am making Marsala tonight :hungry:

These are Oprah's favorite ribs. No sticky sweet sauce here! The ribs are marinated in a dry rub of spices and garlic and jalapeno peppers for 2 days:bbeek: (hence the 2 day Prep time) and slow roasted in a low oven for 8 hours:bbeek:. (Trust me, WELL worth it:D)
2 teaspoons spike seasoning (see note)
1 teaspoon Accent seasoning
1/2 teaspoon fresh ground black pepper
5 pork baby-back racks of ribs (about 5 pounds)
6 cloves garlic, minced
2 large jalapeno peppers, minced
2 large onions, halved and thinly sliced
2 green bell peppers, thinly sliced
2 red bell peppers, thinly sliced
2 yellow bell peppers, thinly sliced
8 servings
56 hours 48 hrs prep
1. In a cup, combine Spike and Ac'cent seasonings, and black pepper.
2. Sprinkle 1/4 teaspoon seasoning mixture on each side of the rib racks.
3. In a small bowl, combine the minced garlic, jalapeno peppers and remaining seasoning mixture.
4. Rub the garlic mixture on the top and bottom of the ribs.
5. Line a large roasting pan (17 x 11 1/2 inches) with enough foil to wrap all the ribs.
6. Spread a layer of onions and bell peppers on top of the foil.
7. Place 2 rib racks, side by side, on the vegetables.
8. Continue to layer the onions and peppers and the ribs.
9. Tightly wrap the marinated ribs in the foil and refrigerate for 2 days.
10. Remove the pan from the refrigerator and let it sit at room temperature for 30 minutes.
11. Preheat the oven to 400.
12. Before placing the ribs in the oven, reduce the temperature to 300.
13. Bake the foil-wrapped ribs for 6 to 8 hours.
14. Remove the ribs.
15. Spoon off the fat from the liquid in the pan and discard, reserving the pan juices.
16. Cut each rack into three sections and serve with the vegetables and pan juices.
17. *NoteSpike seasoning is a special blend of 38 herbs, vegetables and exotic spices, combined with a bit of salt.
18. It can be found in most major grocery stores with spices or salt.

I gotta share this with yall...
Jason makes the BEST hamburgers under the sun! He's my Burger King!:bbmrgreen: Anyways, what makes his hamburgers so special? Well, after he's plopped the meat in the pan and started it cooking in it's hamburger cooking way, he puts brown sugar on the top. When he flips it, it marinates into the burgers even more. I know it sounds strange, but they are SO good! We had them tonight so it reminded me to share the secret with yall!

Never heard of brown sugar on burgers, sounds interesting though ;) How much does he use, is it really sweet?
I have used brown sugar in my steak marinade before and that was good.

Those sound good Kelli.
I mix ketchup and brown sugar together and put it on top of my meatloaf before I put it in the oven. That is yummy too. :D

One of my favorite things to make when I am in a hurry (or any other time) is penne alla vodka:
Boil water for your penne noodles (any shorter ridged or lined pasta is fine) and cook enough pasta for 2-3 people. (I'm Italian so I can pack away obscene amounts of pasta)
For the sauce:
3 tbl. olive oil
10 cloves of garlic
1 big (I think it is like 24 ounces -the biggest can) of whole tomatoes
1/4 c. vodka
red pepper flakes and salt to taste
Heat the oil in a big skillet. With the back of your knife smack the garlic cloves to remove the peel and to crush them. Add to the oil and sautee until golden over med. heat. (DO NOT BURN THE GARLIC OR YOU WILL HAVE TO START ALL OVER AGAIN). Open and drain off the excess liquid from the tomatoes. Using your hands crush the tomatoes over the pan into small chunky pieces. (Be carfeul, they squirt) Bring up to a bubble. Add the vodka and reduce. (It is smart to remove the pan from the heat to add the alcohol) When the sauce is at a desired consitencey season with red pepper flakes and salt. Drain the pasta well, and add to the sauce stirring to coat. Let the sauce and pasta cook together for a minute or two. Fish out the garlic cloves. Serve with a sprinkle of cheese and a green salad.
Variation: After adding and reducing the vodka, add in 1/4 c. of heavy cream to make a pink sauce.

Quiche:
prep time 1hr.
crust:
2tbsp. olive oil
1/2 onion thinly sliced
1 1/2c. thinly sliced mushroom caps
1c.baby spinach leaves
1/2 tsp. salt
1/8 tsp. black pepper
2 tbsp. yellow cornmeal
2 tbsp. water
Filling:
6 eggs
1/2c. fat free half and half
1/4 tsp. salt and pepper
6oz. sharp cheddar cheese
3/4c. diced ham
Heat olive oil in skillet. Add onion and saute until it begins to brown. Add mushrooms and stir and cook until they begin to brown. Add spinach, salt and pepper. And cook a few minutes. Add cornmeal and water and stir well. Lightly coat a 9" pie plate with cooking spray. Press mixture over bottom and partway up the sides of pie plate. Set aside. Beat eggs, half and half and salt and pepper. Fold in cheese and ham. Pour filling into crust and bake at 350 degrees. for 40 mins. Allow to stand atleast 10 minutes before serving.

These recipes sound heavenly! I can't wait until I'm only working one job and can start cooking again on a regular basis! I'm gonna try every single one of these recipes...well, at least the ones without cheese. :) Sorry cheesy people. :)
Thought I'd share this with you; my family makes corned beef every year at Christmas (a tradition I started because I LOVE it and it's my birthday). It's really easy! We buy the regular uncooked corned beef at the store, pop it in a crock pot, put in a can/bottle of beer (Shiner Bok was the best so far, but for those of us not in Texas, Guinness is the best--but anything works), toss in the packet of flavoring that comes with and BOOM; a few hours later you have one REALLY good, NOT DRY, corned beef!
